Calling all bread experts...

Ok, you don't have to be an expert just tell me how to make a high, fluffy, light loaf of bread with very little salt or fat... ( Just bread, no rolls or buns. )

I've altered a few of the recipes I have and although the bread is eatable and a few quite good ( Like the French-Style Country Bread Teresa posted ) it's kinda hard to make sandwiches out of two inch high bread that usually has to be used as toast on the second day...

Hubby LIKES his bread, he usually eats 4 or 5 slices with each meal... Store bough bread is out because it has anywhere from 125 mg to 280 mg of sodium per slice... He has to keep his sodium intake below 2000 mg a day... ( Did you know the so called healthy breads have the most salt? )

Anyway, hubby likes the soft mushy breads like Sunbeam, the kind you can squish into a 'rope' as thick as your thumb and it stays that way... Any ideas how I can make that type of bread or do you happen to have a recipe???
