Summer Fruits and Snacking

All year long, I've a bowl of fruit on my kitchen island, and the content varies with season. There are almost always lemons and limes for cooking along with fruit for snacking. But when the Summer fruits come in, I go nuts.

Right now, I've apricots, nectarines, peaches, red & yellow cherries, cantaloupe, blueberries, strawberries and figs. (Along with the ubiquitous bananas, limes, lemons, & apples)

For breakfast, I had a big bowl of mixed fruits. For lunch I had half a sandwich, a peach, a nectarine and a handful of cherries. When I came home from work, I had some cantaloupe and blueberries.

As I type, I'm eating a bowl of my home made plain yogurt, with just a smidgen of brown sugar, with a layer of strawberries, blueberries, cherries & nectarine slices, all topped with Grape Nuts for a nice crunch...one of my favorite treats.

I always think I'm going to make pies and tarts and other fruit desserts, but mostly I end up just eating the fruit as it is, or with my yogurt & Grape nuts. It just tastes so good! Of course, I do make jams & fruit chutneys for the winter.

I found a simple recipe the other day for broiled figs served with ricotta. I may try that tomorrow.

Fellow fruit lovers...what are your favorite, simple fresh fruit snacks?
