Butter -- cold vs. melted

Would someone give me a technical (but not too technical! ;-) description of what it does to a recipe to use cold butter or melted butter? I'm thinking specifically of different recipes I've read for toppings. (I am NOT looking for definitions/discussion about what's a crumble/crisp/cobbler, etc. ad naseum.) Why do very similar recipes differ in calling for cold butter or melted butter--is there a "chemistry of baking" reason or just cook's preference? TIA!
