Any T&T recipes for banana squash?

I am growing this winter squash for the first time this year and there is going be a lot of squash. It has grown even bigger since I posted this last week. The monster squash that ate my garden!

I think I will make a "pumpkin" pie recipe with it, plus the usual baked squash. Any other recipes?

Anything that you would make with butternut squash will work with banana. I have a soup that I make all winter long that will work with either one. You can also steam and puree it. I imagine that will freeze well and then you can make soups or a mashed potato concoction--whipped puree of...

Butternut Squash Soup

1 Tblsp Olive oil or butter
2-3 lbs Butternut squash, peeled, and diced into 1 inch chunks
3 large carrots chopped
1 medium onion chopped
1 Tblsp ginger(1"piece) or ginger juice from Wms Sonoma
2 quarts of vegetable stock or chicken stock or cold water (mixed chicken and veggie)
1 bunch parsley, chopped
Pinch of: nutmeg
Powdered ginger
Curry powder
Parmesan cheese

Heat the oil or butter over medium heat in a large saucepot, sautÃ© the squash, carrots, onion and ginger for 3 minutes, until they are lightly browned. Add the stock and some orange zest (if desired) and bring to a boil. Lower to simmer and cook uncovered for 35-40 minutes, until the vegetables are tender. Add the parsley, nutmeg, salt, pepper, ginger and curry to taste. Puree the soup with a handheld immersion blender, food processor or regular blender until smooth and creamy. Soup can be garnished with fresh sage leaves and Parmesan Crostini.

Serves 4-6 people

I think I'd hollow it out and put a candle in it! That's enormous!!
I make squash soup very like compumon's but instead of ginger i add green chilis and a little chopped jalapeno.

Here's one I love. I think it came from a food processor cookbook originally. I probably created this variation. I usually note the source but I have had this so long, I'm not sure anymore. I have baked it in a larger loaf pan too. It took a bit more time to bake. Lot's of fiber in this one ***Recipes From RenÃ©e Adler AscherÂs Kitchen *** Banana/Bran/Fruit Quick Bread Yield: 3 small loaves Prep. and Cooking Time: 1 hour and 20 minutes Food processor method Ingredients: 3/4 cup all purpose flour 1/4 cup whole wheat flour 1 cup unprocessed bran (AKA MillerÂs bran) 1 Tbs. baking powder 14 tsp. baking soda 2 ripe bananas 3 Tbs. unsalted butter of canola oil 1/4 cup lt Brown sugar, packed 1/4 cup molasses (or other syrup) 2 large eggs 2/3 cup skim or non fat milk 1 cup chopped dried apricots or other fruit Scant 1/4 cup golden raisins (optional) 1/2 cup chopped pecans (or walnuts) Instructions: Â Preheat oven to 350Ë Â Process bananas with milk, syrup, butter (oil), sugar, and eggs until smooth. Clare, My mom & grandmother would make the most delicious banana squash fritters. They combined grated banana squash, potatoes, apple, & onion with some flour & an egg. Kind of like a banana squash latke. Anyhow, I loved them so much that when I'd come home from college, that would be one of the dishes I'd ask my mom to make for me. Our local grocery stores sell squash portions from time to time, and now that's when I make them. I've never seen a whole squash "in person." I bet it's something to behold!

All my fish recipes use halibut, but you can sub cod for them all. Parmesan-Crusted Halibut ======================== Shared by Lori (Hoopysmom) Gardenweb Source:Recipe from RayÃ¯Â¿Â½s Boathouse: 1/2 cup flour 2 large eggs 2 tablespoons water 2 cups Panko bread crumbs ( I never use panko. I prefer fresh made bread crumbs) 1 cup shredded Parmesan cheese Zest of 1 lemon, chopped 4 6-oz halibut fillets, skin removed 3 tablespoons olive oil Preheat oven to 450Ã¯Â¿Â½F. Place flour in one bowl, beat eggs and water place in 2nd bowl, combine bread crumbs, Parmesan and lemon zest in 3rd bowl. Lightly salt and pepper the halibut fillets. Dredge the fillets in flour, next dip in egg and then coat with bread crumb mixture. Heat olive oil in ovenproof pan. Saute the fillets on medium-high until golden-brown crust forms. Turn fillets over and place pan in preheated oven. Roast until centers are pearly white and opaque. Grilled Halibut with a Green Olive Relish Basic outline of salsa - Chop green pimento filled olives, add chopped seeded tomatoes, minced garlic and parsley, lemon zest, lemon juice, olive oil, and salt and pepper. relish/salsa to serve with the fish. This is one of my favorite winter squash. Very smooth grained and easy to cook. Makes wonderful squash pies. We usually put a chunk into a piece of heavy foil, butter and put brown sugar on it, seal it up and bake it at 400 degrees until soft. No water, no mess, no clean up. I also sometimes stuff it and other winter squash with a good bulk pork sausage with chopped tart apples, brown sugar etc. mixed in. If I need to stretch the sausage, add in some cooked brown rice. Wrap and bake until squash is soft. Then open the foil and place back into the over for 10 - 15 min. until the sausage stuffing is browned on top. This is a favorite of my husband's.

compumon & Linda - Thanks for the ideas. I like the candle idea for Halloween! LOL

I use to make a butternut soup in the winter. I have the recipe somewhere. It is one of my favorites. Maybe I can freeze the squash and use later.
