Cheesecake Recipe

Here's my cheesecake recipe someone asked for awhile back. I've been hauling it around and making it for 38 years. This recipe has spoiled my kids. They don't like any other cheesecake.

**Note: An 11" springform pan is important for this recipe. Otherwise the timing is off and the crust is too thick. (Ask me how I know!) Oven preheated to 350 degrees.

Crust:

1 1/2 C Graham Cracker crumbs

1/4 cup powdered sugar

1 tsp allspice

1/3 cup butter, melted

combine and spread onto bottom 11" springform pan, pressing with fingers to make it firm.

Mix with mixer until sugar is not granulated:

2 8 oz pkgs cream cheese, room temp.

2/3 cup granulated sugar

2 eggs, room temp., beaten slightly

2 tsp vanilla

Pour into pan and spread if needed. Bake in preheated oven at 350 for 25 minutes. While it's baking, combine with mixer:

1 1/2 cups sour cream

4 TBSP sugar

2 tsp vanilla

After cheesecake has baked 25 minutes, spread sour cream mixture on top and place back in oven. Turn oven temp to 450 and bake for 7 minutes.
