Do you like hummus? we use garbanzos to make hummus all the time - we add whatever we like - roasted peppers, garlic, onion, cheese, and some tahini paste & whip it all together in the food processor until smooth. We use it as a dip with carrots & celery.

2 cans chickpeas (garbanzo beans) or about 4 cups cooked chickpeas from dried beans
2 tablespoons olive oil
seasonings of your choice (see below for suggestions)

Directions

1.Preheat oven to 375 degrees.
2.Prepare the beans for roasting by draining and rinsing them, then letting them dry on a towel until most of the excess moisture is absorbed. Spread on a baking sheet lined with parchment paper or a silicone baking mat. Roast the chickpeas in the oven for 45-60 minutes or until the beans are crunchy throughout (just test one- if they are still mostly soft on the inside and thereâÂÂs no crunch, keep baking).
3.Immediately (while beans are still hot), toss with olive oil and seasonings. Serve hot or at room temperature. They are best the first day, but can be kept in an airtight container for up to 4 days.
Seasoning Suggestions (add more or less if you like, these are just guidelines)
1.Sesame Soy- 1 teaspoon sesame oil, 1 teaspoon garlic powder, 1/2 teaspoon sea salt, 1 tablespoon sesame seeds
2.Honey Cinnamon- 1 teaspoon cinnamon, a pinch nutmeg, 1/4 teaspoon sea salt, 2 tablespoons honey (you can throw these back in the oven for 10-15 minutes to carmelize if you like)
3.Garlic Parmesan- 1/4 cup grated parmesan cheese, 1 teaspoon garlic powder or 2 cloves fresh minced garlic, 1/4 teaspoon fresh cracked pepper, 1/2 teaspoon sea salt
4.Smoky Spice Blend- 1/2 teaspoon ancho chile powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon cumin, 1/4 teaspoon fresh cracked pepper, 1/2 teaspoon sea salt, pinch cayenne (optional)

3 Bean Salad

2 cups green beans or wax beans
2 cups kidney beans
1 cup garbanzo beans
1 cup Italian dressing or ranch
1/4 cup thinly sliced red onions
1 slivered red bell pepper

Mix, blend, eat!

I didn't make myself clear....sorry. I've been cooking with garbanzo beans for years and never run out of ways to use them. What I was looking for are some other favorite seasonings for the ones I roast.

We like to munch on them or toss them in a salad instead of croutons. I think I'll just add a sprnkle of cayenne. I'm waiting on an order from Penzeys with some delicious sounding blends.

I recently read you can add beans (cooked without salt and spices) to smoothies! If you use white beans or garbanzo they don't add a taste, but they do add fiber, protein, iron, calcium, and complex carbs to help keep your blood sugar stable.

Personally, I like them hot and spicy, so I use a combination of chili powder, cumin, black pepper, cayenne pepper, and kosher salt. A little drizzle of olive oil to make it stick, then back into the oven for another couple of minutes.

Yeah....now we're talking! I did end up making this batch spicy and they were yummy.

Petra, when I cooked the bag of garbanzo beans yesterday, I kept a bunch aside to put in my daily green sludgies. They're a wonderful addition, as are the white beans. I cook the dried beans, so there is no added salt.

Rhizo, I still have to try beans in the smoothies, haven't been brave enough, so far. :o) But sounds like they are good since you use them a lot, so I will set some aside when I make beans on the weekend. I did add avocado to several smoothies and it makes them quite nice and creamy without imparting any avocado taste.

Petra...you'll see that bravery is not needed, lol. Just add your other fruits and veggies, as usual.

Bravery, for me, was putting my first 'green sludgie ' up to my lips to taste it. HA!

Rhizo, same here. I added lots of spinach and the smoothies were almost neon green. :o) Wonderful taste though.
