Ha, I had the same dilemma this weekend, wanted to make "chicken divan" but didn't really know how. Googled some recipes and then realized it was going to be really tough as I didn't have chicken broth (not critical) OR white wine (pretty critical). I ended up improvising with a white sauce, onions, mushrooms and some leftover turkey gravy for a poultry taste. Lemon juice instead of wine. Added cheddar and parmesean for the cheese factor. It was good but the rice got mushy. BF liked it so next time I am going to try this recipe from my Cook's Illustrated "Cover & Bake" cookbook. P.S. Frankly I think some of their fussing is over the top and not necessary. Yes, slightly undercook the rice but I cut up the chicken and sauteed it until more or less done and it was OK. Also steamed the broccoli in the microwave. Chicken Divan Casserole from "Cooks Illustrated Cover & Bake" cookbook, America's Test Kitchen, Brookline MA, 2004. Topping: 1 cup slivered or whole blanched almonds (adjust grinding time depending on which you use, almonds should be pieces, not fine powder) 3 sliced white sandwich bread, torn into quarters 2 TBLSP melted butter, unsalted Process almonds in a food processor fitted with the steel blade until coarsely ground, 5-10 seconds. Add the bread and butter and process to a unformly coarse crumb, about six 1-second pulses. Set the this aside. Filling: Salt to taste 1 med. bunch broccoli (~ 1.5 lbs.), florets trimmed to 1 inch pieces, stalks peeled and chopped medium sized. 1 TBLSP olive oil 1 med. onion, minced 1 1/2 cups long grain white rice (I never use white rice) 3 1/2 cups water (or broth, IMHO) 4 TBLSP unsalted butter 1/4 cup all purpose flour 2 cups low sodium chicken broth 3/4 cup heavy cream (I almost always use half and half) 6 oz. sharp cheddar, grated (~ 2 cups) 1 oz. Parmesean cheese, grated (~1/2 cup) 1/8 tsp. cayenne pepper 2 lbs. boneless, skinless chicken breasts, trimmed of excess fat 1 lemon cut into wedges Note: splash of white wine, just IMHO. Steam or parboil broccoli for 1 minute. Season with salt. If parboiling, season the water with salt. Can also do in the microwave, make them just below done. In a large saucepan or dutch oven, add the oil and put on med. heat until oil is shimmering. Add the onion, broccoli stems, and 1/2 tsp. salt. (Frankly I'd add mushrooms and garlic too!). Cook until softened, about 7 minutes. Add the rice and cook stirring to coat the grains with oil, for about 1 min. Add the water and bring to a simmer. Cover, turn the heat to low, and cook until the water is absorbed and the rice is just tender. (16 min. for white rice, longer for brown). Meanwhile, melt the butter in a small saucepan over med. heat. Add the flour and cook, stirring constantly, until golden, about 1 min. Slowly whisk in the chicken broth and cream; bring to a simmer, whisking often. (Here's where I'd add a splash of white wine). Off the heat, whisk in the cheeses, and cayenne until smooth. Season with salt and pepper to taste. Cover and set aside until ready to use. Preheat overn to 400 degrees. Spread the cooked rice into a 9 x 13 inch baking dish or casserole, and arrange the broccoli florets in an even layer over the rice. Take the chicken cutlets and cut them in half widthwise (you want them very thin) and then cut these thin slices in half lengthwise, (you're making chicken "shingles"). Layer the chicken, slightly overlapping shingle-style across the broccoli, so that all the broccoli gets covered by chicken. Otherwise, according to these fussbudgets the exposed broccoli with get overdone/dried out. Pour about 2 cups of sauce over the chicken and sprinkle with the bread crumb topping. Bake until the chicken is cooked through and the edges are bubbling, 30-35 min. Cool for 10 minutes. Serve with lemon wedges, passing the remaining sauce separately. Note: I've never made this so I might just sear the chicken breasts in EVOO before shingling them just in case, since I can't seem to get chicken to cook well in my oven. But they are so thin, probably not really necessary. Overcooked chicken will get rubbery. Anyhow, I think they are on to something with this layering technique, since when I made it I just glopped everything together and smooshed it into a casserole and topped with parm. I did this mostly because I was very short on chicken, I didn't have near as much as that recipe above calls for, so I cut mine up into little chunks and added them to the rice. Oh, and I added spinach to the rice mixture too.

