Hello to everyone! I know it's been awhile since I've been on here. Still lurk occasionally but since I went back to work full time, cooking has been more basic. But I was thinking of you all yesterday for sure! We had a potluck to attend with a Mexican theme. Pulled out two great forum recipes, opkikid's slow cooker shredded beef for tacos and Roselin's Chocolate Snickerdoodles, which I renamed Mexican Hot Chocolate Cookies for the night:) Both turned out great as usual and reminded me I need to pop in here more often. After all, I learned to cook from this forum!

I rarely visit anymore either, I also went back to work.

Some good advice here already. I only have to add 'Persevere'. Honestly, it really doesn't take long to get used to what you call 'blandness'. It took me about a week, and now I add salt to nothing at all. If salt is added, I really, really notice it! That blandness isn't bland at all - it's just not salty any more! Up until now, the only thing you've really tasted is the salt - your taste-buds are attuned to salt, and not much else. Give it time, and soon you'll be getting the REAL taste of food! Meantime, keep well away from processed and packaged foods, frozen meals, take-aways etc. Even make your own bread. I can't comment from my own experience, but I do know from people who have travelled to America find the bread 'over there' is incredibly salty compared with what we get over here - make your own instead, using an absolute minimum of salt, or none at all. Use unsalted butter. Keep away from soft-drinks (carbonated colas and such - they have a lot of salt in them). Start using more herbs. Fresh is best, but dried is better than nothing. Here's a couple of salt-substitute herb mixtures you could try. You don't need to follow the recipes exactly if you don't have all the ingredients: Herbal Salt Substitute (1) 1/4 cup dried parsley 1/4 cup dried savory 1/4 cup dried savory 1/4 cup dried thyme 2 tablespoons dried marjoram Grind all ingredients together. Herbal Salt Substitute (2) 3 tablespoons dried basil 3 tablespoons dried marjoram 3 tablespoons dried parsley 3 tablespoons dried thyme 4 1/2 teaspoons dried chives 2 1/2 teaspoons dried paprika 1 1/2 teaspoons dried rosemary 2 1/2 teaspoons onion powder Grind all ingredients together. Here is the recipe...this is not an authentic Asian style peanut sauce...definitely the white chick version - but it's delicious. Also good on the leftover rice noodles with the extra veggies you've chopped stirred in. Sherrie's Peanut Sauce 1/2 c natural peanut butter, crunchy or smooth is fine. I use unsalted. The amount of broth you'll need to use will depend on how moist/runny your peanut butter is. Mine is fresh ground at the co-op, so is really, really thick. 3 tbl tamari or soy sauce 1 tbl honey 1 tbl grated fresh ginger 2 or 3 cloves garlic 1/2 c fresh cilantro leaves, packed. 3 green onions, whites and greens Hot sauce to taste. I use the Asian red chile sauce, maybe a tablespoon, or you can use red pepper flakes or a little Tabasco, or hot chile oil. 1 c vegetable broth or enough to make a good dipping sauce (sometimes I use some coconut milk in addition or to replace some of the broth. You can use chicken broth, too, but I usually make vegetarian rolls). I chop the cilantro and onion in the Cuisinart, then set it aside. Process the rest of ingredients until smooth. then stir in cilantro and onion without further chopping. Taste and adjust; all these are approximate measurements, so make it how you like it to taste.

I make Sue’s ribs often. Roadhouse Grill Baby Back Ribs Here is Sue's (Cookingrvc) famous recipe! They're really, really delicious. It's my favorite rib recipe. Don't pay attention to the "one teaspoon" amount of whiskey, just slosh it in, you need more than one teaspoon! 2 large racks pork baby back ribs salt coarse ground black pepper SAUCE: 2 tablespoons vegetable oil 1/4 cup minced fresh onion 1 1/2 cups water 1/2 cup tomato paste 1/2 cup brown sugar 2 tablespoons honey 1 tablespoon worcestershire sauce 1 3/4 teaspoons salt 1 teaspoon liquid smoke flavoring 1 teaspoon Jim Beam whiskey 1/4 teaspoon fresh ground black pepper -- coarse 1/8 teaspoon garlic powder 1/8 teaspoon paprika To make the ribs, cut each large rack of ribs in half so that you have 4 half-racks. Sprinkle a light coating of salt and a more generous portion of coarse pepper over the top and bottom of each rack. Wrap the ribs in aluminum foil and bake in a preheated 300 degree oven for 2 1/2 hours. As the ribs cook, make the sauce by heating the oil in a medium saucepan over medium/high heat. Sauté the onions for 5 minutes or until they start to brown. Add the remaining ingredients and bring mixture to a boil then reduce heat and simmer for 1 1/4 hours, uncovered, or until sauce thickens. Remove from heat and set aside until the ribs are ready. Preheat your barbecue grill. When ribs are finished in the oven, the meat should have pull back about 1/2-inch from the cut-ends of the bones. Remove the ribs from the oven, let them sit for 10 minutes or so, then remove the racks from the foil and put them on the grill. Grill the ribs for 3 to 4 minutes per side. They should be slightly charred in a few spots when they're finished. Brush barbecue sauce on the ribs while they're grilling, just before you serve them. Ditto for me. I have to pace myself, because I stop by here and the next thing you know the kitchen is a mess and I have WAAAAY too many blueberry muffins than I need and the house isn't packed and I'm getting fat. On the one hand. On the other hand, those muffins were fabulous and the snickerdoodles look great too! I had a marriage proposal over Okpkid's shreeded beef, (albeit one that started out, "if my wife dies, will you marry me?"). Sure miss Roselin too, I make her recipes all the time. Glad to see you guys again!

So good to see everyone on here! Annie, you continually inspire me to try and do more cooking! I also loved the reunion pics you posted. Makes me happy to see the love and support this board offers.

Lpink, can't go wrong with blueberry muffins! And the shredded beef recipe is great. I use it with beef and pork with great results.

Di, here are the recipes. Hope you enjoy them!
Slow Cooker Shredded Beef Tacos

Serve this delicious taco meat with soft tortillas or hard taco shells and pass all the fixings.

1 1/2 pounds boneless beef chuck, cut into 3/4-inch cubes
3/4 cup bottled chunky medium-hot salsa
2 tablespoons chopped garlic
1 tablespoon (packed) dark brown sugar
1 tablespoon soy sauce
1/4 cup chopped fresh cilantro (optional)
1 tablespoon fresh lime juice (optional)

Combine the salsa, brown sugar and soy sauce and pour over the meat in the slow cooker insert. Cover and cook for 8 hours on LOW or 5 to 6 hours on HIGH, or until the meat is fork-tender. I usually pour off some of the liquid. Shred the meat with two forks and stir in cilantro and lime juice if using.

Chocolate Snickerdoodles~Roselin CF
1c butter
1 1 /2c sugar
2 eggs
2 1/4c flour
1/2c cocoa
2 tsp cream of tartar
1 tsp baking soda
1/2tsp salt
1 tsp vanilla
2T sugar
2 tsp cinnamon
Combine butter, sugar, vanilla, and eggs. Cream well.
Sift all dry ingredients except 2T sugar and cinnamon.
Add to egg mixture and chill dough for at least one hour.
Roll dough into balls about the size of a walnut. Roll in
combined 2T sugar and cinnamon. Place on ungreased
cookie sheet and bake at 375Ã¯Â¿Â½ for 8-10 minutes.
Makes 4-5 dozen
