Refreeze a fresh pizza?

I bought a pepperoni pizza as part of a library fund raiser. It's a bake-at-home pizza -- never been baked. I couldn't get there on time to pick it up so they froze it for me. I thawed it to bake tonight but when I opened the box I realized how enormous the thing is. Can I refreeze half of it or not?

I would cook the entire thing and freeze the cooked slices.
Won't be the best, but I would eat it.

I would refreeze it right now....in fact I have done just that thing....bought a "charity" pizza that was huge....defrosted and refroze half. The half I cooked right away was better than that I refroze......but better than trying to re heat a cooked one.....and keep the cheese from turning to leather.

Thanks, Laat2! I used a new agave fiber scrubby (great stuff--they break down before they can scratch anything), and used my finger nail on the glopped on cheese. Plenty of warm water while I was scrubbing, and then running water over the whole thing so it would be uniformly wet. I have it set aside to dry for a week. Then I used the scrubby carefully on the element, which is still a little stained, so I'll give it another go before I put it away. The wire holder came out of the oven spotless! Finally, I used the same agave scrubby, after I'd washed it out, on the disgusting mess in the oven. I was pleased to see that it all came up with water and a little elbow grease, and that I won't have to use the self-clean after all. The stone is still stained where the spills were. I won't know until I can put it back in the oven whether those really will burn off. But now it looks like a pizza stone. There were nasty crusts of piled up gunk.

Stacy, you gave me a grin! Yes, you're absolutely right about having a hand in that recipe. I remember that fire vividly! ;) You know, one of things I do after I've tried a recipe and like it is make extensive notes. If the recipe turns out well, I always want to be able to make it exactly the same way. Rewriting recipes is something I do to most of those I make repeatedly...I've noticed there are a lot of recipes out there that are poorly written, or don't give very good instruction. My thinking is...when my thinking goes...I want to be able to make it again. I usually make personal notes as well, like which pans I use to make the sauce, cook the pork, etc., just so I don't have to think about it. That's probably a little excessive to some, but it really helps me when I'm getting prepared. You both have no idea how happy it makes me you use my ''instructions''. I don't always feel like I have much to contribute to the Cooking Forum (too many good cooks here), so it's very nice to know the combination works for you. Pizza making wasn't easy for me initially, so figuring something like this out was a big deal at the time. Considering how easy it is now for me to make pizza, it was worth writing all the steps down!

I've been reading these and all of trailrunner's post. They are just great. All the hints were great. I bake bread out of boredom, I rarely use a recipe, for better or worse and like the wet doughs as well as quicker higher yeast doughs for pizza. Someday I'll get that "super peel" with the cloth belt thingy. I am forced to pre-cook my thin pizza crusts without one- My favorite bread is an olive bread that is made locally in the East Bay and sold now only at the local Berkeley farmer's market- you can go to their bakery, and they will sell stuff to you, but it's not a store front, no sales help, no hours- if they are there they'll sell it to you- they're also fresh pasta makers- 'Phoenix Pastificio'- if you're ever in the area. I've never tried to make that bread, it's almost Holy to me...( although I know he uses a biga and those black Kalamata olives). It has a thin almost black burnt crust, with large ciabatta holes to the crumb and flavor to die for.

I make this a lot for summer picnics, but I use a slightly different method. For the crust, I use Pepperidge Farm puffed pastry, rolled into a circle, then baked. When it's cool, i spread a thin layer of melted chocolate chips with a pastry brush. This seals the crust, ans keeps it from getting soggy. Then, I make cooked Jello vanilla pudding, with a tablespoon of cornstarch added (makes it thicker). Cool, then spread on top of the chocolate. Then, I add the fruits and glaze.

It was getting late, so I just baked the rest of it, wrapped it up and refrigerated it. I bet a lot of it gets tossed. Too bad. Maybe I freeze some of the slices. Thanks for the suggestions.

Something else to try: the "brown-n-serve" approach. Cook the half you want to freeze part way, then cool and freeze it. When you are ready to eat it, you just have to finish the cooking process. That seems to keep the cheese from becoming leather -- and the crust as well.

When we make pizzas, we make an extra that is only par-baked and then frozen for later -- for those nights we just don't want to cook. When we are ready to eat it, we heat the oven to 400 or 425, and then put in the frozen pizza for 6 - 8 minutes. Sometimes we add a bit of extra sauce to the top and/or extra cheese, but not necessary. If we have the pizza stone in the oven, it takes a longer pre-heat because it takes a while for the stone to come up to temp. But it does make for a better second-time-around crust.
