Jalapeno poppers

We all know what the search function is worth on this site. I searched for poppers and got some dips. Appreciate that. But I've got these big ole jalapenos from the farmers market and I'd like to learn how to make poppers. Otherwise they will go on the grill.

Appreciate the help!

technically this isn't a popper, it's also NOT fried.
I prefer

Afterburners

Makes 12 servings
Source: Southern Living
Serve with a spicy queso dip

12 unpeeled medium-size fresh shrimp
12 fresh jalapeño peppers
6 slices bacon -halved lengthwise

Peel and devein shrimp. Cut a slit in each jalapeno pepper; remove seeds and membranes. Carefully place one shrimp in cavity of each pepper. Wrap each pepper with 1 bacon piece and secure with a wooden pick. Place on a jelly roll pan. Broil 5 1/2" from heat for 6 to 7 minutes on each side, or until bacon is cooked. Serve warm.

I bake them on the two-part broiler pan that came with my electric stove. The fat from the bacon drains nicely

Yeah, I don't like the breaded, fried ones too much either. I like them stuffed with a mix of cheddar and cream cheese, wrapped in bacon (1/2 cooked...or the pre-coooked Oscar Meyer etc. works great) and grilled. Adding shrimp sounds great too! Mmmmmmmmm mmmmmmmmmmmm. My peppers aren't in yet...might have to make a stop at the produce market today!

We all have preferences. If I was going to do it, probably do it as Dennis said: == cut off ~1/2" from tip. == Stuff them (I like cream cheese with some shrimp bits) == Bread them == Deep fry them. Just barely, half cooked. == Let them cool down == Freeze. When want to serve, heat in oven, covered with foil, prevent drying out. I am talking about filling the whole pepper, not halved. Frozen Peppers without breading won't hold when thawed, me thinks. BTW: I have a small deep frier. I do a lot of mushrooms, shrimps, zukes, etc. I will try stuffed Jals and/or HHW.

I still have some wild rice stashed away. I think I'll try this recipe. SAUSAGE AND WILD RICE CASSEROLE (Serves 6-8) 1 pound bulk pork sausage 1/2 green pepper, chopped 1/2 cup chopped celery One 4-ounce jar diced pimiento, drained 1 cup wild rice 2 teaspoons chicken seasoned stock base One 10-1/2 ounce can cream of mushroom soup One 2-ounce can sliced mushrooms, drained 1 medium onion, chopped 1/2 teaspoon marjoram leaves 1/2 teaspoon thyme leaves 1 cup grated Cheddar cheese Cook wild rice according to package directions. Or, spray an 8 x 8-inch pan with cooking spray. Rinse rice with cold water and drain. Spread in prepared pan. Cover the rice very generously with boiling water. Cover pan with foil. Place pan in a cold oven. Turn oven on to 450 degrees. When it reaches that temperature, turn the oven off and leave the rice in the oven overnight without opening the door. It will be cooked when you get up in the morning. Brown sausage in a large skillet. Add green pepper, celery, and onion and continue cooking until vegetables are soft. Drain off excess fat. Add remaining ingredients, mixing well. Stir in cooked wild rice. Pour into a sprayed 3-quart casserole dish. Cover and bake 45 minutes to 1 hour at 325 degrees or until heated through.

I found this at All-recipes, it has great reviews Best Ever Jalapeno Poppers Prep Time: 45 Minutes Cook Time: 15 Minutes Ready In: 1 Hour Servings: 32 12 ounces cream cheese, softened 1 (8 ounce) package shredded Cheddar cheese 1 tablespoon bacon bits 12 ounces jalapeno peppers, seeded and halved 1 cup milk 1 cup all-purpose flour 1 cup dry bread crumbs 2 quarts oil for frying Directions: 1. In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits. Spoon this mixture into the jalapeno pepper halves. 2. Put the milk and flour into two separate small bowls. Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each. Allow the coated jalapenos to dry for about 10 minutes. 3. Dip the jalapenos in milk again and roll them through the breadcrumbs. Allow them to dry, then repeat to ensure the entire surface of the jalapeno is coated. 4. Thanks everyone! Sorry to say that I don't write down a recipe when I make these; I just wing it. Basically, I (obviously) halve and deseed the jalapeños to make the "boats." Take out however much cream cheese you think you'll need to fill them, and let it sit at room temp to soften. Mix in a bunch ( < precise measurement ;) ) of shredded cheddar cheese, and chipotle powder (to taste) to the cream cheese. If I want it hotter, I'll add some superhot (or even cayenne) powder to taste. Stuff the 'peños with the cream cheese/shredded cheddar mixture. Slice however many slices of bacon you'll need in half, then wrap the halved slices of bacon around the poppers. Sprinkle them with your favorite BBQ rub and put them on the smoker at about 225-250*F (I prefer to use a fruit wood like apple or cherry). Smoke for roughly an hour (?), or until the bacon is cooked to your liking. Then, fight off the guests for a second helping ;) Enjoy!
