Mulligatawny?

Mulligatawny is one soup I enjoy more in hot weather than in the winter. I also come across recipes for it in so many old cookbooks, with countless variations from the soup being strained or served with the vegetables, sometimes having cream added, made with diced cooked chicken or with bone-in chicken parts, tomatoes, turnips, parsnips or rice added (or not), etc.

The only constants seem to be chicken, tart apples and curry powder with the older the recipe, the smaller the amount of curry.

Here's the base recipe I use, although I don't measure everything precisely. Today, I added some cooked rice I had in the refrigerator and used Granny Smith apple and Penzey's Maharajah curry blend.

MULLIGATAWNY Â 6 servings

1/4 cup finely chopped onion

1 - 2 tsp. curry powder

1/4 cup finely chopped carrot

1/4 cup finely chopped celery

2 Tbs. finely chopped green pepper

2 Tbs. fat

3 Tbs. flour

1 tart apple, peeled, cored and chopped

4 cups chicken broth

1 16-oz. can diced tomatoes (or equivalent fresh)

1 Tbs. snipped parsley

2 tsp. lemon juice

1 tsp. sugar

3 whole cloves

1/4 tsp. salt or to taste

black pepper to taste

1 cup diced cooked chicken

In large saucepan cook onion, carrot, celery and green pepper and curry powder in fat until softened. Sprinkle flour over them; mix well and cook a few minutes, stirring. Stir in apple.

Gradually stir in broth, undrained tomatoes, and rest of ingredients and bring to boiling. Then turn down heat and simmer, covered, for about 30 minutes. Taste to correct seasonings, including curry.
