anney, just thought of something else, little noodle puddings. I made these in ramekins and everyone enjoyed them for thanksgiving. BROWNED ONION KUGELS (susanq- GB) Serves 6-8 A kugel is traditionally baked in a single large pan, but using a muffin tin is a bit more elegant - and produces an abundance of tasty browned edges. Serve the kugels as a main brunch dish or an accompaniment to pot roast or baked chicken. *I like to double this recipe for lots of left-overs and use a 9 x 13 ceramic baking dish for family dinners. 6-oz medium egg noodles 1 stick (1/2 cup) unsalted butter 3 cups chopped onions (2 large) 1-1/2 cups sour cream 1-1/4 cups small-curd cottage cheese (10-oz) 1 T poppy seeds (can be omitted if you cannot eat seeds) 4 large eggs 1 teaspoon salt 1/4 teaspoon black pepper 1/2-1 teaspoon Hungarian paprika (optional) Put oven rack in middle position and preheat oven to 425F Cook noodles in a 6-8 quart pot of boiling salted water until al dente, about 4 minutes. Drain in a colander and rinse under cold water and drain well. Melt butter in a 12-inch heavy skillet over moderate heat and brush muffin cups with some of butter. Add onions to skillet and cook, stirring occasionally until well browned, about 20 minutes. Transfer onions to a large bowl and stir in noodles, sour cream cottage cheese and poppy seeds. Lightly beat eggs with salt and pepper, then stir into noodle mixture until combined well. Divide mixture among muffin cups and bake until puffed and golden, 20 to 25 minutes. Loosen edges of kugels with a thin knife and cool kugels in pan 5 minutes before serving.

Lou we're off on a tangent here but my absolute to go to recipe for chocolate ice cream is from Cafe Pasqual's in Santa Fe. The cookbook is by Katherine Kagel but the recipe below is from epicurious. It's so good I make it anually for a friend as his birthday gift - his request. It's Mexican Chocolate Ice cream and it has pequins in it (YUMMMMM!!) I have a Cuisinart Ice Cream maker so not sure how it would work with the KA Here you go * 9 ounces fine-quality bittersweet chocolate * 2 ounces unsweetened chocolate, chopped * 2 cups heavy cream * 1 cup milk * 6 large egg yolks * 1/3 cup firmly packed dark brown sugar * 2 teaspoons cinnamon * 2 tablespoons Kahlú * 1/2 teaspoons crumbled pequín chilies* (wear rubber gloves) * 1/2 cup blanched whole almonds, toasted, cooled, and chopped * *available at some specialty stores Preparation In a metal bowl set over a pan of barely simmering water melt 6 ounces of the bittersweet chocolate, chopped, and the unsweetened chocolate, stirring until the mixture is smooth, and remove the bowl from the heat. In a heavy saucepan combine the cream and the milk and bring the mixture just to a boil. In a bowl whisk together the egg yolks and the brown sugar, add the cream mixture in a stream, whisking, and pour the mixture back into the pan. Cook the custard over moderately low heat, stirring, until it registers 170°F. on a candy thermometer, strain it through a fine sieve set over another bowl, and whisk in the melted chocolate, the cinnamon, and the Kahlúa. Let the mixture cool completely and freeze it in an ice-cream freezer according to the manufacturer's instructions, adding the remaining 3 ounces bittersweet chocolate, chopped fine, the crumbled chilies, and the almonds during the last few minutes of freezing time. Let me know if you need pequins. I can put some in the mail for you, that is if you can mail hazardous material ;-) I love Ghiardelli's bittersweet so always use that and Whole Foods has bulk unsweetened chocolate. It's made by one of the big companies but the name escapes me right now.

This one is T and T.....notice it has half the amount of pumpkin and more egg....I would be concerned about the one you posted being a little hard to cut....the orange flavor sounds wonderful....but again the strings of orange peel found in marmalade might make it hard to cut...if you want the orange flavor....just add some grated rind. Also the one you posted calls for low fat cream cheese....in my experience that makes a softer less dense cake. Cheesecake Factory Pumpkin Cheesecake Bonnie Benesh Prep time: 30 minutes Serves: 10-12 Cooking time: 65-75 minutes Crust: 1½ cups graham cracker or ginger snaps (I like ½ of each) 5 T. butter, melted 1 T. sugar Filling: 3-8oz. pkgs. cream cheese, softened 1 C. canned pumpkin 3 eggs ½ t. cinnamon ¼ t. nutmeg ¼ t. allspice Topping; 1 C. heavy cream ½ C. sugar 1 t. white vanilla ½ C. chopped pecans Mix crust ingredients together, just until coated and crumbly. Press onto the bottom and two-thirds of the way up the sides of an 8" spring form pan. Bake for 5 minutes at 350F. Set aside. Combine cheese, sugar and vanilla in large bowl, mix until smooth with an electric mixer. Add pumpkin, eggs, and spices and beat until smooth and creamy. Pour into the crust. Bake for 60-70 minutes or until the top turns a bit darker. Remove from oven and allow to come to room temperature, then refrigerate. Just before serving, whip the cream, sugar and white vanilla. After cake has thoroughly chilled, add the whipped cream topping and sprinkle nuts over the cream. Remove the pan sides and cut.

I've found that a cheesecake is more likely to crack if it has air in the batter (it expands when it cooks) and if it's cooked too fast. What I do is mix the ingredients just until they're blended, and not a second more, then cook it at 225 or 300. For my preference, it's done when the outside of the cheesecake is set but the center (2-3" in diameter) still jiggles when you tap the side of the springform with the flat of your fingernail. The larger the area of "jiggle", the creamier the cheesecake will be when it cools. Then I carefully remove it from the oven. The center of the cheesecake finishes cooking from the heat around the sides. This makes a creamy but set cheesecake. To have it more NY style (cakey), you need to bake it a little longer. I haven't had one crack in years doing this -- incorporating as little air as possible while mixing, cooking very slowly, and removing it when the center is still jiggly. And I should say this works only if you like creamy cheesecakes. I don't know how to prevent cracking if you want it "well-done"!
