Technically, you could substitute any type of solid fat - melted (such as butter or coconut oil), or other liquid vegetable oil in a waffle recipe and get the same results with the possible difference of some contributing flavor - depending on how much is in the recipe.

Then, you get into whether it's a "good' choice. Personally, I wouldn't use grapeseed oil (period), since it's a polyunsaturated fat, but you may have a differing opinion on fats than I do. In other words, I think you are substituting one "bad" oil for another bad oil since both are polyunsaturated fats, but both WOULD work.

Once you've heated walnut oil you have destroyed the benefits - that's a problem with all oils that are predominately polyunsaturated fats. There is mention of walnut oil in the link I added above, and it should only be consumed raw for maximum benefits - avoid heating it.

I think nearly any oil will be an OK substitute, depending on flavor, including peanut oil if no one has peanut allergies or safflower oil. As grainlady mentioned, melted butter would work, I might even use melted lard since I rendered my own and it's almost flavorless.

I don't use much vegetable oil or canola oil, and olive oil does have a flavor, which I seldom notice in waffles since I top my waffles with maple syrup. (grin)

If I were more health conscious I'd use my homemade yogurt and fresh fruit, but I just don't like fruit, unless it's made into jam or pie (but I love vegetables, go figure).

grainlady, if you are still attending this thread; I am curious about your sources for your concern re poly-unsaturated oils. Perhaps, I just failed to get completely into some of your detailed, researched threads, but I don't recall a strong rejection of poly-unsaturated fats. I just checked and see that Harvard Public Health and the Heart Association are in favor and mainly seem concerned with trans fats.

To be honest, I actually question the hydrogenating concerns too and wonder if studies of trans fats may have been compromised in some way or ways. My unsupported guess to the cause of poor public health is overwhelmingly due to the massive increased consumption of sugars and living and working beside and on top of one or more 10 to 20 gallon containers of volatile or burning hydrocarbons (containing volatile lead compounds for 50 years). But since poly unsaturated oils have generally been considered better than others, I am surprised at your strong rejection.

Those are good questions, and I satisfied my interest in fats decades ago by doing a lot of research on the subject, then I quit using manmade fats and oils of all kinds. Especially those that were chemically processed vegetable oils. You should do your own research like I did to answer your own questions. My first suggestion is to follow the money.....

The WAPF Funding section says: "Although many of our members are farmers, the Foundation has no ties with the meat or dairy industry, nor with any organization promoting these industries. If you extract the facts from WAPF's protestations of no-support for this or that, you get: "many of our members are farmers... The Foundation promotes the production of food by independent farmers and artisans, and not by industry".

Profit may be money or money-equivalent. My impression is that WAPF seems to be some sort of cottage industry lobby group. Nothing wrong with that, but why not call a spade a spade?

That said, I agree there's a lot of misunderstanding about how vegetable oils should be used, with the result that too often such oils end up causing harm. It's a great pity, because - used correctly - they are very beneficial.
