A Whole Month Of Lunches!!!!!!!!!!!!!1

I am so thrilled! Last night I took about two hours and made an entire month of lunches for my DH. He works very hard and enjoys a real meal at lunch time, he can't stand sandwiches. So last night I made up 40 hamburger patties from ground chuck I got on sale and grilled them on the Foreman, made a huge pot of instant mashed potatoes and some green beans. I portioned everything out onto microwavable disposable plates, placed in gallon sized freezer bags and in under two hours I did enough so I don't have to worry about his lunches for a whole month! I am so tickled! I don't know how he can eat the same thing everyday, but he loves it!

You can come over to my house, and feed my son! He started school today. I HATE packing him a lunch. He has a healthy appetite,and was spending too much money at school.
So that is what we started to do last January.
I guesss what I don't like is trying to think of new and exciting sandwiches. They don't have acess to refrig or microwave at school. It really limits the possiblities.

I bet it is hard trying to come up with alot of different sandwiches and such. Did you know that you can freeze sandwiches? It's just as easy to do 20 as it is a couple when you do it assenbly line fashion. If you'd like to know how to do it so they don't get soggy let me know. Also, I don't know how old your son is, but if he is young enough to like things like Lunchables, it's easy to do homemade versions. Ritz, cheese and ham, or like their pizzas do english muffin w/ pizza sauce and mozzarella. Also, if he is a little older, a thermas filled with boiling water in the morning will keep hot dogs nice and warm till lunch, he can just pack some buns and chips. Hot soup can be put in a thermas too.

With a decent amount of vinegar and the onion, ginger (minimal amount) and garlic (also minimal) thoroughly cooked with a good amount of vinegar, I don't see this as a recipe to worry about. The bulk of the recipe is high-acid and if you cooked the onions, ginger and garlic in the vinegar first for 5-10 minutes, then added the fruits, sugar and spices for the remaining time, I just don't see much of a problem. I would guess at least the three months Dave mentioned, but I'm betting six months to a year wouldn't be out of line in a refrigerator. The nice thing about that chutney is with dried apricots, golden raisins, orange and onion, it's something that can be made any time of the year, so stocking up in large amounts isn't necessary. One of the best things I've ever done was to see a Registered Dietitian (found in the yellow pages, or through a diabetes treatment center) and get an eating plan designed just for me. In my case, I am prone to hypoglycemia (low blood sugar) if I don't eat often enough, or if I eat too many high-glycemic carbs. I also have diabetes in both sides of my family. At the time I saw her (5-6 years ago), I was about 30 lbs. overweight as well, not sleeping well, sluggish, and at high risk of diabetes in the future. She gave me a 1600 cal/day eating plan consisting of 3 meals + 3 snacks. It incorporates the diabetic exchange eating plan and exchange lists but tailored for hypoglycemia. Following this way of eating (I don't like to call it a "diet", since "diets" are typically a temporary way of eating with the single goal of losing weight) teaches proper portion sizes, meal planning, and a good balance of all the nutrients. What's more, anyone can do it; it's not just for diabetics or those like me prone to hypoglycemia, but for anyone who wants to learn to eat healthier to control their weight, whether to lose, gain, or maintain. Therefore, it can be followed for the rest of one's life. It incorporates wholesome, healthy foods including nuts, potatoes, grains, rice, and other foods that people think they need to avoid like the plague just to lose weight. But again, it's not a silly, crazy, fad diet. It's just the way we should eat. Eventually, it becomes second-nature, and it is now "just what I do" without giving it too much thought. It is also important to eat often enough that the body doesn't get too hungry, at least 3 hours apart, and to make healthy food choices, nutrient-dense foods packed with vitamins and minerals. In addition, I've made regular exercise a part of my life. I ALWAYS take stairs (unless I'm with someone who won't), and we ride bikes and walk most days of the week. I've lost 45 lbs., and I feel stronger and better than I have in years. I have more energy than I did 15 years ago, and I'm over 50. My hormones don't bother me anymore. I sleep very well (prior to this I woke up every night and didn't get back to sleep). I'm no longer overweight so I just continue the same way of eating, but adding some foods to maintain my weight, or adjust based on increase/decrease in exercise. Again, it's not a diet... it's a way of life. I do it one day at a time... I make healthy choices today, and pass up temptations (like fries) by saying "maybe next time". Next time, I do it again. I do eat those foods but only on rare occasions. And, I don't view them as "fattening" or evil foods... just not healthy ones, and I make a healthier choice instead. It's all about health and nutrition, not weight or clothing size. The weight will come off and the clothes will fit better over time, but the individual daily choices should be made with the goal of better health. And another good thing about regular exercise, especially vigorous exercise such as cycling, is that it requires high-glycemic carbs for energy. That's when I eat those goodies, just before, during, and after a ride. Otherwise I limit them to just occasionally, and just one. Like gibby3000, after years of eating this way this is now my preferred way of eating. I automatically reach for healthy choices, not junk. I eat what I should, then stop. It's not a diet -- it's just the way I eat now.

