Sweet relish recipe anyone have one T&T

Hi All

Sorry to have been MIA and it's going to continue while we fix up our house :(

I'm hoping though, that someone can help me with a T&T Sweet Relish Recipe. I have 30 pounds of pickling cukes and would love to make a few jars of relish along with my usual pickles.

I can give you mine, which is really Grandma's. I've won a couple of ribbons with it and my family loves it. It's sweet, not dill and I run the veggies though the food processor on the shredding disk instead of grinding.

CUCUMBER RELISH (GRANDMAÃ¯Â¿Â½S RECIPE)

4 cups ground cucumbers
4 large onions, ground up
4 green peppers, ground up
1 or 2 red peppers, ground up
1 tbls. Salt
4 tsp celery seed
2 tsp. Turmeric
Ã¯Â¿Â½ tsp. Pepper
4 cups vinegar
4 cups sugar

Combine veggies and salt and let stand for 2 hours. Drain well, add rest of ingredients and cook slowly for 1 hour. Pack hot into hot jars and process in boiling water bath 15 minutes for pints.

Makes 6 Ã¯Â¿Â½ 8 pints

Cucumber Relish

2 quarts chopped cucumbers
2 cups chopped sweer green peppers
2 cups chopped sweer red peppers
1 cup chopped onion
1/2 cup salt
2 quarts cold water
1 1/2 cups brown sugar
2 sticks cinnamon
1 tablespoon mustard seed
1 tablespoon turmeric
2 teaspoons whole allspice
2 teaspoons whole cloves
1 quart vinegar

Combine cucumbers, peppers and onion; sprinkle with turmeric.

Dissolve salt in 2 qt. water. Pour over chopped vegetables; let stand 3-4 hours. Drain. Cover with cold water and let stand one hour. Drain thoroughly.

Tie spices in a cheesecloth bag; add to sugar and vinegar. Bring to a boil and pour over vegetables. Cover and let stand 12-18 hours in a cool place.

Bring to boil; simmer until hot. Pack into clean, hot jars. leaving 1/2" headspace. Adjust lids. Process in a boiling water bath: 10 min. at 0-1000. ft., 15 min. at 1001-6000 ft., and 20 min. above 6000 ft.

Katie's notes: I add less turmeric, 1/2-1 tsp. Have also used mixed pickling spice in place of the cinnamon, allspice, mustard and cloves.

It's not a dumb question. A cup is a cup. The difference is a liquid measure adds extra over the top so a full cup won't splash. (I hope that makes sense.) In a dry measure the edge of the cup is the full measurement. So use a liquid measure for the vinegar and save yourself doing the tightrope act over to the bowl! The easiest way to measure things like cabbage is to take, say a liquid quart measure, and pour in two cups of water. Then add cabbage until it reaches the quart mark. (Push down on the cabbage if necessary to see where the water reaches.) When the water reaches the quart mark, that's 2 cups of shredded cabbage. This is more accurate than other measurement methods when dealing with onions, etc. in canning. It's an old Farm Journal method. And it still works great. I hope this makes sense. T&T Brunswick Stew recipe, anyone?

I like this one, it's the most like the good Brunswick Stew we ate many, many years ago at our favorite BBQ place in Durham, NC. It calls for chicken or squirrel or rabbit, but I only ever used chicken, as well as pork or beef. It's from my old Fannie Farmer cook book. Brunswick Stew Vary this famous Southern dish in many ways. It is often made in huge quantities for an out-of-doors get-together and can be made of squirrel and rabbit as well as stewing chicken. Sometimes pork spare-ribs and pieces of stewing beef are cooked with the chicken, and other vegetables are added, such as green beans, okra, diced potatoes and peas. Cover with boiling water 1 stewing chicken, cut in pieces Cover and let simmer over low heat for 45 minutes. Add 2 teaspoons salt Cover and continue cooking until tender (about another 45 minutes). Take out the pieces of chicken. Remove the bones and cut the meat in l-inch pieces. Put back in the kettle and add l can condensed tomato soup, 8 tomatoes or l cup canned tomatoes (I use diced tomatoes) 1 onion, sliced thin l cup green lima beans 3 potatoes, sliced thin l tablespoon sugar Salt and pepper Cook until the beans and potatoes are tender. Add 1 cup corn, cut from the cob, or canned whole-kernel corn 1/4 pound butter Cook 5 minutes. Serves 6 to 8.

My family recipe is below. It uses "only" 3-1/2 cubes of butter (not quite a full pound) to six cups of flour, 1 cup of sugar, and four eggs. Honestly, I don't think you can lessen the butter without compromising the texture. However, I have a family recipe for paximadia (similar to Italian biscotti) that calls for less butter and almost the same amount of flour. It's really easy to make and has a similar taste and texture as the koulouria. I make these more frequently just because they're a lot less labor intensive. They also freeze well. I just reheat them in a toaster oven to restore crispness. I've listed the recipe below too. Koulouria (Sesame Cookie Twists) Cookie: 1- cups butter (3 Â½ cubes) 1-cup sugar 4 teaspoons baking powder 2 teaspoons vanilla extract 4 eggs, beaten 6 cups flour Topping: 1 Â½ cups sesame seeds 1 egg yolk, beaten 2 teaspoons milk Â½ teaspoon sugar ÂUsing electric mixer, cream butter, sugar, eggs, and vanilla. ÂMix dry ingredients in separate bowl. ÂAdd egg mixture to dry ingredients, blending well. Add 1 tablespoon of milk at a time if dough is too dry. Dough should be pliable but very dense. ÂScoop out portions of dough about the size of a small lemon. ÂRoll into 8 Â 10 inch thin, long ropes. Ropes should be no thicker than a pencil or a womanÂs "pinkie" finger. ÂShape into twists. ÂDip tops of twists in bowl of sesame seeds; shake off excess seeds. ÂPlace twists on greased cookie sheet. ÂCombine beaten egg yolk, 2 teaspoons milk, and Â½ teaspoon sugar. ÂCut rolls in 3/4 inch slices; do NOT cut all the way through. ÂBake at 350Â° for 20 Â 25 minutes. Rolls should be very, very light brown. Do NOT over bake; they should look under baked. ÂWhile still warm, slice the rolls, cutting all the way through the scored cuts. ÂLay each piece cut side up on cookie sheet. ÂBake at 350Â° until toasty, turning once (about 7 minutes per side). Anyone have aT&T Chinese BBQ Pork recipe?

5-spice is not a traditional ingredient in char siu. It isn't thought to go well with pork, Chinese prefer to use it with beef and occasionally, poultry. I use the already-pkg'ed chunky strips of boneless pork butt (shoulder or blade, as it's called in some regions). They're about 2" wide x tall, and about 10-12" long. Good proportion of fat to lean, which is critical in Chinese cooking. You can get pretty much the same effect by using one of the good quality sesame teriyaki marinades, like Soy Vey or Trader Joe's. Marinate for a day, and grill it on the barbecue, gas or charcoal. The flavor is infinitely better than roasting or broiling. Grills vary so much I think times will vary considerably, but mine take about 6 min on each side, medium-high heat.

Annie: My cousin asked for a sweet pickle relish recipe and I didn't have one and found yours, but the printing is compromised. So, how much black pepper is the correct amount? Thanks.

Kate, I am sure you can successfully reduce that recipe and put it in smaller jars. I'm sorry I didn't answer more quickly but I'm at Ashley and trying to use the kindle. Plus I'm on nursing/babysitting duty until they are all sleeping. Thanks for the vote of confidence, bragu, it's a family family favorite for us too.
