One day a week, cut out the meat!
I heard about this initiative yesterday on NPR and thought it might make for good discussion here. The goal is to reduce meat consumption in the US by 15% to improve personal health and the health of the planet.
Last night I decided to make an all vegetable meal: cucumber yogurt dip with crackers to tide me over while my vegetable casserole was baking. I enjoyed this easy to make casserole and will make it again.
Greek-style Baked Zucchini & Potatoes with Feta
thin sliced zucchini
thin sliced potatoes - I used organic Yukon Golds
thin sliced bell pepper
thin sliced onion
fresh or canned chopped tomatoes
1 clove garlic or more minced
chopped fresh parsley
salt and pepper
crumbled feta cheese
layer the sliced vegetables in a greased casserole dish with a cover; mix the tomatoes, garlic, parsley, s&p together in a bowl, pour evenly over the vegetables; bake at 350 for 1 hour and 15 minutes, remove cover, top with feta and bake another 15 minutes; remove from oven, put on cover and let sit for 15 minutes.
