Blast from the past: Ranger Cookies

The high school library clerk brought these in for the volunteers to have with lunch last week. They were out of this world and gone in 60 seconds (well, mostly). They are so popular that she brings printed recipes along as she knows she will be asked for one. She doesn't know the exact source other than a friend.

I googled it to see who was the originator - I think, based on what I saw, this is a variation of an oldie but goodie. I'm sure some of you will recognize it; I didn't.

I don't make cookies often, but this one I will!

Ranger Cookies

1/2 lb. butter, softened (two sticks)

1 cup granulated sugar

1 cup firmly packed brown sugar

2 large eggs

1.5 tsp vanilla extract

2 cups AP flour

.75 tsp baking soda

.75 tsp baking powder

.5 tsp salt - optional

2 cups Quaker Oats, quick or old fashioned, uncooked

2 cups corn flakes

.75 - 1 cup sweetened shredded or flaked coconut

1. Heat oven to 350. In a large bowl, beat butter and sugars until creamy. Add eggs and vanilla, beat well. Add combined flour, baking soda, baking powder and salt; mix well. Add oats, corn flakes and coconut, mix well.

2. Drop dough by heaping tablespoons onto ungreased cookie sheets.

3. Bake 10-12 minutes or until light golden brown. Cool for several minutes on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

Makes about two dozen large cookies.
