What's Cooking Sunday?

I am not in the mood to cook, or eat, nothing sounds good. Main Man wants to make Steak Fingers and said he would cook. Usually, I have something on my mind that I've been looking forward to, but I guess I already at "it" this week.

I must say Shrimp Gumbo sounds good, but I'd have to go to the store and that isn't happening. Maybe tomorrow.

My Daughter and her Husband are dressing a deer today. So, I'm sure we will have some Venison next week.

Trying a new "easy" recipe I got from another board....it's in the oven now.

Hearty Hamburger Casserole by lisawinmaine

1 lb ground beef
1 9-ounce can of ready-to-serve chunky vegetable soup
1 6-ounce package instant stuffing mix
Â½ cup shredded cheddar cheese

1. Preheat oven to 350

2. Lightly coat a 2 quart casserole dish

3. Cook beef until lightly brown

4. Prepare stuffing according to box

5. Drain beef and combine beef with soup

6. Spoon half the stuffing into casserole dish, add beef and soup mixture then cheese and top with remaining stuffing

7. Bake uncovered for 30 to 35 minutes or until heated thoroughly

Two days, I've eaten IN! Bought food for my empty refrigerator cause we knew very cold weather and snow was coming.

Bought a lemon pepper rotisserie chicken from WalMart and it is just down right yummy! Yesterday, had whole wheat pita stuffed with lettuce and chicken.

Today, Lean Cuisine spaghetti with meat sauce and mushrooms.

Snack: peanut butter with mayo on pita wedges!

I'm full!

I'm late with this but thought I'd share anyway. I've been turned on to the low and slow method of cooking. So far I've done french dip sandwiches - bottom round roast and yesterday we did a fresh chicken. The concept is to cook for hours at low temperatures. So far I've use 170 degrees. The meat temperature never rises about 170. We did the bottom round for just a bit too long. I should have gotten it out when the temp read about 150 so it could rest for slicing. Yesterday's chicken on the other hand, so good. All I did was salt and pepper the inside/outside the night before and left in the fridge over night. In the morning I took it out about an hour before cooking. I cranked the oven to 500 to crispen it up then dropped it down to 170 for about 6 hours. I did baste it with olive oil, rosemary and thyme and stuck some lemons in the cavity. It was the juiciest chicken I've ever done and so flavorful. Broccoli and garlic mashed tatoes along with a wilted lettuce salad with hot bacon dressing. Leftovers for lunch today.

Have never cooked that much bacon at one time, but would definitely do on a rack over a sheet pan in oven. Maybe cook about 2/3 of the way to where you want it. Don't see why you couldn't put in zip bag and into fridge till you need it and finish... on rack(s) in oven.

This thread, which I didn't catch the first time around, made me think. In general, I cook to eat and feed my family. However, I do enjoy baking for special occasions. I think that if I didn't work outside the home I would cook more...and be more adventurous. But, I work and have a long commute so by the time I get home I have to make fast meals with little time for creativity or major prep work. So, we eat a lot of frozen veggies--as is out of the bag, pre-cooked meats warmed up, pasta, soup, occasionally waffles/pancakes/eggs, potatoes, etc. I.e., for the most part things that I can cook fast. One up side to this is that our meals haven't changed that much w/o a kitchen since we do have a MW, Toaster Oven, and hot plate to cook with! One very big downside to this, though, is that my children are not learning to cook like I did from my mom. Back on topic... After finding this site and reading about zones, I realized that one thing that I really wanted was a baking center. So when my kitchen was being designed I had it in the back of my head that whatever we ended up with had to have an area I could designate my "Baking Zone", preferably near the ovens--with room to roll out dough, spread out cookie sheets, and have cookie cutters spread out all at the same time! The other thing I got from this site was our window...having the window down to the counter (OK, not cooking-related, but a very important design element!) Our very first plan that our KD came up with had input from us...but a very naive/ignorant us! (Before GW...BGW!) Then....I found this site.....and the changes began. Actually, I posted that original plan and asked for help (and also asked my KD to start over w/no island) Many, many people here helped me come up with a plan over several weeks (months?). We finally came up with a plan that has changed little since then. Interestingly, when I took away the island "must have", my KD came up with a plan very similar to what we came up with here. The only 3 differences were (1) no mini peninsula, (2) a 36" pantry cabinet rather than a corner pantry, and (3) no separate Message Center cabinets. My KD wasn't completely happy w/our differences, but she, wisely I thought, told me to go home and mock up what I wanted to see how it would work (same advice I got here!) Well, the mock up was great! It proved that I did indeed want the mini peninsula (I liked it so much I left the mock up in place until demo and used it!) When I told her the results, she didn't argue, she accepted it telling me it's my kitchen, so ultimately it's up to me. So in the end, my design was/is based on what I wanted, not what the KD wanted. [If only someone else had measured my kitchen and she was given more authority, I think a lot of subsequent problems would have been avoided.] Our kitchen isn't done yet, but it's close...so I can't yet tell you how it is going to work for us...but we are so...

