Strawberry Liquor recipe

Recently (last month?) Doucanoe posted a recipe for making a strawberry liquor.. I've been searching and can't find the thread. I thought it was on a thread of all strawberry recipes.

Linda, would you post it again....please. TY

This one stuck in my brain too!

**Scrumptious Strawberry Liqueur

3 c fresh strawberries, stemmed & washed
1-1/2 c sugar
2 c 100 proof vodka
1 c water
1/2 tsp lemon zest
1 tsp orange zest
1 tsp fresh squeezed lemon juice

Crush strawberries and sugar together in bowl. Let stand for about one hour. Transfer to clean 2-qt container and add vodka, water, lemon zest, orange zest, and lemon juice. Cover and let stand in a cool, dark place for 2 days, shaking frequently.

Use a fine-mesh strainer to strain out solids. Discard. Transfer liqueur to clean container, cover, and let stand for 1 week. Rack or filter into final container. Age for at least 1 month more before serving.
Yield: approx. 1 qt.

I like the Ball no-sugar but I haven't tried other brands. The "Classic" Ball and Surejel pectin require too much much sugar, you're right. But as Rose mentioned, the fruit is important - esp. if you're not adding tons of sugar. Make sure the berries taste good - most supermarket berries don't, esp. out of season. You might want to try frozen strawberries if you can find a brand that tastes good to you. The jam will be mushier, no firm chunks, but might taste better. Or wait until next summer and pick local berries - do you happen to grow your own?

Fresh Apple Cake 3 Tart green apples, peeled and chopped 3 T. sugar 2 tsp. cinnamon 2 cups sugar 1 cup vegetable oil 4 eggs 1/4 cup orange juice (I use fresh squeezed) 1 tsp. grated orange zest 2 tsp. vanilla 3 cups flour 1 T. baking powder (yes a tablespoon) 1/2 tsp. salt Citrus rum glaze 1 cup orange juice (I use whatever is in the fridge - fresh or bought) 2 T. lemon juice. 1 cup sugar 2 T. rum Combine apples with sugar and cinnamon. In a large bowl, cream sugar and oil. Add eggs one at a time and beat after each addition. Add juice, zest and vanilla. Combine flour, baking powder and salt. Beat into creamed mixture until smooth. Grease a 10" bundt pan. Pour 1/3 batter into pan, then 1/2 apples, repeat 1/3 batter, 1/2 apples and final 1/3 batter. The batter will be a little stiff but it all works together when baking. Bake at 350 F. for 60-70 minutes or until toothpick comes out clean. Cool slightly before glazing. Glaze - Combine ingredients in pot and bring to a boil. Drizzle over warm cake and cool before removing from pan. Bundt cakes are put upside down (or at least I do) so I saved some of the drizzle to put over the new top, which was the bottom. I serve mine with whipping cream. This cake is very moist and really good. Enjoy.

The recipe I heard was to mix cake mis with bisquick and follow the directions for biscuits on the bisquick box. But I am sure I wouldn't like tha artificial flavors in the cake mix. If you want sweeter shortcake, just add a little more sugar and a teaspoonful of REAL vanilla extract. Linda C

Marian, I make jam from frozen fruit yearly, it's so much nicer to stand over a boiling jam pot in January than it is in July. I've not had any problems, and I just thaw the fruit, crush it or prepare it according to the recipe directions, and use it as I would fresh. It's always worked fine for me. Annie

Nancy, you're gonna love that liqueur!

I didn't make note, but I believe that recipe was originally posted by someone on this forum.

Today, while at the grocery store, I overheard someone saying they were having fresh strawberries from the local farm market. I couldn't help myself...I asked which one?
So after getting my groceries, it was off to the farm market where I bought a flat of the most perfect, beautiful ripe strawberries ever.

The liqueur will be made tonight. Tomorrow will be jam and baked goodies and strawberry curd....if I can keep from eating them all up! I may have to buy more....

Linda -- thank you for posting this! Sounds fantastic, and as I'm about to be inundated with strawberries (while still having gallons in the freezer from last year), I can't wait to try it. Just a few questions... It says 3 cups of strawberries, and I never know what that means (since 3 cups whole strawberries isn't very many, but three cups crushed is quite a lot). Also, how sweet is the final product? that amount of sugar seems high for the amount of berries, and I'm just wondering if it might work to cut back on the sugar?

So excited to try it!

Becky, the recipe for the strawberry curd is posted on the link above with the other new strawberry recipes.

Em, I know I'm not Linda, but I did mix up my first batch of the strawberry liqueur tonight. I used a heaping 3 cups of whole strawberries.
As for the sugar, I think it's safer to cut the sweetness if you need to when you go to use it. Sugar is a preservative and I always hesitate to fool around changing something that already has been tried and works.
That 100 proof vodka cuts it pretty well...

Buying more vodka tomorrow, one jar will not go far.

I agree, Nancy. It is sweet, but very "strawberry".

I haven't made it in a while...think I may have to go to the U-Pick strawberry place and whip up a batch! LOL
