Fresh Cherries - Any Good Recipes For?

I tried doing a search & didn't find any threads specific to fresh cherries.

I just picked 2 pints this morning. One of Rainier, one of Black Beauties.

This is the first year the local farm I go to to pick berries, peaches & apples has offered them. They look like jewels sitting on my counter.

I'd love to use them in a dessert with tonight's dinner. Any suggestions?

If I had fresh cherries, I'd make a clafoutis like this recipe. I like more of a custard consistency than cakelike.

I just printed out the following recipe from Anne Burrell (Food Network), yesterday. I liked the sound of it because of the lemon. She prepared this dessert along with homemade gnocchi with prosciutto, peas and chanterelles. I haven't made either one yet but plan to. I don't know how to do links so I just copied and pasted:

Cherry Clafoutis

Prep Time: 15
Cook Time: 40 min
Level: Easy
Serves: 6

1/2 stick butter, melted, plus more for baking dish
1/2 cup all-purpose flour, plus more for baking dish
1 pound fresh cherries, pitted and cut in 1/2 or 1 box frozen cherries
1/2 cup sliced almonds, toasted
1/2 cup sugar
Pinch salt
4 eggs
1 cup milk
1 teaspoon vanilla extract
1 lemon, zested
Powdered sugar
Ice cream or whipped cream, for garnish

Directions
Preheat oven to 325 degrees F.

Generously butter and flour a 7 by 5-inch baking dish or 6 individual, wide, flat gratin dishes.

Add the cherries, in an even layer, to the prepared baking dish.

In the bowl of a food processor, add the almonds, sugar, flour and salt and pulse until they are coarsely chopped. In a large bowl, using a whisk, combine the eggs, milk, vanilla and lemon zest until they are homogeneous. Add in the melted butter and the flour mixture and whisk until smooth. Pour over the cherries.

Bake in the preheated oven for 35 to 40 minutes, or until the center is set and the top is golden brown.

Dust with powdered sugar and serve with ice cream or whipped cream or both!

Thought this might be a good time of year to resurrect this thread! :- ) I run my extra tomatoes through the food processor and then freeze them in 2-3 cup containers. No peeling, blanching or cooking. I really don't notice the peels when I dump it in a pot of chili - except that it tastes fresher than canned. As for recipes, I use one (modified) that I found online when I was looking for a way to use up ground turkey I found on sale. Turkey Pumpkin Chili Brown one pound ground turkey with one diced medium onion. Then add a can of beans (canelloni beans are my favorite), 2 cups diced tomatoes, 2 cups of pumpkin puree, 1 1/2 T chili powder, salt, and a bay leaf. I add pumpkin pie spice and chopped cilantro to taste. Then serve topped with shredded cheese and sour cream. The pumpkin doesn't really add much flavor on its own, but thickens the soup and gives you extra veggies. (If you don't like pumpkin, I'd season with something different than pumpkin pie spice, though.) If you get the meat on sale and the veggies from your garden, this is a dirt cheap, hearty soup for fall or winter. Don't expect it to be spicy like regular chili - just a nice fall soup.

I am definitely copying and pasting many of these recipes and ideas! I love pasta and really get tired of eating meat all the time. I have a few, but am loving having more meatless pasta dishes to try! Broccoli Linguini 1 lb linguini 3 oz olive oil 4 cloves garlic, minced 1 lg bunch broccoli, finely chopped including 1-2" of stems 3/4 c chopped walnuts 1/2c pitted black olives, sliced 3 oz parmesan or romano cheese, grated Salt to taste Pepper, freshly ground Cook linguini according to package directions until "al dente", drain. Heat olive oil in large skillet and sauté garlic until golden. Add broccoli, walnuts and olives, cook and stir over medium heat until very hot. Season to taste with salt and pepper Pour over hot linguini, sprinkle parmesan over top and serve immediately (From Daytons Marketplace) This is something I came up with by trying to duplicate a pasta dish I used to love at TGI Fridays back in the 90's when their food was good! This is another summer favorite of mine. With tomato season on the horizon, thought I'd throw it out there. Potato Salad Puttanesca This salad is based on a robust pasta sauce—the famous Puttanesca or “harlot’s style” spaghetti said to be a specialty of Ischia, an island off the coast of Naples. There are many versions of puttanesca but garlic, tomatoes, capers and black olives (Gaeta is nearby) are standard ingredients. Anchovies are often added although tuna is sometimes substituted. During fresh tomato seas it’s nice to use fresh plum tomatoes (canned, peeled tomatoes can be substituted). The choice of olives also can affect the taste of the salad to a surprising degree. Any mild pitted olive will work. At worst, drain canned, pitted California olives well, give them a little bath in olive oil and add them. This salad goes very well with chicken, beef and lamb. 1 pound fresh Italian plum tomatoes 2-1/2 pounds small new potatoes, red, Yukon gold, or waxy white ½ cup olive oil 3 medium garlic cloves, peeled and minced ½ teaspoons dried oregano 2 teaspoons anchovy paste (or 5 anchovies, rinsed, patted dry and mashed) 1 small green bell pepper, cored ¾ teaspoon salt ¼ teaspoon ground black pepper 3 tablespoons drained capers ¼ cup minced parsley 1/4 cup cured pitted black olives (or quartered California black pitted olives), drained To peel tomatoes, dip them into boiling water for about 1 minute or put them on a broiler tray and broil until skin bursts. Cool, then peel. Coarsely chop the tomatoes, reserving all the seeds and juice. Strain the juice, discard seeds & set juice aside. Rinse the potatoes. Boil in 3 quarts water for about 20 to 25 minutes, until tender when pierced with a knife. (Or: steam for about 25 minutes. Or: microwave in a 3-quart casserole with 1/3 cup water on high power for 12 to 15 minutes, stirring once. Let stand 5 minutes.) Rinse, cool and peel while lukewarm, then cut potatoes into eighths. Transfer potato pieces to a large mixing bowl and set aside. Heat 3 tablespoons of the olive oil in a skillet or saucepan. Stir in garlic and oregano and cook until fragrant over low heat, about 2 minutes. Stir in the chopped tomatoes and their juice. Simmer until most of the liquid evaporates, about 20 minutes. Stir in anchovy paste while still warm. Set aside. Cut green pepper lengthwise into 1/8-inch wide julienne strips, then crosswise into ½-inch long pieces; add to tomato sauce. Then stir remaining oil, salt, pepper, capers and parsley into the sauce. It should taste slightly salty. To assemble, stir sauce and thoroughly toss with potatoes. Sprinkle olives on top. Let stand 30 minutes before serving; adjust seasoning if necessary. Serve at room temperature.

