Corny Matzoh Balls

Yesterday, I was craving a big bowl of chicken soup. The kind I make is more of an un-thickened stew, really, with whole thighs & legs, big chunks of carrots, celery, onions, potatoes and cabbage. My stock was nicely rich and straining, when I discovered I hadn't enough meal to make the Matzoh balls. Horrors! None of the local stores carry it, I have to drive 20 minutes or so.

Well, when needs must, we improvise. So, I measured out my meal, and figured I was missing about 1/3...so I replaced that with corn meal.

VERY TASTY!! I just followed my regular matzoh ball recipe which is essentially the one on the box of meal except that I use schmaltz instead of oil, add minced parsley and make them a bit smaller than the recipe calls for.

They had a nice flavor of corn, but were much lighter than other corn dumplings I've tried.
