Lets all share our tips, after all its grill time, eh?

I'd love someone posting a real tried and true S. Carolina mustard sauce...my replication is not quite there.

Texas Style Barbeque Sauce

a. 1/8 cup butter (I use a little less of both)

b. 1/8 cup peanut oil

c. Â½ cup minced onion (real fine)

d. 4 cloves garlic, minced real fine

e. 1 cup chicken stock

f. 1 Â½ cup ketchup

g. Â½ tsp Tabasco

h. Â¼ cup molasses

i. Â¼ cup vinegar

j. Â¾ cup water

k. 1 Tbl lemon juice

l. 1-2 shakes liquid smoke

m. 2 Tbl Worcestershire

n. 3 Tbl brown sugar (I now only use 2 spoons.)

o. 1 bay leaf, break in two

p. 1 tsp paprika

q. 2 tsp dry mustard

r. 1/8 tsp thyme

s. Â½ tsp cayenne pepper (or chilpote or...)

t. 1 tsp K. salt

u. Â½ tsp ground black pepper

Melt butter with oil, sautÃ© onion till lightly caramelized, add garlic, add remaining stuff and bring to a rolling boil for ten minutes, stirring all the while.

Reduce heat and simmer for consistency. (+/- one hour)

Cool to warm, jar up and put into fridge. We use empty ketchup squeeze bottles for this one. That is why the onion is minced, so it doesnÂt plug the spout. Oh, pick out the two bay leaf pieces first.

If you want it thicker, for better cling I use masa (corn flour) or cornstarch, not flour.

A couple of tsp of instant coffee takes the red away and gives a real mahogany sheen to the sauce, this stuff is way better than any bottled sauce I've found.

These are a hot marinade method wing, compliments of my brother. A hit with anyone I've served them to.

I buy the whole wing, cut the tips off for soup, and go from there. Less items to flip, easier to handle.

I nick the skin between the two segments. that allows the skin to both drain and shrink to the meat, less flabby.

I brine the wings as I've proven to myself time over time that brined poultry flares up less on a grill. Simple 10 T K salt, 8 T sugar to 4 liters of water. 20 minutes, rinse well, drain well and lay out on toweling to surface dry.

Lay them out on a medium hot grill and grill, turning as needed until 3/4 way done.

In a large bowl place a chunk of butter and throw partially done wings into same. Add hot sauce of your choice, lots, and toss. Let sit. Toss, let sit. Add hot sauce if you have none left in the bottom of the bowl, toss.

Meanwhile turn grill to high and close it up and let it "self clean" Leave it in high, you want it hot.

The more often you toss, the better. The ideal is to have the wings soak up the maximum amount of hot sauce. leaving only a drib in the bowl.

After they have marinated long enough (generally the time it takes to consume a bottle of liquid vitamins), flip them onto the grill and separate so you have a single layer. This part is steamy and smokey, its OK tho.

Flip each wing to dry and mark the other side, plate and serve with your choice of sides, sauces, etc.

These wings are bad to the bone, don't do the last hot grill part if you are using a sugar involved sauce...you will burn the exterior.

I've never been the griller in the family - that is a job done by DH. However I decided I wanted a grill/smoker that would work well for long, low, slow cooking of ribs and pulled pork - something he does not make on the Weber charcoal grill. So someone I know has a Big Green Egg and we had pizza he made on it at their house and it was pretty neat. Then we saw someone demonstrating it at a Home and Garden show and even DH was intrigued. So I got one about a week ago - DH agreed he would use it as long as he didn't have to get rid of the Weber Performer. We have made a bunch of different things over the past week but we had the most fantastic ribs this past weekend. We had a few friends over and got rave reviews on the ribs. I was astonished as I informed them they would be guinea pigs for our little rib fest. Since we are newbies with this grill I followed this video on YouTube - but used my own rub. As I was reading up on the BGEs I noticed it has a cult like following. Not sure why that is exactly but I am now part of the cult.....

There are fire codes that will need to be satisfied to do this safely. Even cabinets under roof in an exterior situation need to be built of weather resistant materials. That generally means stainless, or marine grade products. Ventilation needs are more extreme than in a house because there's a LOT more smoke that doesn't drift away in the open breeze when captured by a roof. That translates to more expensive. It can be done of course, but you're basically doing a complete second kitchen in more expensive materials. I'm working on a 10Kft2 house right now that has put their outdoor kitchen on the back burner because of the added expense. It was 20K, just to do something basic in materials that would last the weather. Yeah, that included a sink and a fridge, but you might subtract 6K from that 20 for that. Plus subtract a heck of a lot of convenience. If you're going to create an outdoor kitchen, it needs to have all of the parts that make it work well. Otherwise, just do a plain screened porch with the grill outside the porch and traipse in and out of the kitchen to cook there. It's still what millions do every summer! 2000 CFM of smoke mitigation! At least there's no need for makeup air outside. :) But, it's not even made from 304 steel. And the steel is thin. It only weights 107 pounds. And the motors are Chinese. As is everything. It might get you through a few years, but it won't last you like you'd really need it to last if you're going to be spending that much money. Here is a link that might be useful: Cheap 54

I don't know about wind, but I know we've had members who have used The Big Green Egg in all temperatures (even below zero in snow). Perhaps that style would work for you?

We're pretty average about smoking. B-. Sometimes A+. I took it over from DH about ten yrs ago. I actually enjoy the tending and wood collection. Using apple and plum cuttings from the old trees. We have also had mixed quality in our meat/butcher suppliers. We were talking last night that we need to fix that. 15yrs ago we had a great country butcher and a goat farm nearby with incredible cheese and an egg and chicken supplier. It is a struggle getting good results with inconsistent quality. Most of those are gone without family carrying on the farming. But others are showing up. I do brine, then braise, uncover, then cover and rest to the far less hot side of the smoker to rest. We often do a mixed grill/smoke with pork tips, ribs, and chickens. Then veg, corn, smoked tomatoes and tomatillos. It is a juggling act but fun. I agree that chicken does not need a long rest. And ribs will turn to mush. Fall off the bone is one thing but i do like some texture. Always room for improvement so i'll keep that method in mind. Our 4th of July party is an outdoor table, 4x16' at counter height. Takes the pressure off the 'feed'. Thing come off the grill in spurts with lots of sides, salads, desserts. Timing things for a sit-down is not necessary.

This Reminds me of many of the homes in the neighborhood I grew up in. (I'm also mid century;) I love it too, but not so much there. It is a prize, If you have a good usable alternative space for it, I would remove carefully and re-locate. On the other hand, finding an unmolested mid-century house is a score, and I think I would at least give it a chance there, use it several times and see if it smells/smokes up the house and is convenient. Otherwise, I like the idea to move the TV there as I don't like them over fireplaces either. The aquarium idea is also a good one, as is the wet bar...
