I think you need a few more hamburgers and hot dogs. You can't be sure that the numbers will work out correctly if you have exactly 1 each. (and some people eat 3-4 of those sorts of things--not me, but I've seen kids and guys pack them away).

A full sheet cake serves 60 (so you've got enough for about 120 people to have one serving each), so you may want to pick up 3-5 dozen cupcakes to fill in when the cake is gone.

How about chips and pretzels--they're good for filling in the cracks, so to speak.

It's really a little hard to figure amounts for something like you're describing--depends a lot on who's coming, what their appetites are like. Some folks are more than satisfied with a portion scoop of salad. Some (my husband) want to eat a whole plateful of potato salad at a picnic. Always better to have a little too much than too little. You can always send the excess home with the guests.

The last time I prepared for 200 people, only about 100 showed up! So I'm having a hard time with numbers. And it's just me..doing it all..

Oh I forgot, I have 150 snack size bags of chips..
But I did think about getting some bags of tortilla chips. There are pretzels in the "snack" mix.

I was thinking myself that the cakes wouldn't be quite enough. I can stop off at Safeway and pick up some Cupcakes. And a few more of the other things you suggested.

Do you mean you have 150 hotdogs and 150 hamburgers? or 150 combined...because lots of kids will eat 2 hotdogs AND a hamburger.
I think you need 4 oz of beans and 4 oz of potato salad per person...but less of the pasta salad.
And...when I serve a group...I am always blown away at how much of a bowl of cut up mixed fruit people will eat, easily 1/2 cup per person.
But if you dish, your food will go fatheer...if they dish they will take more fruit and less pasta and veggies.
I don't know if your sheet cakes are a full sheet or a half...I think I would go with the pops for the kids....and depending on ages....perhaps some cookies. 5 year olds aren't much for cake when there is a cookie.

I have lettuce and tomatoes and american cheese for the burgers. I have mayo, ketchup, relish and two kinds of mustard.

Okay, I need to make another batch of beans then, and pick up some more potato salad and maybe a watermelon to cube up to "stretch" the fruit I have already. Another 24 pack of hotdogs and buns. (Unfortunately, The hamburgers I have will have to do.)

Off to the store I go. LOL

Don't worry about the burgers/dogs. What will be will be. People do tend to eat more on a Sunday,but they'll eat what you have. It sounds like many of us over prepare-- I do, and end up with lots of waste.
Definitely cookies, cupcakes or DOUGHNUTS as extra desserts. WHen I do the school family picnic, someone always brings doughnuts and the are gone in a blink.
All the prep by yourself? You a saint! Have fun, that's what the day's about anyway!

That's really the issue, over prepare, versus under prepare!
Most of the people are heading out on planes either later today or Monday. I don't want excess, but I don't want to look chintzy either.

Good thought on the doughnuts, never even crossed my mind!

For 100 I would have 18 to 20 pounds of potato salad...2 1/2 to 3 gallons.

You will have leftovers....can't be helped, but you don't want people licking the bottom of the bowl...at least I don't.

Well I did have leftovers..should have left the last batch of beans at the store..OH WELL..
Still have lots of dogs, burgers and buns too..We even threw out some cooked meat!
Still have salads leftover, but not the fruit..that went very well as you said Linda..
Cookies disappeared, but the cake..lots of cake leftover..

I'm so glad all went well! Now that it's over I need to make a comment or plea to others- Please do NOT put peanuts in a snack mix for a large group. Unfortunately peanut allergies are all too common and someone could have trouble. I realize that people with allergies need to police themselves, but sometimes there's a crossover even being in the same environment with them. Kids are notorious for eating and touching something without washing their hands in between.
End of rant, I'm glad it was a success, but sorry you'll be eating leftovers for days to come. Good thing you have the 3 growing boys+ friends to help you out!

I didn't. I had them seperate, for that very reason, and not in the same area.
I am mindful of the peanut issue, being that I do alot of things in the elementary.
