I had this happen to me I bought a $2.50 Sunnyside farms ultra pasteurized heavy whipping cream and tried hand whipping it with a whisk and even my strong husband tried to help me whip it. We were at it for an hour and it just barely thickened. I did everything right:ice bath,gradual sugar and fast whipping. I gave up, and threw it in the fridge hoping I could salvage it. Next day, the top strangely grew thicker but bottom half was all liquid. I tried this time to use my electric hand mixer and mixed 1 tbsp of cornstarch to 1tbsp of hot water to dissolve and poured it in my whipping cream and started whipping on low then high speed and wow it worked and reached stiff peaks in about 1-3min !

I have been making this one taught to me by a friendm but I use a ice cream maker. To me its more like ice milk. Simple and good 1 can 14oz condensed milk 1/2 gal (maybe a touch more) whole milk 1/4 cup to 1/2cup sugar-depending on your taste 1 1/2 tbs van. extract Hope this helps

That’s a delicious combination! Buy freeze dried strawberry powder from a local grocery store, it works out a lot more expensive on Amazon. With all those ingredients it will be hard to whip the cream and get the right consistency, it might be worth buying a box of cream chargers

Stabilize the whipped cream - 1/2 t unflavored gelatin powder 2 T cold water 1 C whipping cream 2 T powdered sugar Sprinkle gelatin over cold water in small bowl to soften. Scald 2 T of the cream in tiny pan on stove; pour over gelatin, stirring till dissolved. Refrigerate until consistency of unbeaten egg white. (This takes about 10-15 minutes.) Then, with a whisk, beat until smooth. In a stand mixer with a whisk attachment, or with a hand beater, whip remaining cream and sugar just until soft peaks form; whip in the smoothed gelatin mixture, stopping to scrape the bowl twice. Whip until stiff peaks start to form, but be careful not to over beat. 10-20 seconds more. Fills and frosts top of 2 8" or 9" cake layers; or frosts 10" angel cake or sponge cake. Tops one standard 9" pie with some left over to enjoy from a spoon. Stands up well, even in warm weather. Fold in the strawberry freeze dried - about 1 T. Taste and add more. Place fresh strawberries around the edge.