Okay -- cooking for one. I just put all this in one skillet: 1 sautee onions, a little red pepper, some steamed cubed butternut squash, some soaked white beans, salt and when all was kind of done, threw some raw baby kale & sliced grape tomatoes on top and put the lid on. Meanwhile -- 3 eggs with a teeny bit of milk, turmeric powder & pepper, mixed up and on low fire a la scrambled. When it was cooked I put it on top of the skillet stuff and then put it all in a bowl and ate alone. It was just everything I had in the refrigerator. I wish I could practice on some company dish -- a real dish. I found this very good but would I serve it to anybody? I feel very challenged about cooking for friends and I have done it often.

I have Seth all day today....mommy and daddy took Ricky to the snow, so it will be quick and easy tonight. Lettuce wraps from Costco and chow mein from Trader Joes!

Fridge leftovers.... Salt and Pepper wings, breaded pork chops (only 2 so I will cut up to have with dipping sauce) and left over rice that I may add some fried mushrooms and celery to.

Cubby_Rat that recipe sounds so easy and soooo good! Taste of Home magazine is one of my favorites as the recipes are on handy pull out cards. I received as Baking book for xmas, and there was a free subscription to this magazine so I am very pleased! (Though I may not get it being in Canada? but I will wait and see!)

Only 2:45pm here... so depending on how much the family snacks on this lazy chilly (-15) afternoon, supper menus tend to change.... DH just came out of the kitchen with a plate of pepperoni sticks, harvarti cheese and crackers!

That Hamburger Casserole looks like I could cook and eat it. I hate to eat in and eat my own cooking.
I think I even ruined the Shake n bake BBQ chicken made last night for today. I ran out and got a bottle of BBQ sauce just in case.

I'm eating at mikka's. I love snack nights--especially love Harvarti cheese.

Glenda, I thought of you today when I was looking the the newspaper coupons. They have peanut butter in little individual servings. (Maybe this isn't new, but I hadn't seen it before.)

We're having ribs slow-baked in the oven and acorn squash with a filling of brown sugar, butter, pecans and bourbon. Woohoo! I made date pudding for dessert with cool whip.

I have a box of fresh fruit that needs to be eaten. I'll be pushing that tonight.

Sausage/burger homemade pizzas. I always make 2, then DH wraps a bunch of leftovers for his lunches. Works good for everyone!! =)

That Hamburger Cassarole is very good...I used Pepper Steak Vegetable soup in it.Only thing I would do different is I would make the stuffing with a little less water than it calls for.It sucks up the broth from the soup and was a little gooier than I prefer.

DH and I ate out today and had a big dinner. We'll just eat left overs tonight. I cooked a roast Friday and still have a lot left over. I love it when I have left overs in the fridge. A friend of mine's husband won't eat left overs. I think I'd turn him into a "left over". lol

Ever since I got pregnant I have not had the urge to cook?? Normally it didn't bother me. First it was morning/daylong sickness. Now I feel better, but don't feel like cooking and nothing sounds that great to me?? Wouldn't be able to even name a restaurant I'd like to go to. Did this happen to anyone else?

Anyway, DH had late lunch of soup and sandwiches at Panera today after church and I'm still full, so maybe just snacks here or a PB sandwich with a big glass of milk??

We are having Swedish meatballs, mashed potatoes and a vegetable. Got the meatballs cooking and they smell sooooo good.

Paula Deens' deep fried chicken (buttermilk, Louisiana hot sauce, dredged in flour and deep fried),ceasar salad and italian bread. Absolutely DH's favorite meal in all the world.

made turkey breast yesterday and then was sick so didn't get anything but dry toast...made stove top and green beans, and opened a can of cranberry sauce!

DH was in the hospital for 13 days and got out Friday, so a dear friend brought over roast with potatoes, carrots, gravy, black-eyed peas and peach cobbler and vanilla ice cream from The Black-eyed Pea. It was YUMMY!!!!

DH is cooking as i type.We're having popeyes fried chicken,(dh is frying it,not from the store) rice,stringbeans,gravy and cranberries.Dessert will probably be sherbert.

Patti, you should have come over... we had way too much!! I am just thankful DH loves taking leftovers for lunch the next day so he just puts it in a plastic container and it's gone!

Chubby_rat I have ground beef thawing for tomorrow's stuffing casserole and have a steak soup in the pantry so all my bases are covered!
Thanks for also giving the hint to use less water... I don't like things "soggy" so that will guarantee my success tomorrow night!

Love all the suggestions, sometimes I get so bored of cooking the same old thing!

This is really bad, about 4 pm went and got some fries and cheese toasted sandwich at nearby hospital cafeteria. I was planning to be home by 8pm tonight but had a patient with major problems so just got home a little bit ago. On the way out of the city I stopped by McDees and got small fry, coke and cheeseburger! Why did I do that?!

Chicken fajita leftovers from last night. With homemade guacamole, sour cream, salsa, and lettuce. Yum! DH said they were the best ever...I just used the Lawry's fajita seasoning.

I started feeling a little "sicky" and decided to open a can of Pregresso Southwestern Soup, crumbled some crackers on top. It hit my spot. It is a Weight Watcher recommendation.
