Extra deep sink: problems with garburator?

I have a Franke undermount 9"-deep sink. A plumber from the store at which I purchased it came by this week to install a faucet. At the same time, my GC was here. He had previously installed a faulty faucet (long story) which needed replacing.

Anyway, a discussion ensued between the two of them about the viability of the garburator with such a deep sink. The plumber said I would have problems draining it and that the pea trap ought to be removed because it was too low and would make it even more difficult for the water to evacuate from the disposal system. My GC was reluctant to remove the pea trap but deferred to the plumber.

Sure enough, I cannot completely drain the garburator. It is always half full (to be optimistic!)with water.

Has anyone else experienced this with a deep sink? Should the pea trap go back? Any solutions?
