Looks to me like you have enough planned. If you are worried though, I would make several more sandwiches of the easiest one to make of those three that you have listed, i.e. if the pineapple/cream cheese is the easiest to have extra ingredients on hand, I would make more of that one. That way, you may run low on the other sandwiches, but at least you won't run out all together as you get close to the last hour of the party.

I think you have enough sandwiches....after it's not a meal time.
Are you not having a cake? Sweet of some sort? I think a tray of something like lemon bars or sugar cookies would be a nice addition.

If you are concerned, think about putting out a tray of something you can use later...

A selection of cheese, crackers and fruit is an attractive addition that you can use if it doesn't get eaten...crackers become cracker crumbs for later use and cheese can go into a cheese sauce.

A bowl of fruit chunks...melon, pineapple, grapes, berries...is good, not too expensive, and is freezable for later use in desserts or smoothies if it isn't needed.

Have a good time with it, and remember, if you do run out of food at some point, nobody's going to starve after all! :D

My theory is: if I'm "worried" that I might not have enough, then I don't! The peace of mind of knowing I have enuf is a lot more important than the extra dollar I'd have to spend to make a couple-three more sandwiches. In addition to which, don't forget: the crusts will all be trimmed, providing less "food." Your count is a tad over 3 qtrs. per person ... it'd make me a little nervous. If there are men, then ALL bets are off. I am ALWAYS hoping there's more than enough; it would be embarrassing if the plates were all empty when everyone was done.

It looks like the perfect amount to me. If you're nervous about the quantity, I'd do as rachelellen suggested and add some fruit, cheese and crackers because tea sandwiches don't make good leftovers.

We just catered a tea bridal shower for a daughter's friend(daughter is the MOH) this past Saturday. It was for 30-35 guests. (Not everyone had rsvp'd yet) We had planned on just 3 sandwiches per person because of the other food available.
We also made extra because it was for a friend.
Here is what we made and the number of pieces sent.

Mini Quiches-spinach,broccoli,asparagus,-
ordered 60 sent 75

Tea Sandwiches-smoked salmon,curry chicken salad,cucumber-
ordered 90 sent 114

Scones-lemon blueberry,cranberry orange,raisin-

According to my friend and the daughter, all the quiches and tea sandwiches were eaten. No leftovers. A few scones were left. They took home some fruit salad and some of the Caesar salad.
You may want to increase your sandwich count. If you are just having fruit and veggies in addition to the sandwiches that may not be enough. NancyLouise

Thank you everyone. My menu has changed, the salmon on toast points recipe was in a lap top that was stolen. So, we are now doing lox and cream cheese with bagel chips.

Question, should I just have the lox and cream cheese or should I also have some slices of lox accompanied by creme fraiche, capers and red onions available. I have to do all of the preparation today as tomorrow evening and Saturday are Shabbat and the shower is on Sunday.

Andrea, I think the toppings for the lox and cream cheese are fine. Put them in bowls so your guests can top the L and CC by themselves. I do have to ask though, by saying you are doing all the prepping today does that mean you are making the tea sandwiches also. I'm afraid if you do them to far in advance they will turn soggy by Sunday. We got up early and put the sandwiches together the morning of the bridal shower (which was to start around 1:00pm). I actually prepared the insides for the sandwiches already and we'll assemble them at 1:00 on Sunday. I read some of the stuff is good for a week in the fridge and some is good up to 72 hours in the fridge. The only thing I'm afraid I made too early is the cream cheese, butter and mint mixture I made that on Wednesday. It smells fine but I don't know if that is going to keep okay for 4 days in the fridge. I'm doing the Salmon and Cream Cheese spread for the bagel chips as late as I can so it can be mixing at least 24 hours but no more than 48 hours in the fridge. That way everything is done since I'm doing most of the work (I have a two year old and am 8 months pregnant) it will be easy because the last thing to do will be assemble the sandwiches. The shower is 20 miles away so I have to transport all of the food and the buffet equipment and decorations over there Sunday morning and I can't do anything from this evening to tomorrow evening because it is Shabbat. Everything starts at 2:00 so I'm hoping 1:00 will give us time to assemble the sandwiches and they won't be soggy by the time guests arrive.

Holy mackerel Andrea! A 2 year old and a baby on the way and making the food! God bless you, lol. Making the fillings for the tea sandwiches ahead of time is a good idea. We did that the night before the shower. I understand that you can not do that. But waiting to put them together till the last possible minute is a good idea. I think your sandwiches will turn out fine and not be soggy doing it as you have described. Best wishes to you and on the birth of your child when it happens. NancyLouise
