Rice Flour Bread (for bread machine) gluten-free, egg-free, dairy-free

I felt inspired to finally put up this recipe, since I made several loaves of rice flour bread yesterday, so we could use it today to make stuffing for our turkey. Canadian thanksgiving weekend! One of my most favorite meals. And I think the stuffing (and cranberries) are my favourite part.

So when my daughter was little and I realized she had a lot of food sensitivities, I searched and searched on the internet for a good rice flour bread recipe for a bread machine. But all of the ones that I tried either didnt rise, would rise and then flop in the middle, tasted bad or a was as hard as rock.

So I started experimenting my own and after about 10-15 different tries, I finally came up with a great recipe.

Rice Bread

1 cup water
1/3 cup milk (I use plain rice milk)
2 eggs (I use 3 tsp egg replacer mixed with 4 TB water)
1 tsp apple cider vinegar
4 TB oil
2 TB sugar
1 tsp salt
1 1/2 cup white rice flour
2/3 cup brown rice flour
1 1/2 tsp xanthan gum (you can also use guar gum instead)
2 tsp quick rise yeast

Rice flour is a little finicky, so itÂs important that you place all of the ingredients in the exact order that is listed in the bread machine pan. Then when you put in the flour, try to spread it around so that it covers all of the liquids underneath. I have no idea why this makes a difference, but it does. Then start the bread machine on the "grain setting". It cooks it a little longer than the regular setting.

Keep the bread in a plastic bag and refrigerate after about a day, then slice and freeze after about 3 or 4 days (it can last for a long time in the freezer).

How To Substitute For Wheat Flour
To make a standard recipe free of white flour, substitute one of the follow:

1- 3/8 cups barley flour for 1 cup white flour
1 cup corn flour for 1 cup white flour
7/8 cup corn meal for each cup white flour
3/8 cup potato flour for 1 cup of white flour
7/8 cup rice flour for each cup of white flour
1 cup rye meal for 1 cup white flour
1-1/2 cups ground rolled oats or 1 cup oat flour for 1 cup white flour
1 cup whole wheat flour for 1 cup white flour.

1 cup of wheat flour equals...
7/8 cup amaranth
7/8 cup garbanzo bean
7/8 cup chickpea (garbanzo)
3/4 cup corn flour
1 cup cornmeal
3/4 cup millet flour
3/4 cup oat flour
5/8 cup potato flour
3/4 cup potato starch
7/8 cup rice flour
3/4 cup soy flour

Important - Always use a double portion of baking powder with dark flour. Recipes when converting a white flour recipe to a dark flour. Average use is 2.5 tsp. baking powder to each cut of flour.

Substitution of various flour for white flour recipes gives new and exciting flavors. Corn flour thickens sauces better than cornstarch and may be used in the same proportions as white flour. It also combines well with other flours in making muffins.

I wonder if you can make your own oat flour by putting oats in the blender.

Question: Does the apple cider vingar have to be organic? Will regular yellow vinegar work?

Our DS has a bread macine so I'm sure he will try it soon.

My DH was on a strict no-gluten diet for about 6 months. I tried every bread recipe, Bob's Red Mill mix, bread machine and no machine. It was such a toss up and I never ever got a consistent loaf, no matter how hard I tried. And I really did try hard.

So, I was wasting a lot of money on ingredients for bread that wasn't even very good. At some point, I started buying the gluten-free fresh bread at Whole Foods (for a shocking $7 a loaf). I just bought it for DH, I could eat regular bread, and we kept it in the freezer, and he could take out one or two slices at a time.

Even with the high cost, I think I came out ahead without wasting lots of ingredients (some recipes called for 3 or 4 eggs) and getting mediocre (at best) bread. And I am a pretty good cook/baker, but I was unhappy with the results, and so was DH.
