Bread maker....

I picked up a Regal Kitchen Pro bread maker ( K6745S ) today for a whopping $4.50... It's in reasonably good shape, nothing that a good scrubbing didn't take care of. and it has all its parts.... Except the manual, no instructions whatsoever.

I spent half the afternoon on line searching for the manual without any luck... ( Regal no longer makes bread makers, no references whatsoever on their site ).. Most search results to it were for other requests for the manual... I did find one on E-Bay, sorta, they're asking $20. but it isn't the same model number and they want another $15.95 for shipping... I did find some general info about the bread maker though... It tells of all the great sounding recipes the manual has for each of the different settings... Did you know you could make jam or marmalade in a bread maker? lol

If anyone here has a manual I'd be forever in your debt if you could sell me a copy.

I tried a basic white bread recipe ( baked in the oven ) and I have a few general questions... Is the bread maker supposed to kneed dough again after the first rise?. Are you supposed to take the paddle out after the second rise?

Rita, my Zojirushi does "knock the dough down" after the first rise, I shape it into loaves or rolls or whatever and let it rise again, but most people let that happen in the bread machine. You don't take the paddle out after the second rise in my machine, or in Dad's which is a smaller model, maybe a GE?

Thanks Annie, I don't know for sure but it seems to me that the second kneading lasted a lot longer than the first... I'm going to try some rye bread tomorrow and I'll time it...

Karen - Just yesterday I cracked my "Bread Machines for Dummies" in an effort to finally motivate to try my bread machine. Here's a paraphrased version of their recipe. Obviously not T&T but I'd expect it to be reliable. Dump in room temp ingredients in the following order: 1 cup water 2T olive oil 1t salt 4t sugar 3 cups flour 2.25t active dry yeast Select Dough or Manual setting. Once cycle is complete, shape into a ball on lightly floured surface. Place on greased cookie sheet and flatten to a 10" circle. Prick with a fork. Arrange toppings (suggestions are thinly sliced roasted pepper, sun-dried tomato, red onions, olives, green pepper, sesame seeds, sauteed onions with sugar and salt) and drizzle with olive oil. Sprinkle Italian seasoning, S&P to taste. Cover and let rise about 15 min. Bake in preheated 375 oven for 25 to 30 min. Good luck!

I would just mix it up according to directions and use it that way....If you don't add the water, I would think the dough would end up being way too stiff. Seems to me you have to account for that liquid in some way... You could just dump the powder in with the other dry ingredients and add the extra water when you add the water called for..Use the amount called for in the recipe.. I have a very good one I use for my rolls. Cut with a tuna can for HB rolls or form in rolls for hotdog rolls Soft Sandwich rolls I also use these for dinner rolls, just use a small glass or biscuit cutter Soft Sandwich Rolls (Taste of Home) TOTAL TIME: Prep: 10 min. + rising Bake: 10 min. YIELD: 1-1/2 dozen. 1-1/4 cups milk (70° to 80°) 1 egg, beaten 2 tablespoons butter, softened 1/4 cup sugar 3/4 teaspoon salt 3-3/4 cups bread flour 1-1/4 teaspoon active dry yeast 1 tablespoon butter, melted Directions In bread machine pan, place the first seven ingredients in order suggested by the manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). When cycle is completed, turn dough onto a lightly floured surface and punch down. Divide dough in half. Roll each portion to 3/4-in. thickness; cut with a 2-1/2-in. biscuit cutter. Place on lightly greased baking sheets. Brush tops with melted butter. Cover and let rise in a warm place until doubled, about 1 hour. Bake at 350° for 10-15 minutes or until lightly browned.

I have an older Breadman which worked flawlessly for years until it didn't. From what I could tell the gasket around the paddle had become worn and caused the paddle to rotate unevenly. I got a gently used pan off of Ebay which solved the problem. Hope that helps.

I have a Westbend and the bread is shaped like a "loaf" cuz it has a loaf pan not a "pail". My machine has a second kneading but can't remember if it's longer than the first. The paddles are removed after the bread is baked. The machine mixes, kneads, and bakes the bread. Somewhere along the way, while it's kneading, it will beep to let you know that now's the time to add raisins, etc.

Rita, Because I am anally organized, I have all my manuals.

Consequently I found the manual for my Regal Kitchen Pro bread maker. Give me some time to scan it then I will email the file to you--unless you have another suggestion.

If it's a huge manual I don't expect you to waste your time scanning everything but I would like the basics and a few recipes you enjoy... Anything you can send would be greatly appreciated...

If it would be easier for you maybe you could snail mail the manual, I could copy it then mail it back to you?

Rita, what a great find! I think you'll find that most bread machines are very similar... instructions and recipes are pretty universal. I think the only real difference would be for machines that have a different loaf capacity.

Mine also does a punch down after the second rise, but I don't think it lasts as long. When I baked in the machine, I did remove the paddle right before the second rise (after the punch down, it's up to you... doesn't matter once the kneading is finished)... I didn't like the shape the paddle left in the loaf. Now bake in the regular oven for many reasons so the paddle isn't an issue.

I still have a lot to learn about the bread maker... This machine has two kneading cycles with a short rest in between and a punch down...

I tried some rye bread and it came out dry and heavy but it wasn't the fault of the machine... When I've made the same recipe in the past I didn't add all the flour and it didn't dawn on me to add more water... lol. Actually I didn't know I could until I read Grainlady's response on another post...

A bread machine definitely makes bread making easier but there is a learning curve... Or should I say an un-learning curve... After trying to learn how to make bread the regular way it's really hard to turn everything over to a mere machine... Especially when you have no idea what you're doing... lol

With the two loaves I've tried so far ( neither was baked in the machine ) one was too wet and the other too dry but I now know I can add more flour or liquid ( thanks Grainlady! ) if needed without messing it up... Even though both loaves were higher than making them the old way they still don't rise in the oven... Maybe it's the recipes I used???

I was given a Regal Pro Breadmaker k6745s without the manual.Could someone please help me if you have one.I have searched the web over and nothing.Just people trying to find one just like me.I would be very thankful for any help you could give.Thank You,
