Potato salad in aluminum pan?

I am making potato salad for a graduation party tomorrow, I used 10 lbs. of potatoes and don't have a bowl(s) big enough so I went and got 2 very deep aluminum toss away pans. Now my question, can I store the salad in these over night? Will it taste metallic?

Hi Di!

I have no basis in fact for my opinion so will not be suprised if others disagree.

I would not store potato salad in a metallic pan overnight although I have no issue with serving it that way.

If it were me I would mix it and store in large plastic storage bags and refrigerate. Then turn into the foil pans when ready to serve.

As an aside, when I am making a large potato salad for the next day I under dress it and then add the rest of the dressing just before serving. Otherwise the potaoes seem to "suck up" all the dressing.

I make potato salad all the time, just not this much! It's for my best friend's DD party. I didn't even think about it when I bought the pans, but I am so glad I asked! The bags are a great idea, and I will use the aluminum for serving.

Re-dressing is something I may try. Does it make the salad mushy?! I mean like break up the pieces of potato? The reason I ask is because I have had potato salad that was just basically mashed potatoes with all the other stuff, and I didn't like it as well.

1. What kind of a pan are you cooking your potatoes in? An aluminum pan can cause potatoes to discolor. 2. What kind of a knife are you using to peel or cube potatoes? A carbon steel knife can cause the potatoes to change color, so use a stainless steel knife. 3. Do you peel your potatoes before or after cooking them? If peeling first, make sure you cover them with cold water to prevent oxidizing while you are peeling. You can add a little lemon juice to the soaking water to prevent oxidizing and discoloring. Drain, add fresh COLD water before cooking. I also think it pays to use the correct type of potato to begin with. Choose a waxy type potato (small red potatoes or Yukon gold) when the potato needs to be boiled; not starchy Idaho baking potatoes - as the name implies, are best used for baking. 4. How are you cooking your eggs? If you make them using a rolling boil method, that is using a temperature that is much too high and you'll end up with that gray/green layer between the yolks and whites, and the whites will be tough. How to hard-cook (NOT hard-boil) eggs: -Place room temperature eggs in saucepan large enough to hold them in a single layer. -Add cold water to cover eggs by 1 inch, add 1/2 t. salt to the water. -Heat over high heat JUST to boiling. -Remove from burner and cover pan. -Let eggs stand in the hot water, covered with the pan lid: *12 minutes for Medium eggs *15 minutes for Large eggs *18 minutes for Extra Large eggs -Cool completely under cold running water or in a bowl of ice water. Steam-cooking eggs is another method to help prevent this problem. 5. Work quickly to put the potato salad together. The longer it is exposed to oxygen, the more likely you are to get gray potatoes. The dressing is there to help coat the potatoes so they don't oxidize from exposure to air and turn gray. Instead of using less mayo, you can use part plain yogurt for a portion of the mayo, but you need enough dressing to lightly coat the mixture or you get exactly what you got..... -Grainlady

It is best to use waxy, or new potatoes. Fingerlings are ideal, but I can never find them in my grocery store, so next choice is Yukon Gold....or Red Bliss. I steam the potatoes (>just tendervalue and potato flavor). Peel as soon as cool enough to handle (I use a glove on one hand to keep from being burned). Sprinkle potato slices with French dressing while still quite warm. I don't think I make the potato salad the same twice....each time it is a bit different because I don't follow any specific measrements. Just add and taste as you go along. I use mayo (sometimes homemade, and sometimes Hellman's Real Mayo., sour cream, your choice of vinegar (wine, cider or white). Cut up olives, chopped parsley, strips of pimento, chopped celery, celery seed, chopped sweet onion. Don't forget to season with S&P. The salad can be customized to your, and your family's, likes and dislikes. Garnish with sliced boiled eggs, sliced olives, sprinkling of parsley and ground paprika. I like this one: ALICE'S HOT POTQATO SALAD (serves 10-12) 15 medium-sized red skinned potatoes, unpeeled 1 lb bacon, cut in small pieces 4 bunches green onions, chopped Salt & pepper to taste Celery salt & seed to taste 3/4 cup vinegar 1/4 cup sugar 3 eggs, well beaten Boil the potatoes in their skkins in a covered saucepan until tender but don't let them get mushy. Cool. Dice the potatoes (I prefer them sliced) with the skins on & place in a large bowl. Fry the bacon until crisp, reserving 3/4 cup of the drippings. To the potatoes, add the bacon, onions, salt, pepper, celery salt & seed. When ready to serve, combine the vinegar, sugar, 3/4 cup water & the eggs in a saucepan; bring to a boil. Heat the reserved bacon drippings in a separate pan. Pour both over the potateos & stir gently. Serve warm.~~Nutbread & Nostalgia NOTE: You can prepare the potatoes ahead & add the hot dressing just before serving.

My potato salad is very chunky.

Not sure what type of dressing you use but I find that the potatoes tend to absorb a lot of the dressing when it's kept overnight. To offset that, I toss the salad , just before serving, with a bit more dressing that I have thinned out with a bit of a vinegar/mayo mix.

In case you need another opinion, I agree with Sharon/Chase. I don't store acedic things in aluminum for any length of time
The potato salad will only be mushy if you over cooked your potatoes. I don't "under dress" my salad....I like the potatoes to absorb the dressing....but I always have extra dressing to add the next day.

Im always making this for friends and family parties and I always make it in aluminum trays unless its for my own home,,,never had a problem and I always make it a day ahead.

I've never stored food in those aluminum pans because I've never had refrigerator room to fit one in, LOL.

I store things as Chase suggested, in plastic bags, because they store more easily and take us so much less room.

I also make extra dressing to add to potato salad the next day, because my family likes lots of dressing.

Your potato salad looks delicious!
In the past when I have made potato salad for a large group I made it the day before and stored it in aluminum pans in the refrigerator and never thought a thing about it. It tasted fine.

A few years ago I started baking my potatoes for salad instead of boiling. The potato salad keeps better and doesn't get "watery." We like our potato salad chunky and the potatoes hold their shape better.

Chase, I enjoyed keeping up with your road trip also. I know you had alot of fun!

I have no real reason for this but I do not like to store things in aluminum pans especially anything with that might be acidic.
