I don't know if this is what you have in mind, but here is a recipe for rhubarb cake.

Rhubarb Cake

1/2 c shortening
1-1/2 c brown sugar
1 c buttermilk
1 egg
Pinch salt
1 tsp baking soda
2 c flour
1 tsp vanilla
1-1/2 c rhubarb, chopped

Combine first 8 ingredients, mix well and then fold in rhubarb.
Pour batter into prepared 9x13 pan and bake 35-45 minutes at 325 º.

Combine 1/2 c sugar and 1tsp cinnamon, sprinkle over warm cake.

Rhubarb Cake
Ingredients:
1/2 c Margarine
1 1/2 c Sugar, brown
1 Egg; beaten
1 ts Vanilla
1/8 ts Salt
1 c Buttermilk
2 c Flour
1 ts Baking soda
3 c Rhubarb; finely sliced
1/2 c Nuts; chopped
1/3 c Sugar, brown
1/3 c Sugar
1/2 ts Cinnamon
Procedure:
Slice the rhubarb into 1/4" slices. Cream the margarine and 1¼ cups brown sugar; add the egg, vanilla and salt; mix well. Add the buttermilk, flour and soda; mix well. Stir in the rhubarb. Pour the batter into a well-greased "x13" cake pan. Mix together 1/2 cup nuts, 1/3 cup brown sugar, 1/3 cup white sugar and 1/2 teaspoon cinnamon; distribute this mixture evenly over the unbaked cake batter. Bake for about 45 minutes in a 350 degree oven.

Rich Ranch's Five Generation Rhubarb Cake
(This recipe came to Montana in 1865!)
Ingredients:
1-1/2 cups brown sugar
1/2 cup butter
1 egg
1 teaspoon vanilla
1 teaspoon salt
1 teaspoon baking soda
2 cups flour
1 cup sour milk
2 cups raw rhubarb (finely chopped)
1 cup walnuts (chopped)
Topping:
3 Tablespoons butter
3/4 cup brown sugar
3 Tablespoons cinnamon
2 Tablespoons flour
Cream together brown sugar and butter. Add egg and vanilla, then add salt, baking soda and flour. Mix in sour milk, rhubarb, and walnuts. Pour into a 9 x 13-inch greased cake pan. Mix together topping ingredients and sprinkle over cake mixture. Bake at 350 degrees for 45 minutes. Tastes great served with vanilla ice cream or whipped topping.

I don't know whether I've posted this one before, but it is fabulous, with a nice crumble topping.

STRAWBERRY RHUBARB COFFEE CAKE

** FILLING **
3 cups sliced rhubarb, -- 1 inch pieces
1 quart fresh strawberries, -- diced/mashed
2 tablespoons lemon juice
1 cup sugar
1/3 cup cornstarch
** CAKE **
3 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup butter or margarine, -- cut into pieces
1 ½ cups milk (buttermilk is even better)
2 eggs
1 teaspoon vanilla extract
** TOPPING **
¼ cup butter or margarine
¾ cup all-purpose flour
¾ cup sugar

Preheat oven to 350.
In a large saucepan, combine rhubarb, strawberries and lemon juice. Cover and cook over medium heat about 5 minutes. Combine sugar and cornstarch, stir into saucepan. Bring to a boil, stirring constantly until thickened; remove from heat and set aside.
In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. (I used my hands, pressing the butter into the flour. Use cool butter) Beat milk, eggs, and vanilla; stir into crumb mixture.
Spread half the batter evenly into a greased 13x9x2-inch baking dish. Carefully spread filling on top. Drop remaining batter by tablespoonfuls over filling.
For topping: melt butter in microwave over low heat, stir in flour and sugar until mixture resembles coarse crumbs. Sprinkle over batter. Lay foil on lower rack to catch any juicy fruit spillovers.
Place coffee cake on middle rack, bake at 350 for 40-45 minutes. Cool in pan. Cut into squares.

If one doesn't have butter milk can reg milk be substituted? Would you need to add something else to the milk? TIA

Sour the milk with lemon juice...add a teaspoon of lemon juice to each cup of milk.

I posted a Rhubarb Bread recipe that is delicious. Cannot remember where I got it from... :o)

Rhubarb Bread

Ingredients:
1 cup milk
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 1/2 cups brown sugar
1/4 cup granulated sugar (my change to the original recipe)
2/3 cup vegetable oil
1 egg
2 1/2 cups all-purpose flour

1 teaspoon salt
1 teaspoon baking soda
1 1/2 cups chopped rhubarb
1/2 cup chopped walnuts
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1 tablespoon butter, melted

Directions:
1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease two 9x5 inch loaf pans. In a small bowl, stir together milk, lemon juice and vanilla; let stand for 10 minutes.

2. In a large bowl, mix together 1 1/2 cups brown sugar, oil and egg. Combine the flour, salt and baking soda, stir into sugar mixture alternately with the milk mixture just until combined. Fold in rhubarb and nuts. Pour batter into prepared loaf pans.

3. In a small bowl, combine 1/4 cup brown sugar, cinnamon and butter. Sprinkle this mixture over the unbaked loaves.

4. Bake in preheated oven for 40 minutes, until a toothpick inserted into center of a loaf comes out clean.

I made Susy's Strawberry Rhubarb Coffeecake and it is a little bit of heaven on a plate! I kid you not!

Thanks for the recipe, Susy! It is definitely a keeper! I like it because it's not super sweet like a lot of cakes/coffeecakes are. Just perfect! I'll be making this one often!

I have to admit I've been thinking about it all day. I may have to swing by the market today and pick up some strawberries and rhubarb myself.

Thank you lindac. I am curious how much the taste the buttermilk vs reg milk makes in a recipe. I like rhubarb so these recipes really sound good.

My recipe for Rhubarb Bread is virtually the same as mamalou's except I use buttermilk and brown sugar. I tend to add a lot more cinnamon than recommended and give the rhubarb a little cinnamon sugar coating before I mix it in.

It almost requires either a hot cup of coffee or a cold glass of milk. It's a summertime treat that I look forward to every year. But I haven't had any in several years now! But my rhubarb is up now, so....

Susy's Strawberry Rhubarb Coffee Cake just went into the oven. Filling sample was good, batter sample was good - DD sampled the topping and pronounced it good. Can't wait. I'm saving this thread, as all of these recipes look good. Thanks everyone.
