brown roast first or last?

Roast beef instructions tend to go one of two ways.

Brown the meat first on stove top or hot oven, then oven-roast low & slow.

Roast low & slow, then brown with broiler blast, or hot oven.

I think that browning first would let some of that good flavor get into the rest of the roast. But that's just speculation. Which method to you think gives the best flavor?

I've not seen the browning-after method, but agree with you that browning first gets that flavor into the meat. I also like te idea of getting the "prep" work done, then just letting the meat cook.

This is the method we use now, and always will use. Comes out perfect every time.

Thanks - does anybody know if plain roasted tomatoes can be canned (in PC?)? I sent 22 lbs of tomatoes (4 gallons) home with my dad to put in their freezer, I didn't get to roast any last night but I've got a casserole in the oven now, a full sheet pan (disposable) single layer of mostly paste tomatoes cut up. No oil, no garlic, no nothing. DD and I were canning jam today so BWB still has water in it, if I can do BWB (how to determine how many tomatoes for proper acidification) that would be good but I know it will take longer than PC. These tomatoes had spots I had to cut out but weren't over-ripe. The ones I sent with my dad were REALLY ripe, some had soft spots (I cut out), others weren't as ripe but had anthracnose spots (salmon colored) so I don't think I can can those - just take out a gallon at a time to make sauce or soup (or fewer to use in chili)?

Yikes! I just realized I left out the last 2 paragraphs of Giada's pot roast somehow - here it is again, in total. Give it a try - the gravy is absolutely to die for. Stracoto with Porcini Mushrooms Recipe courtesy Giada De Laurentiis Cook Time 3 hr 25 min 6 to 8 servings Ingredients 1 (4-pound) boneless beef chuck roast Salt and freshly ground black pepper 3 tablespoons olive oil 2 onions, sliced 6 garlic cloves, coarsely chopped 1 cup dry red wine 1 3/4 cups canned beef broth 1/2-ounce dried porcini mushrooms 1 large sprig fresh rosemary, plus extra for garnish Directions Preheat the oven to 350 degrees F. Pat the beef dry with paper towels. Sprinkle the beef generously with salt and pepper. Heat 2 tablespoons olive oil in a heavy 6-quart roasting pan over medium-high heat. Add the beef and cook until brown on all sides, about 15 minutes total cooking time. Transfer the beef to a bowl. Add remaining tablespoon oil to the pan, add the onions and saute until tender, scraping up the brown bits on the bottom of the pot, about 5 minutes. Add the garlic and saute 1 minute. Phillog -- I think it is posted but for ease here it is: HUNGARIAN TOMATO SOUP 1 c. chopped onion ¾ c. chopped carrot 1 c. shredded cabbage 4 c. beef or chicken stock 1 pound fresh tomatoes or 1 (1 pound) can whole peeled tomatoes, quartered 1 small bay leaf 1 clove garlic 1 t. Lemon juice 1 t. Sugar ½ c. sour cream 1 t. Hungarian paprika 2 t. Flour Salt and pepper to taste 2 c. spaetzle (recipe follows) Combine onion, carrot and cabbage with stock in soup ot. Bring to a boil and simmer for about an hour. Add tomatoes, bay leaf, garlic, lemon juice and sugar. Simmer another hour. Remove bay leaf. Puree soup mixture in a food processor. Return to soup pot and bring to a simmer. Combine sour cream, paprika and flour well. Stir several spoonfuls of soup into sour cream mixture. Pour back into soup. Season to taste with salt and pepper. Heat to serving temperature. Add spaetzle to soup just before serving. SPAETZLE: 1 c. flour ½ t. Salt Dash nutmeg Dash pepper 1 egg ½ c. milk Combine flour and seasonings in mixing bowl. Stir to combine, then make a well in the center. Pour egg and milk into the well and beat to blend, then stir in dry ingredients until well blended. Batter shold be rather stiff. Bring a large pot of salted water to a boil. Pour batter into a colander. Use a rubber scraper to force the batter through the holes in the colander into the boiling salted water. Cook spaetzle until they rise to the surface of the boiling water and stay there for about 30 seconds. Drain. Rise with cold water and drain again thoroughly. Depends on the type of roast. For a prime rib, I roast in a 500ÃÂ°F oven so the meat browns as it roasts.

If I am cooking a pot roast, then I brown the roast first and then add the other ingredients and liquid and slow roast.

And regardless of the method, I presalt a day or two in advance.

I use a different method entirely for a prime rib roast but for a regular pot roast like a chuck or round roast, I always brown first because that's where the good brown gravy starts.

I don't have a sous vide cooker but if I did and was cooking a roast with that method, I'd brown last.

sushipup, that method makes sense, too - even though it won't be prime rib in my case! I used to always do one for Christmas dinner, but we spend Christmas Day at a friend's house these days.

Pot roast is about the only beef roast that I make...used to always sear it first but I got tired of cleaning up all the splatters and, the last couple of times, just plopped the meat into the Nesco without any prep other than lacing it with sliced garlic. Lazy, yes, but it worked just fine for a pot roast that gets smothered with veggies anyway.

I cook pork roasts on the Weber so they brown as they cook.

I use sushipup's method; it's foolproof. The idea is to maximize the amount of medium rare goodness. After cooking low and slow, take it out of the oven and wrap in foil to allow the juices to stabilize for 30 or so minutes, put the oven as high as it will go, return the roast to the oven (unwrapped) to brown the outer 1/8 or so for 5 minutes; you can serve it then.
