Understanding variable speed (Lennox specialists look please)

The Air: XC13, 3 ton

The Furnace: G60V, upstairs is a 36B (up to 3.5 ton), downstairs is a 60C (up to 5 tons).

The Coil: XC34

The Stat: Honeywell Pro 8000 (NOT IAQ).

I was given to understand, before spending the extra money on a variable speed blower, that it works to remove humidity and as a result "runs nearly all the time".

This seems to be different from what's being observed. For example, if the inside temp is lower than the set point, even by one degree (such as in the morning, before the heat of the day sets in), the humidity may be several points above the set point (44 percent say, vs set of 40). Nothing happens at this point. It is only when the temp reaches higher than set point that the system kicks in.

So how is this different from just a plain ol' furnace? Please educate me so I can get over my buyers remorse of nearly $2K that I am afraid I have overspent (and could have put into higher efficiency).
