Freezing ??

Hi everyone,

I am wonder if any of you freeze much of your garden veg.

Do you ever cook down the tomatoes and than freeze them?

Any input would be great :)

Hi Sunflower. Yeah, I like to freeze some of my tomatoes. I usually blanch, peel and chop them. If I have plenty of peppers and onions on hand I'll chop and add those as well. I don't really cook them down but rather bring them to a boil and let them cool. As they cool there is excess water from the tomatoes that rise to the suface. I like to spoon that clear liquid out then pack in freezer bags. I put about 2 cups per bag.

With our tomatoes, if I am making a pasta sauce and have some extra, I will freeze it in jars if I don't have time to can it. Otherwise, I freeze tomatoes whole in 2lb freezer bags. I just bring them in from the garden, wash them off, dry them with a towel, and pop them in the freezer as is. They aren't good for slicing and eating fresh this way, but are great for cooking and canning. This is a great way to store them until I have enough of them (or enough time) to do a canning session. And the bonus is that when they thaw out, the skins just slip right off as if they had been blanched. Sooooo easy!

With other veggies, like green beans, carrots, broccoli, etc, I blanch first then flash freeze on a big pizza tray and pack into bags when frozen. With onions, leeks, and peppers, I will just chop or slice and flash freeze and pack, no blanching required.

I think gardens and freezers just naturally go together. Fresh veggies are the best, but we never can eat them all before they are past their prime. We have a chest freezer, and I don't think I'd have a garden at all if we didn't have the freezer to go with it. Saves so much time! Plus, if I want to fix something special, or do a canning session, or whatever, my freezer holds things for me until the cooler months when I actually WANT to heat up the kitchen.

The newer sugar enhanced types have been bred to produce more sugar in the kernals. Its called a 'shrunken gene'. The reason for the extra sugar was to help prevent he loss that goes back into the cobs during sort term storage. White kernals are always white, and yellow was always yellow. The bicolor came later, then the sugar enhanced types. If you plant heirloom types next to sugar enhanced or Sh varieties, the whole crop will be useless. Trust me, I made that mistake two years ago, when I mixed a few nearly empty corn seed packets together and planted several rows, 30 foot long. The end result were mostly short stalks only 3-4 feet tall, and stubby corn cobs with maybe 3-4 rows of kernals at the stem ends, and undeveloped tips. Needless to say, no matter what was done to them as to pollination, fertilizer, etc, didn't change the outcome. Since then, I have thrown out every last corn packet that has Sa or Sh in its description, and will only grow yellow corn that have been the 'gold standard' for many years. I don't care for the sugar enhanced ones anyway. They taste as if someone had added a LOT of sugar to the kernals, and that kills the natural flavors and character.

Properly stored, butter-based cookies will stay fresh for WEEKS at room temp. I used to work in a very expensive bakery. We baked all our Christmas cookies the Monday after Thanksgiving. The cookies were stored in cardboard box bottoms--one flavor to a box--and the boxes were slid into large plastic bags and twist-tied. The cookies were still perfectly fresh weeks later (I know, I ate a LOT of them--LOL). No need to freeze them if you're using them Sunday and you have them stored in an air-tight container.

Where was this question for the past few days.? I thought I had somehow messed up and didn’t post it. Thanks for the responses. The turkey breast is still in the meat drawer. I plan to give it a good hard sniff tomorrow afternoon and if it is at all suspicious I will run out and get another. My grocery store always has thawed turkeys for procrastinators.

I recently had my 19 yr old GE Monogram unit serviced ( leaking Freon issue and your problem sounds similar to what mine was doing. To fix would be $1800. to put a Freon charge $250 and hope that it is a slow leak. ) and knowing that it is getting to it's end of life I talked to the repairman regarding life expectancy of fridge now a days compared to the "olden" days as I had heard 10 yrs is avg. He confirmed that 10 yrs is avg and that he would recommend purchasing additional warranties for any new appliance. I've been doing extensive research and I have yet to come across any brand (built-in or not) that is problem free. That being said, if you can wait til the 10th wouldn't it be worth $100. service call to see how much the problem is going to cost to repair as it may be a lot less than a new unit or it may give you some more time to figure out what to replace with. If you can't wait til the 10th, then I think you know what you have to do. And after 1 month, the Freon charge is still holding... good luck.

I often put blueberries, peaches, strawberries, etc. into the freezer when I am pressed for time, then make jam or jelly later, or in the winter when it is cold outside and I don't mind heating up the kitchen.

I like some things better frozen, other things canned. I like asparagus and corn frozen, but I like green beans canned. Plus, we slaughter our own pork and beef, so it all depends on freezer space....
