Patches, I don't have a recipe that I use. We always have key lime pie in the freezer. Edwards brand is very good. Know that some of our cooks on the forum have wonderful recipes for key lime. When I want lemon or key lime, I want it then. So its great to have it on hand.

I have an easy and delicious recipe. The only thing is you may not be able to find Nellie & Joes famous Key West Lime Juice.I guess you could use other lime juices.

One 9" graham cracker crust
one 14 oz. can sweetened condensed milk
3 egg yolks (whites not needed)
1/2 cup Nellie and Joes

Combine milk egg yolks and lime juice. Blend until smooth. Pour filling into pie shell and bake at 350 for 15 minutes.

Allow to stand 15 minutes before refridgerating Before serving, top with freshly whipped cream and garnish with lime slice.

I am making this tomorrow for my neighbor's birthday. He loves it.

We send this Lime Juice to my SIL who lives in New York, because she can't find it.In fact, she will be gettng some for her birthday.

I make the same pie as Sandie. Nellie and Joe's lime juice is in the same aisle as the lemon juice, usually on the top shelf. I think you can make about 4 pies from one little bottle of juice. It's delish, the best key lime pie I've ever had and I have had many, I love lime anything. Oh, and the recipe is on the bottle, too, for convenience.

It's the recipe I use. I sometimes (depending on the season) use key limes fresh from my little tree. I'm hoping it survives the freeze tonight.

I add some grated zest and make my own graham cracker crust rather than use the store-bought. Nothing worse than key lime pie with regular crust, rather than graham cracker.

Check the food channel for receipes. They claim if you don't use the key limes, it won't taste the same--but I don't want to start a discussion. I have seen the key limes in the market in ND, would you believe that? Guess, I should have bought some and then froze the juice. Check your freezer dept or ask the produce dept.

I use four egg yolks to a can of sweetened condensed milk and a half cup of fresh Key Lime juice. I can get fresh key limes at the grocery most of the time. I think of Key Lime pie as a summertime dessert.

We don't care for graham cracker crust so I use a vanilla wafer crust or sugar cookie crust instead.

My DH loves Key Lime pie. I bought him a slice of Edwards once and he threw it out after one bite. I've made them with bottled jiuce and they are NOT the same.

Out of curiousity I Googled for the ingredients for Edwards "key lime" Pie.

No wonder DH said he spat it out. LOL

Not a drop of Key Lime juice listed and all that filler. UGH

The filling for Key Lime Pie is only three ingredients besides the crust.. key lime juice (and rind), whole fat sweetened condensed milk and egg yolk.

It's not supposed to be cheesecake, it's not a pudding and it's not a congealed gelatin like mess. It's a custard. Once you eat the home made version nothing else will do. It only takes a few minutes to mix up and less than 15 minutes to bake. Easy.

Had no clue the recipe was so easy. This is going to be a first for me. Going to make one today. Already had all the ingredients for the pie with the exception of limes. Called DD and she has plenty. Not sure if this is a good idea for me, this is one of my favorite, favorite things in the world. So need to make sure I don't eat the entire pie myself. Granddaughter and I have started cooking each day. So this will be our project when she comes over today. Patches, hope you find the lime juice. I've had Edwards Key Lime Pie. Tasked OK, but after reading the ingredients I am grossed out. I have a bottle of Key Lime Juice in the fridge. If I buy the sweetened condensed milk, that's all I need. I have both graham cracker and vanilla cookie crumb crusts on hand.

As for Hallgarden she is going to experience fresh Key Lime pie. She may love it or may prefer the frozen. Maybe she will like both.

But at least she is trying new things and accepting new ideas without coming in first thing in the morning to pick a fight.

I would like to try making it sometime, but sometimes it's better to buy things. I never quite understood people who would try to make homemade Reese's Peanut Butter Cups. Or homemade Nut Goodies. Especially when they wanted to duplicate it exactly. I could see if they wanted a variation but some things aren't duplicated too easily. And the big question is why?

As for the pie, as said I'd like to try making one sometime. Shouldn't be that difficult. I found a couple knock-off recipes where you could use a lime pudding and stuff that could be interesting, but I do buy Edwards on occasion and I like it. I have found it seems to vary, unless it's my tastebuds. Sara Lee has a version that seems to be more consistent and have a sharper lime taste to it and it's usually cheaper too. I have an Edwards in the freezer. I'll be munching on it soon. Also enjoy the Sara Lee Key Lime Cake.

It also could be worth trying one first to see if you like it before going to the trouble of making it. You can buy pieces of Edwards. I think it's 2 slices per package. If you like it, then experiment on making it. If you don't, then it could be a waste of time.

One thing, I do prefer a cookie or wafer crust over graham cracker. There just aren't good graham crackers anymore and the premade crusts, which I'll admit I do use occasionally, just aren't the best. And making one isn't the toughest thing in the world.

And I have to agree, that someone who gets grossed out over ingredients probably doesn't want to know how their sausage is made! Or the levels of rodent hairs and droppings are allowed. :)

Whole Foods has organic key lime juice. They surely have fresh key limes as well.

The Original Key Lime Pie

6 egg yolks
1 can sweetened condensed milk
1/2 c. key lime juice
9-inch baked pie shell
6 egg whites (stiff)
4 tbsp. sugar

Directions:
Combine egg yolks and condensed milk. Mix 8 minutes. Add lime juice; mix 1 minute. Blend well. Turn into baked pie shell. Beat egg whites until stiff peaks form. Gradually add sugar. Swirl onto pie, spreading all around. Bake in 300 degree oven until meringue is pale honey colored.

Glenda, I think I recognize that as the recipe I use, or very close to it, although I make mine with a graham cracker crust instead of a pastry crust.

We make the crust from scratch as well. This takes ten minutes to make and costs less than the pre-made variety.

Graham Cracker Crust
2 C graham cracker crumbs
1/4 C sugar
7 T melted butter

Combine graham cracker crumbs, sugar, and melted butter. Press firmly on bottom and sides of pie plate. Bake for 7 minutes in preheated 350 oven. Cool completely before filling.

Thank you going to the trouble to post the ingredients in the store-bought pie. What a surprise that it has no real lime juice. I had thought of buying one, but the recipes sound so simple.

I noticed that there are variations in the number of eggs.
How many do you use?

Oh sorry Wildchild. I see you use 4 eggs in yours, Glenda uses 6, and sandiefl 3. I would think the difference is only in the the volume of the pie filling.

Please don't let this start a controvery over what is best.

I would think the number of eggs would only affect the density of the pie, not so much the flavor.

Less egg yolks would probably make it a bit lighter and more yolks bit richer is all. Just a matter of personal taste. :-)

I normally buy large eggs. Perhaps if i used extra large eggs I would use three. If I bought medium I might want to use six.

When made right, you can't beat a Key Lime Pie. Publix Supermarket makes a Mango Key Lime Pie that's to die for!!!

I also use the Nellie & Joes Key Lime Juice/recipe. It's so easy and simple and YUMMY! I have also used the 6 individual pie shells for cute mini pies (same recipe/slightly less time in the oven)

I think of it as a summer dessert also-but now I want one!

I am sure going to get to Publix. I have never seen the Mango Key Lime. Mango is my very favorite.When we used to live in Miami, we had three mango trees in our back yard.I sure do miss them. DD and I have both tried growing them up here but so far no luck.They just can't take the cold.
