Need to replace kitchen flourescent -what do I get?

I have a small kitchen which gets little light due to a covered patio. I have one recessed light above the sink and a couple of undercabinet flourescent which aren't always on and one flourescent on ceiling. I also have a chandelier above the table next to the kitchen. I want to get rid of the ugly flourescent fixture. It currently has two 40w tubes.

I'm not opposed to putting a new flourescent fixture but would prefer to go with something else.

How much light do I need (I like a lot of light). What type of bulbs and most important how much wattage do I need for this kitchen.

I thought of track lighting but will that illuminate the peninsula? Will it give me enough light. Please help.

I can only add one fixture -no pendants or other cans (for now).