This is one from my blog that I've made twice (if I make something more than once, that means I REALLY liked it.) Chicken-and-Rice Bake 3 to 4 boneless chicken breasts halves, rinsed and patted dry 1 ½ cups chicken broth I used low-sodium ½ teaspoon seasoned salt dash ground black pepper 4 tablespoons butter ½ cup chopped celery 1 medium onion, chopped 4 tablespoons all-purpose flour 1 cup milk salt and pepper to taste 2 ½ cups cooked rice (I used brown rice, over 3 cups - I didn't measure) 1 cup fresh bread crumbs (I used whole-grain white bread) 2 tablespoons melted butter 1. Place the chicken breasts in a saucepan with the chicken broth, seasoned salt, and a dash of pepper. Bring to a boil; reduce heat to medium-low, cover, and simmer for 20 to 30 minutes, until cooked through. With a slotted spoon, remove the chicken breasts to a plate. Cover loosely with foil and let cool. 2. Heat oven to 350 degrees. 3. Strain the broth into a large cup or small bowl; set aside. In the same saucepan, melt the butter. Over medium-low heat, sauté the chopped celery and onion until tender. Stir in the flour until well blended. Gradually stir in the reserved chicken broth and milk. Cook the sauce, stirring constantly, until thickened and bubbly. Taste and add salt and pepper, as needed. 4. Chop the cooled chicken into bite-size pieces. Add the chicken to the sauce mixture along with the cooked rice. Spoon the chicken and rice mixture into a 2-quart casserole dish. 5. Toss bread crumbs with melted butter; sprinkle over the casserole. Bake for 30 to 40 minutes, or until hot and bubbly, and bread crumbs are lightly browned. I was checking out who had it online the other day and while you might not want 6 bottles of it.. smiles... Amazon has 6 bottles for $27.05. It's free shipping too. Most places sell it for between five and six or up to eight dollars, so that's a great price. They say they're 15 oz bottles. Maybe somebody else would want to go in on it with you?? I've always heard of it described as a mayo with more vinegar and also with a mustard taste. Sounds good. Smiles. My DW used it when she used to travel to the UK all the time for buisness. Surprised she didn't bring any back. I have a head of savoy cabbage so I'm going to make my easy 'stuffed' cabbage casserole that I described above. It makes it so easy and quick which is just what we want on a Saturday night. Steam the cabbage briefly, layer it with dirty rice, pour some tomato juice mixed with onion and garlic powder between layers and on top and bake for about 40 minutes. I'll see if I can manage to take a picture. I seem to be terrible at that. The camera is always in the other room and it's a kind of big house and by the time I'm done cooking I'm not walking very well. LOL.. We will see. Oh btw, I always make two dishes of this because Christy gets burnt out on "red" since I always have something made with red sauce around I make her a version with just some broth on it. I do stuffed peppers for her the same way. No red. I do love the red on it but prefer tomato juice since it's nice and light although I'll just water down tomato sauce or puree with chicken stock/broth, if I don't have any handy.

We are all triangles, lol. Such an interesting observation about the internet and forums. I know eyes probably roll at most of my posts, but someone somewhere might use my non-recipe jumble way of cooking or use a hint since we cut out most sugars and salts a long time ago. Mentioning pharmacists Barb...i've done the same. I wandered into a pharmacist in the city....seems to be one on every NYC block...two young girls behind the counter, young meaning younger, probably early thirties. This was a couple years ago, but i decided to ask about a possible urinary tract infection and we ended up chatting for 20 minutes. They were so helpful and suggested a non-invasive over the counter thing to try first before seeing my primary care as i just had no time...they were a fantastic wealth of information. And made me promise to seek doctor help if it was not solved in a few days. Researching on our own is just good knowledge to have along with your primary care office. We really are responsible for our own basic needs at home and to eat as healthy as we can. It is difficult to start making changes to a dish that is so familiar but i feel pretty shitty after eating comfort food. DH made red-eye gravy, scratch biscuits, the day after a party. With leftovers after i made a de-salted roasted ham NewYears day...we ate tiny portions and it was a treat, then felt crappy all day. We just don't eat that way anymore. (it was delish going in!) Not had tuna casserole since my my mother made it when i was a kid. Loaded with wasted calories. Lots of ways to replace that with vegetables and still be creamy and filling. I've been making a no-mayo nicoise tuna salad for years. Even better, With your prep bowls...6 or 8 soup bowls near your chopping block...chop a half red onion, or white, a half red pepper, a couple ribs of celery, some green onion...pull some peas, limas, spinach, out of the freezer,,,,(i buy the bags over the rectangle cube boxes from the freezer section). Any good veg choices you like...) in the bags you can just take a handful, then wrap it back up with a rubber band. A veg in each bowl, the frozen as well and they start to thaw a bit. Some olives if you like them, capers if you have them. A half a chopped apple and some lemon zest with a 1/4 juice...grate a couple cups of cauliflower. Or chop. Even chopped mushrooms. Saute your onions and celery, grated carrot, garlic...whatever you want and place in the bottom of a casserole, add all other veg and layer with tuna and cooked rice pasta or regular egg noodles but use a 1/4 portion. Just replace all that pasta with 3/4 veg. Cauliflower is such a great pasta/rice replacement. We use non-fat greek yogurt mixed with cottage cheese, feta, or a slice of goat cheese...we like all of those and usually have them on hand. I use a bit of water but skim milk is a good choice for some moisture. And egg stirred in is good but not necessary. I always have citrus ice cubes frozen with some herbs. a couple of those on top...cover and bake...then cover off near the end of oven cooking to get a nice bubbly light brown top. Browning a bit adds flavor. Packed with lots of veggie you can eat a bit more. The rest of the fresh chopped veg and apple/lemon/herb, olives etc goes into a fresh tuna salad for the next day or two. Cucumber and avocado is super on that salad. You then have a crisper drawer of leftover veg not cut up for another few meals at the end of the week. Half a red pepper, half and onion, etc. My veggie lasagna and Shipwreck pie, both are 75% veg and keep winning cooking contests. Because they are baked casserole dishes they have all the elements of comfort food without the high starches and empty calories though very filling and comforting...and we don't feel shitty the next day.
