Patty pan squash lasagne - how to freeze?

I want to make a simple lasagne using patty pan squash instead of noodles. I would like to freeze it.

However, I can't find instructions for freezing it. Should I cook it first? Should I leave it uncooked? Should I leave it uncooked, but cook the squash first?

I freeze regular lasagna all the time and there's never any problem with it.

I read you recipe and see no reason why you couldn't freeze it. I've never frozen squash but I freeze grated zucchini to bake with all the time.

I would cook it just as though you are going to have it for supper, but take it out before it is completely cooked, then cool and freeze.

I didn't look at the cooking time, but with regular lasagna I take it out 15 minutes early. That way it doesn't get over cooked when you reheat it. When I bring it up I let it thaw and put in the oven just until it's hot right through--usually about half an hour. If it starts to brown too much I cover it with tin foil

armymomma Patty pan squashes are not vines. If you haven't grown common summer squash like patty pans, zucchini, or yellow squash, you might think they could be trellised, but they cannot. They don't climb. They don't have tendrils. They don't have corkscrewing stems or vines. They are huge plants with dinner-plate size leaves on long hollow stems that all arise from a crown in the middle of the plant. The link below shows two zucchini plants which have a growth form the same as patty pan squash. The squash develop in the middle of the plant where those flowers are. As you can see, the stems are large and they're hollow. That's why they can be injected with BT if squash vine borers burrow into the vine stems. Here is a link that might be useful:

That's the ONLY one that has gotten near bloom, and it never did (I tried pollinating it myself, guess I'll see how it goes.) It's 90f by 8am right now, so unless these things are opening at 5am, they aren't blooming. Almost every other squash is dying early on the vine long before they even get close to blooming. Any ideas? :) (1st and third pic are the same plant, middle is my other one)

judydel, that's the way I have been freezing squash for decades. I melt enough butter to barely cover the bottom of the pan, then add sliced squash, onions, and seasonings. I don't add any water, but put the pan on the lowest setting and let the squash and onions steam in their own juice, turning them as necessary to get the ones on the top into the juice at the bottom. I just cook whatever amount I have, large or small, as if we will eat it for supper that night and freeze what we don't eat. We don't care for the mushy texture of blanched or canned squash. No boil lasagne noodles

Well I'm going to have to try making it again with the home made noodles!! Maybe I'll make two smaller ones and make one without boiling the noodles first, and the other one I'll try Chase's method of briefly boiling each noodle separately. I'll have to try using the regular noodles and not boil them first as well. I wasn't aware of the trick of adding some water to the sauce. I only used the no-boil noodles one time and while it seemed to come out fine, I don't recall instructions saying to add water to the sauce and I know I didn't add any on my own. I have to say that I just love lasagna no matter how it's made, thick or thin, white sauce or red, meat or no. I could eat macaroni every day of the week and never get sick of it! But I do like lots of thin layers, so if I can make my own noodles I can control how thick or thin they are and that will let me control the layers. Coincidentally, my BIL who is a fantastic cook, has been coming over a lot lately on the weekends and we've been cooking together. As a thank you for all the meals he's had with us, he's coming over tomorrow night and bringing a lasagna for us to have for supper! Lisa

Yes, cook it first. It will freeze much better having softened the ingredients first. Cooking time is one hour so take it out around 40-45 min. Don't hesitate to add other veggies you have on hand. Zucchini sliced lengthwise as your 'noodles' (mentioned). chopped spinach,
swiss chard, fresh tomato slices under your final cheese topping, basil. I like a bottom first layer of thin slices of sweet potato.

Grrr. I posted this and then got an error so I have to start from scratch. I freeze spaghetti squash (cooked and shredded) all the time, but I've always frozen it separate from the sauce in individual servings so I could use another topping if I wanted to. I'll have to try this lasagna recipe! You should have no problem at all freezing it. The spaghetti squash has excess moisture when it defrosts, but it does not loose texture, so I just pour the extra moisture off if I don't need it. You shouldn't have that problem with the patty pan (I think). Defrosting it in the fridge should help if that happens OR cook it from frozen and don't cover it the whole time. Hope this helps.
