Well we decided to make stuffed turkey burgers tonight for dinner but no buns.....

SO...I logged on the King Arthur's website and found

Beautiful Burger Buns:

Lee was in such a hurry to try the burgers alas, no pics of burgers.

Will take some tomorrow.

I make that recipe all the time--it's excellent. Since there's only two of us, I bake two, freeze the rest, bake two more as needed. These days I substitute a third of the white flour with whole wheat, and they're even better. We never buy hamburger buns anymore.

I like all kinds of sandwiches on hamburger buns (good ones, that is). However, if they get past really using on sandwiches, but aren't spoiled, I've always preferred bread puddings with more crust than you get from sliced bread. It give the pudding a more interesting texture. Of course, my fav bread for bread puddings are croissants. Insult to injury, in for a penny, in for a pound, all that...but gosh croissant bread puddings are tasty. :D

General rule of thumb for judging size: The ball of dough is approximately 1/3 the size of the finished product (hamburger bun, loaf of bread, dinner roll, etc.). You allow it to double in size - that accounts for the second third of the finished size. Ovenspring - the amount the dough rises after it's in the oven - accounts for the last 1/3 of the finished size. So now you can use this "rule" to eyeball how much dough you need to use. OR I usually scale the dough between 1-1/2- to 2-ounces for small sandwich buns. Decide which amount and scale all the lumps of dough to the same weight so they will be all the same size, will rise at approximately the same amount of time, and will all bake in the same time. Pat the dough ball to about 1/2-inch thick (or a little less) (oil your hands when working with the dough). I happen to have a Pizza Piccolo Pan that is perfect for mini burger/sandwich buns. It has 12 shallow indentions (similar to a muffin top pan). This pan keeps the buns nice and round. -Grainlady

I got my pan from King Arthur Flour, but I don't think they carry the pan anymore. The pan has 12 shallow indentions (3-inches across) that are perfect for mini-burger or sandwich buns. The pan is similar to a muffin-top pan - a pan that forms only the tops of muffins - and there are probably small muffin-top pans available. I don't know of a source for the smaller sized pans, possibly Chicago Metallic has them. I use the large muffin-top pans (4-inches) for forming regular-sized burger buns. The good news, you can make mini burger buns on a cookie sheet without a special pan. Use approx. 2 to 2.5 oz. of dough (I weigh the dough on a kitchen scale so I get equal sizes). Make sure the dough has all the air bubbles removed and pat the ball of dough to about 1/2-inch thick. I'm including the link to the recipe for [Moomie's] Beautiful Burger Buns found at King Arthur. Freezing hamburger buns?

I've never had good luck freezing cheap hamburger or hot dog buns. Bread, yes, but not for long term. I freeze bagels. Lately I use a good bagel for a burger bun. With bread, as with most anything, remove as much air as possible. A second wrap helps. Thawing, I generally leave it open a bit so the excess moisture can get out or else it goes mushy. Turn it while thawing. I generally switch bags when thawing it to put it into a dry bag. That helps a lot. However, if making a burger, put the bun in and toast it. That will freshen it up and toast it at the same time. Or just steam it on the burger. Not as good as toasted but workable.

I added flaxseed grain to the recipe.
Next time I'll sub whole wheat flour too.
Will freeze the rest for later use as there are only the two of us left at home too.

Maureen, at what point do you freeze and then do you thaw before baking?

Grace, I make the dough in the dough cycle of the bread machine, so it rises once there. I take it out and divide it into eight pieces, then shape all of them into buns. I put two onto a baking sheet and let them rise a second time, then bake them. The rest I put on a separate sheet and stick in the freezer till they harden, then put them into a vacuum-seal bag and back into the freezer. I take them out as needed two at a time, reseal the rest into the bag. Thaw the frozen ones covered with a towel on a baking sheet, then glaze them with egg wash, sprinkle seeds on them, and bake. You don't need to vacuum-seal them--I just suspect they keep better that way.

If I think about having burgers for dinner sometime in the afternoon, I can take them out, thaw them, and bake them by dinnertime.

Those are gorgeous. I've written down that recipe before because of everyone that's made them. I think it's about time I made some. I just formed 14 burgers for the freezer so Christy would have something fast to cook on lazy summer nights. She wanted to buy bubba burgers or some such... shudder. These buns will really please her.

Thanks Maureen for the freezing directions. With a big family to feed, I never had to freeze my bread as it was usually gone before it even cooled, but now that it's just the two of us most of the time I've found that I'm baking less because I don't want to waste it. This will be perfect and I just wasn't sure of the best way to freeze!