Oops--did you let the fine roots themselves dry out? If so, they're almost certainly dead. What you want to lose the excess water in the soil, which will leave moist, not wet, soil that will provide oxygen from air between the soil particles to keep the finest roots aliive. Dead roots can't take up water for the leaves, which is why an overwatered plant generally looks just like an underwatered plant. Still, that little cluster of healthy leaves tells me that there are enough roots to allow the plant to recover--eventually. It will take some time for that to happen, and the water retentive soil will make it a challenbe to provide them with air and moisture, but if you're careful the fine roots will grow back enough to support healthy new growth aboveground. Of course the alternative is to get a new healthy plant and use what you've learned to keep it that way. No judgment; you'll have to decide for yourself whether to keep working on this one or give yourself a fresh start.

I would like to know how you keep sandwiches from getting soggy. I have 4 kids that pack lunch daily, one has diabetes so my work is often cut out for me. Any ideas would be great!

I belong to another board that has a BIG OAMC section and the moderator on their posted how she does it. You spread a very thin layer of butter or margarine on the inside of each slice of bread, then layer your meat and cheese. Don't use mayo as it can seperate in the freezer, but Miracle Whip can be frozen. If they like mayo you can add it in the morning or send some with them. Wrap each sandwich in plastic wrap or put in a sandwich bag. Take them out in the morning and they will thaw nicely by lunchtime. She also does chicken and tuna salads made with Miracle Whip instead of mayo. For PB&J you could probably do a thin layer of peanut butter on each slice with jelly in the middle to keep the bread from being soggy. Pasta salad that is undercooked freezes beautifully. Also instead of buying those expensive individual fruit cups, you can buy the small single serving Glad type containers and divide a huge can (like the 10# cans) of fruit cocktail into the containers and freeze, they also will thaw by lunchtime. There are lots of great thing you can do with OAMC or OAWC.

He does eat the same thing just about everyday. He loves the burgers with poatoes and green beans. I couldn't eat the same thing everyday, but he can. You could always change it up a bit. Add corn or peas instead of the beans, add mac n cheese or noodles or rice instead of the potatoes, and he would have a large variety of meals to choose from, but with very little work.

When I make sandwiches to pack, I do the light coating of butter too but I don't like my sandwiches without mayo or mustard so what I do is spread the mustard or mayon between the meat slices or cheese slices....keeps it away from the bread and I still get to enjoy it.

Traditional British sandwich fillings:

Egg salad topped with mustard and cress (any sprouts would do)

Curried egg salad

Tomato and egg (slices of tomato and hardboiled egg) -- goes a bit soggy)

Banana

Salmon and cucumber (Mashed up tinned salmon topped with sliced cucumber)

Jam

Marmite

'Chip buttie' -- french fries in a sandwich. i think they're revolting, but they're very popular in some parts of Britain

Man I do love all the ethnic dinners that you can by from WW's, Lean Cuisene and some of the others...some are nasty tasting but the beans and spanish rice and some of the oriental to me are tasty ...so what I do is when I am actually cooking those things, I make my own little dinners too.
