ribs while camping?

Hey everyone...we are preparing for our annual cabin camping week and the others (two other families) have requested that one of my evenings to cook (we split them up) I make ribs. (or maybe I volunteered? I can't remember - LOL)

Anyway...We leave on a Sunday and the Rib meal won't be until Thursday. I am not about to try to cook them indoors on or in the tiny stove or oven in the cabin...and I don't want to be tending to them for hours over the campfire even if I could figure out how...

So, I'm wondering if I could bake them (I'm talking the Roadhouse Rib recipe) before we leave -

my questions.

-Would they be OK refrigerated (already cooked) from Sunday to Thursday? That seems like a long time to me.

-Or what about freezing after baking? Then just thawing and putting over the fire to add the sauce...?

-And if freezing after baking is possible, would I be able to use the uncooked ones that are already in my freezer? Or would that cross that line of "refreezing"?

-Or should I abandon the idea all together? There are plenty of other things I could make that night which don't prompt so many questions - haha.
