kitchen lighting -- which lights most important to be dimmable?

At the risk of asking a stupid question which possibly can only be answered by an individual according to his or her usage of lighting, my question is: if I want some of my lights in the kitchen to be dimmable, which ones should I focus on?

I have a feeling that it depends upon why I might want them dimmed -- because I'm going out, because I'm going to be in another room, because I don't need that much extra light to cook with, because there are people over....

My kitchen has what most do, although quite likely less than most kitchens these days. (two (2) overhead, two (2) recessed, a small amount of undercabinet lighting, hood vent (dimmable Halogen), and three (3) pendants over the sink counter.) But my question isn't about MY kitchen, it's about how people use kitchens.

I want to use some LEDs but the dimming technology doesn't seem like it's quite there yet. And CFL dimming technology is definitely not perfected. That's why I'm trying to decide where to focus my dimming desires....
