I sure think you will need lots more than cheese and crackers...
I would suggest a veggie tray and perhaps hot dogs to grill over the bon fire... with some chips and maybe a dip and a sheet cake with her name on it.
For breakfast how about a platter of fruit and those muffins....and something to drink...tea, coffee, milk...whatever they drink.
Sounds like a fun time!!

I would ask your daughter if they would like food they can cook over the fire or all ready prepared snacks made by you (mom) if its you try for breakfast paula deans breakfast cassarole / fesh fruit salade coffee and juice
evening options cold sandwiches veggie sticks w/dip chips , fritos , etc and something sweet to finish the evening drinks water,ice tea ,lemonaid you also can have a recipe i was given for a great sweet snack mix everyone loves it has an awful name ( puppy chow ) but people ask me to make it for special treats teens eat like crazy so what ever you get for them make sure you have enough this menue can be made really in expensive buy making home made egg and chicken and tuna salades not cold cuts i hope they enjoy there night and that you get some rest

I think the suggestion already given are great ones. I have an almost graduate myself and the only thing I'd offer is extra parents...because I know my kid and his classmates....

I also think they're going to want more than cheese and crackers, maybe nachos? Or pizza? Tortilla chips and salsa are always popular here too. Will the food for brunch be served outside, like camping food, or will it be inside?

If outside, then hard boiled eggs, muffins, fruit and drinks would be good, if inside or close to the house, then you could get more elaborate and do a breakfast casserole with muffins and a fruit salad.

My girls and their friends have always loved the "puppy chow" too, and if they're outside the mess from the powdered sugar wouldn't be a problem either!

My kids liked something they called "Qualudes" because they were habit forming and mellowed you out...LOL!
I forget the exact recipe, but the base was cocoa puffs....and they were hard to leave alone!

oh my LOL! I have a hard time imagining anything with as much sugar as cocoa puffs mellowing anyone out - let alone inducing a Quaalude experience LOLOLOLOL!

My gang is currently loving a popcorn based mix.... Here is the basic recipe that I usually add small pretzels to.... This does not make a heavy caramel chocolate coating, more of a light drizzle that lets the popcorn flavor come through.

Chocolate Caramel Popcorn
Ingredients
- 14 ounces caramels
- 3 tablespoons butter or margarine
- 2 tablespoons water
- 12 cups air popped popcorn - 2 cups unpopped
- 1 cup peanuts or other nut of choice
- 4 squares finely chopped semi-sweet chocolate or 1 cup chocolate chips, melted
Directions
Preheat oven to 300°.

Microwave carmels, butter and water in a microwave safe bowl on high for 2-3 minutes or until carmels are completely melted. Stir after each minute of heating.

Combine popcorn and peanuts in a large bowl.

Drizzle the caramel mixture over the popcorn and peanuts. Sprinkle with salt. Mix to coat.

Spread popcorn out on a greased baking sheet. Bake for 20 minutes, stirring after 10 minutes.

Melt 1 cup of chocolate chips, spread over baked popcorn mixture and stir to combine. Spread popcorn out on waxed paper to cool.

You may need to break some of the pieces into smaller clusters. Store in a covered container at room temperature for up to one week.

If you are already planning a bonfire, I would suggest you do some make-it-yourself foods. Hopefully, these young people are old enough to use "green sticks" safely. You can do hot dogs, s'mores, banana boats, or other campfire foods. You might meed more than one bon fire.

Campfire Banana Boat Recipe
Remember this childhood treat? HereÂs how to make them:

Peel back one strip of the banana peel (keep the peel attached on the other end).
Slice the exposed banana in half lengthwise, but do not slice through to the peel on the other side.
Fill the split banana with mini-marshmallows and Smarties (or chocolate chips or chocolate bar pieces).
Replace the peeled back banana peel and wrap the whole banana in foil.
Place on the grill of a campfire or on hot coals.
Once the chocolate and marshmallows are melted (youÂll have to keep checkingÂdonÂt overcook), remove from heat, grab a spoon and eat the hot gooey goodness between the peel.

I too think you might want to offer something more substantial as a late-night snack. For one thing, a lot of the kids will probably have been too keyed up to do justice to dinner, for another, they will probably be up most of the night.

Your husband's idea is a good one in that with a cheese & cracker tray, the kids can munch as they please...but maybe make it a bit more substantial with the addition of some cold cuts, rolls & a condiment selection? Feeding twenty teenagers can be expensive, so a container of tuna or egg salad could round things out a bit.

Lord knows when and how the kids will wake up...early, late, all in a bunch or by dribs and drabs? I think your husband has the right general idea, again. Grab 'n' Eat stuff can work no matter how they wake. Muffins, bagels, doughnuts. Some butter, jam, cream cheese & fruit.

One suggestion on the non-menu side, is to have somebody responsible for cleaning up the leftovers before everyone drops off to sleep. Dunno what the varmint make up is on your brother-in-law's land, but one hungry skunk could give them all a graduation to remember. :P

Wow. Not to be critical, but have you looked at how teenagers eat lately? I don't see mine gathering around the crudite platter and debating triscuit vs wheat thins for their sliced vermont cheddar and mortadella. Breakfast casserole and coffee? Come on!! Burgers, brats, hotdogs, chips, nachos, pizzas, and that's for breakfast!! Sodas, heavy on the diet, skip the fruit punch, maybe have some lemonade. Maybe ask your daughter what she and her friends like to eat and take it from there!!

I've never had boys overnight, but both of my girls and their friends liked the breakfast casserole and all of them drank coffee. They all wanted sugar and flavored syrups and whipped cream with it, but they all drank coffee. It's the era of the latte, doncha know...

Homemade Hot Pockets would work. You could wrap them in foil and they can heat over the coals when ready to eat. My son loves these and you can make veggie ones with cheese or meat and cheese ones.

I just make a basic handsized calzone cook in the oven and then the kids heat up when they want it.

Campfire I can't help but think of smore's.

Wraps would be good too. Lunchmeat, cheese and veggies in a tortilla wrap. They can grab and eat when they want.

A big bowl of fruit. My son is 22 now and still loves fruit.

For breakfast a french toast casserole or sausage, egg and cheese sandwhiches would be good.

Daughter checked with her friends and this is what they came up with.

LATE NIGHT MENU

- hot dog roasted over bonfire
- chili in slow cooker for chili dogs
- cheese, crackers and pepperettes tray
- chips
- macaroni salad
- veggie platter with dip

BREAKFAST MENU

- mini frittatas (Giada's recipe, made them before..very good)
- breakfast sausages cooked day before, just reheat
- hash browns cooked day before, just reheat
- fruit tray with dip
- banana bread or croissants with jam
- cinnamon rolls
- juice, water and coffee

The only thing I'd have to cook in the morning would be the frittatas. They only take about 8 minutes in the oven and makes 48 in one batch. I bought 2 mini muffin pans just for this recipe last year.

Oddly enough, nobody likes s'mores... too sweet!

OK, that looks more like a teenager's menu than cheese and crackers! (grin)

I don't think it's odd to not like s'mores. I don't like them either. Now, I like graham crackers with Nutella, and I like chocolate bars and I like toasted marshmallows, but I like them all separately, not squished together. Yeah, I know.....

A pepperette is a thin smoked/cured sausage. Some are dried.
