A few years ago I got this recipe from CF, but I'm sorry to say, I didn't print out who posted it. But in case you're looking for a delicious zucchini recipe (this time of year, who isn't!) this one is wonderful.
Calabacitas Con Crema
1 & 1/2 #s zucchini
2 med. tomatoes (3/4 #)
6 peppercorns
4 sprigs cilantro
2 sprigs fresh mint
1/2" stick cinnamon
4 whole cloves
2 whole serranos
1/2 cup thin cream
1/2 tsp. salt
Clean, trim and dice squash; skin, seed and chop tomatoes. Put in saucepan with other ingredients. Cover tightly and cook over low flame for about 30 minutes, stirring and scraping occasionally so it doesn't stick. Add water if getting too dry.
The zucchini should be very soft and the cream completely absorbed. Discard the chilies; the dish will be nicely flavored, NOT picante.
