Poblano Chilis

I pulled some poblanos out of the garden today, I want to stuff them. I've done it before, but I have maybe a stupid question. Why is it always noted in recipes to char the skin and remove it? I do it but am wondering why - is the skin too tough to eat or is it bitter tasting?? Just wondering if I can skip this.
