How about some recipes for Velveeta Cheese

Now that I have 30 lbs of Velveeta cheese how about some of your favorite recipes that uses this kind of cheese! Also please note whether your recipe can be frozen or not. THANKS!

Our favorite comes from The Splended Table. We use Manchego, Gruyere and a bit of Asiago 21st-Century Mac 'n' Cheese Excerpted from The Splendid Table'sÂ® How to Eat Supper: Recipes, Stories and Opinions from Public Radio's Award-Winning Food Show by Lynne Rossetto Kasper and Sally Swift Serves 4, and doubles easily 8 to 10 minutes prep time; 30 minutes oven time You could assemble the dish a day ahead to bake when you walk in the door Never underestimate the healing power of macaroni and cheese at the end of a day from hell. Make this as rich as you'd like by selecting milk, half-and-half, or heavy cream. 3 quarts salted water in a 4-quart pot 1/2 pound (2 cups) imported elbow macaroni or penne pasta 1 large egg 1 cup milk, half-and-half, or heavy cream 1 small garlic clove 3/4 medium onion, coarse chopped 1 generous cup (5 ounces) shredded good-quality extra-sharp cheddar cheese 5 ounces cream cheese, crumbled 2/3 cup (3 ounces) shredded GruyÃ¨re, Appenzeller, or Manchego cheese Generous 1/8 teaspoon red pepper flakes Generous 1/8 teaspoon salt Generous 1/8 teaspoon fresh-ground black pepper Generous 1/4 teaspoon sweet paprika, Hungarian or Spanish 3 tablespoons unsalted butter 12 saltines, coarse crumbled 1. Bring the salted water to a boil. Drop in the macaroni or penne. Boil, stirring often, until the pasta is tender but still with a little firmness. Drain in a colander. 2. Preheat the oven to 350ÂºF. Butter a shallow 1-1/2-quart baking dish, and add the cooked macaroni. 3. In a blender or food processor, combine the egg, milk, and garlic. Process for 3 seconds. Add the onion, cheeses, red pepper flakes, salt, black pepper, and paprika, and blend for 10 seconds, or until the onion is cut down to small pieces and the ingredients are blended. Turn the mixture into the dish, folding it into the macaroni. (The casserole could be covered with plastic wrap and refrigerated for up to 24 hours at this point.) 4. To bake, bring the casserole close to room temperature if it has been refrigerated. Melt the butter in a small saucepan, add the saltine crumbles, and coat them with the butter. Spread them over the top of the casserole. Bake for 20 to 25 minutes, or until thick yet creamy. If the top is not golden brown, slip the casserole under the broiler for a minute. Remove it from the oven, let it stand for 5 minutes, and serve. LYNNE'S TIPS An egg and cream cheese are the secret ingredients here. They give creaminess and body to the dish so you can sidestep the time-consuming white sauce often called for in macaroni and cheese recipes. The GruyÃ¨re, Appenzeller, or Manchego cheese gives a nuttiness and another layer of flavor beyond cheddar cheese alone.

In all due respect, MsMito, I don't find that answer snippy. Unless her tone of voice was off? But it's likely she doesn't have an exact recipe, and just cobbles those ingredients together until it looks right. I mean, it does sound kind of simple. The only real question in my mind, without having seen the dish, is the proportion of ham to potato. The words "can" and "pkg" are a bit nebulous. And I think I'd use pepper jack to kick it up a little. But, really, you shouldn't have much trouble replicating it.

This is our favorite.......can't begin to tell you how good it is! THE ULTIMATE MAC & CHEESE 12 tablespoons (1 1/2 sticks) unsalted butter 3 cups good quality white crusty bread, cut into 1/4 inch pieces 1 qt. (4 cups) half & half 1 cup milk 1/2 cup flour 2 tsp salt 1 tsp freshly ground black pepper 1/2 tsp red pepper flakes 1 tsp garlic powder 1/4 tsp freshly grated nutmeg 2 cups vintage white cheddar cheese, shredded 2 cups sharp cheddar cheese, shredded 2 cups Swiss cheese, shredded 1 1/4 cup Parmesan cheese, shredded 1 pound large macaroni with grooves Preheat oven to 325 F. Butter and set aside a 9x13 casserole dish. Place bread in a bowl. Melt 4 Tbsp butter and 1/2 tsp garlic powder. Pour butter into the bowl with the bread and toss to combine. Set breadcrumbs aside. Melt 6 Tbsp butter in a large saucepan over med heat. When butter melts, add flour. Cook, whisking 1 minute. While whisking, slowly pour in milk and half and half and add 1 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp red pepper, 1/2 tsp garlic powder, and nutmeg. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick. Remove pan from heat. Stir in 2 cups sharp cheddar, 1 cup vintage white, 1 cup Swiss, and 1 cup parmesan; set cheese sauce aside. Blend the remaining cheese and set aside. Cook macaroni in boiling water 2-3 minutes less than the manufacturer's directions. Transfer macaroni to a colander,rinse under cold running water, and drain well. Add salt and pepper to taste and add 2 tbsp butter. Stir the cheese sauce into the macaroni. Pour mixture into 9x13" dish. Sprinkle reserved cheese and bread crumbs over the top. Bake until browned on top, about 30 minutes.