Cooks Illustrated did its normal iterative testing review of ingredients and recommends the Trader Joes Morello cherries that Toby mentions. They found that the trouble with many recipes was that the cherry flavor was lacking because the fruit was overcooked. Cooked once before canning, then a second time with a long interval in the oven, were the culprits. Its recipe involves separately baking a type of sweetened flour-biscuit concoction made with buttermilk as the first step. Another step is to drain the cherries from the liquid and reduce the liquid with wine and afterwards add a small bit of almond extract. Then it all gets assembled in a pan for a 10 minutes warm up, with the cherries and reduced liquid on the bottom and the biscuits on top. I haven't tried it but it sounds not too complicated with a good result.

Yes, I'd make Jo's torte, I made it last year with sweet cherries and a black forest sauce, and it was wonderful. Elery and I picked cherries this weekend too, 30 pounds of 'em...

Bad News - Unexpected invitation to neighbor's for a small gathering yesterday meant I didn't have time to prepare a dessert last night.

Good News - More time to gather cherry recipes.

Major Concern - That DH & I will eat so many out-of-hand there won't be enough left for a recipe.

Thanks for the great suggestions above. And Annie, I can't believe you picked 30 lbs! I know we'll try to get back for more. I understand the season is short.

amck, if I picked only two pints, I would have eaten that many on the way home! Gotta pick 'em by the pound. (grin)

Actually, elery's Dad is diabetic and so is his BIL, so I make sugarless black cherry jam and his family loves it, so he actually drags me out to the orchard to pick during cherry season!

Cherry Garcia ice cream! I have posted he recipe fom my Ben & Jerry's book. It's delish!

I can post it again, but not until tomorrow. My home computer has a virus and I have a fella coming out tomorrow to clean it up and get rid of it.

Get out two bowls, one big one and one smaller one. Fill the big one with washed sweet cherries. Fill the smaller one with the pits that you spit out after you have eaten all the sweet cherries!

Anyway, here you go, Annie!

Cherry Garcia Ice Cream
Source: Ben & Jerry's Ice Cream & Dessert Book.

1/4 c shaved plain chocolate (recommended Hershey's Special Dark candy bars)
1/4 c fresh Bing Cherries, halved & pitted
2 large eggs
3/4 c sugar
2 c heavy cream
1 c milk

Place shaved chocolate flakes and cherries in separate bowls. Cover and refrigerate.

Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes. Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour in the cream and milk and whisk to blend.

Transfer the mixture to an ice cream maker and freeze following the manufacturer's directions.

After the ice cream stiffens (about 2 minutes before it is done), add the chocolate and the cherries, continue freezing until ice cream is ready.

Makes grateful 1 quart.

Has anyone frozen these big fat black cherries to eat in February when we would kill for this taste? I'm thinking, just wash and freeze (minus stem, of course). What do you think? Would this work?

beachlily, I froze 30 pounds. Some I'll use for jam later and some we'll just eat, some will be cobbler or jojoco's summer cobbler.

I pit them first, though, because they get kind of soft and it's a lot harder to get the pit out after they are thawed.

Dh and I have found Rainers are terrific dipped in dark chocolate.

Can't imagine actually cooking with them...we eat fresh all we can get our grubby hands on. LOL! I'd love to live close to where these are grown in order to pick 'em by the pound.