Here is a link to the (Ricotta cheese, not cottage) Neatloaf I just made and finished eating...terrific light lunch. It is the recipe from the Sri Chinmoy restaurants. I found the link on someone's website; I'll just add it here... It was unbelievably delicious and tasted JUST like the restaurant's. I did not put in all the oil, just a tablespoon. Jane, this recipe is my Mom's, she's been gone 12 years but her recipes live on!!!
Macaroni & grnd beef
1 can tomato soup
1 soup can water (or can use milk)
1 medium onion chopped*
Â½ medium green pepper chopped*
1 tsp. Salt
Â½ tsp. Sugar
4 ounces Velveeta*
8 ounces macaroni, cooked al dente
1 # grnd beef, cooked and drained

*more or less to taste

mix soup, water (or milk), onion, green pepper, salt and pepper, in quart saucepan. Bring to simmer, stirring occasionally.

Cut in Velveeta, stir until melted. Be careful, it can scourch!

Layer some macaroni & beef, in 1 Â½ quart casserole, pour a 3rd of the soup mix over repeat, ending with soup mixtureÂbake 350 degrees for a half hour. Great left overs, add a little extra soupÂwarm in sauce pan.

Variation Â
Pork Chops and spaghetti Â
Make up soup mixture

Cook 1# spaghetti until al dente, drain and put in 13 x 9Â casserole, pour soup mixture over spaghetti, mix well. Brown (in skillet) as many pork chops (can be bone in or boneless) as you want or can fit on top of spaghetti mixture, bake, foil covered, 350 degrees, 45 minutes.

These some times bubble over, so put some foil on the rack below!

This is the best macaroni and cheese recipe!

HazelÂs Macaroni and Cheese

1 cup cottage cheese
1 cup sour cream
1 cup sharp cheddar cheese (I use mild)
1 cup Velvetta cheese (cut up)
1 cup cooked macaroni (add more if you wish)

Mix all ingredients. Bake at 350 degrees for 45 minutes.

I haven't tried to freeze it yet, but I think it would do just fine.

Here's a couple for you - the broccoli and rice casserole can be frozen prior to baking. Not sure how the soup would do freezing with the potatoes.

Broccoli Rice Casserole

1 small onion -- chopped
1/2 cup celery -- chopped
10 ounces frozen broccoli -- chopped
1 tablespoon butter
8 ounces processed American cheese
10 3/4 ounces cream of mushroom soup, condensed
5 ounces evaporated milk
3 cups cooked rice

In a large skillet over medium heat, saute onion, celery and broccoli in butter for 3-5 minutes. Stir in cheese, soup and milk until smooth. Place rice in a greased 8 inch square baking dish. Pour cheese mixture over; do not stir. Bake, uncovered, at 325F for 25-30 minutes or until hot and bubbly.

Serving Ideas : Add chopped cooked ham for a one-dish meal.

NOTES : Can use steamed fresh broccoli and regular milk instead.

To freeze: Prepare completely but do not bake. When ready to serve, thaw and bake as usual.

Cheeseburger Soup

1 pound ground beef
1 small onion -- chopped
2 carrots -- shredded
1 rib celery -- diced
1 teaspoon basil
4 Tablespoons butter -- divided
3 cups chicken broth
3 cups frozen hash brown potatoes
1/4 cup flour
8 ounces process American cheese (Velveeta) -- cubed
1 1/2 cups milk
Salt and pepper to taste
1/4 cup sour cream

In a 3-quart saucepan brown beef. Drain and set aside. In the same saucepan, saute onion, carrots, celery, basil and parsley in 1 tablespoon butter until vegetables are tender, about 5 minutes. Add broth, potatoes and beef and bring to a boil. Reduce heat, cover and simmer for 5 - 10 minutes or until potatoes are tender. Meanwhile, in a small skillet melt remaining butter. Add flour and cook and stir for 3-5 minutes or until bubbly. Add to soup. Cook and stir soup for 2 minutes. Reduce heat to low. Add cheese, milk, salt and pepper and cook and stir until cheese melts. Remove from the heat; blend in sour cream.
Yield: 6 servings...
