Cupcakes for the Classroom Cafe

I need to make cupcakes for the Classroom Cafe - as parents we come in order food and use fake money to buy a lunch so the kids can learn better math skills.

I have French Vanilla cake mix and cream cheese icing and I was thinking I could make vanilla rasberry cupcakes with chocolate cream cheese icing. Whaddaya think?

I know it's stupid but I want my cupcakes to be something the parents choose to buy. Any other suggestions?

I ran vanilla cinnamon cupcakes with mexican chocolate cream chz by my DH and he was all about the rasberry and dark chocolate.

If I wanted to make a sought after cup cake, I wouldn't use a mix.
How about carrot cake cupcakes with orange cream cheese frosting? Poppy seed cake with lemon frosting? Or a chocolate cake with a raspberry genashe frosting?
That ought to sell big!

Sands, I love the raspberry chocolate CC idea!
Go with it..But then again raspberry and chocolate is my thing!
use buttermilk in place of the water, and no one will guess it's a mix..

Michelle - those cupcakes are so cute! But I'm going to copy the ones someone(?) made and posted a while back with the dove hearts on them. Erin (my daughter) and I went to Hobby Lobby last weekend and bought chocolate sprinkles and special Valentine cupcake liners too. Just plain old simple chocolate cupcakes with pink icing, chocolate sprinkles and those Dove hearts outta make those kids buzz around in circles for a couple of hours!

I cannot believe I went on this long without taking the time to search online why this was happening! I'm so glad to see i'm not crazy and losing my touch! I also never had issues previously with liners peeling! Now, depending on how moist my recipe is (chocolate that was a syrup plus a ganache filling is the key star over here!!!) the liners peels off mid way between taking them off to being put in a tupperware. NO MORE tupperware for me neither, they are a disaster for my liners. After reading these post, i ran to my cupboard an examined all my liners. The cheap one from the dollar store never peel but are so thin that the edges fold in when you poor the batter so i am finishing those off for some morning blueberry muffins or anything that doesn't leave my house :) The other one, the reynolds foils ones, don't peel off in a matter like the paper ones do as they keep their shape but you can definitely see that they are loose when you pick them up (But at least they stay presentable!). The 3rd ones, my new favourites as they keep their colour and don't ever fold in, ARE WAXED inside!!!! urgggggg I had never ever noticed that after reading this post. PS: they are no longer my favourite :( I have some white restaurant type ones here that don't seem to be waxed inside. I am doing a trial and if this works i guess i will decorate the others by putting the cupcake in a coloured one after baking.... but this is so much nonsense! I wish this wasn't such an issue! Thank you everyone for posting this... it will save me hour of waisted work as i cannot send these out to customers like this!!!

For that age group, I'd make "brownie bites" in them with your favorite brownie recipe, pipe a little blob of cream cheese frosting on top and garnish with 1/4 of a maraschino cherry or a cherry from pie filling. If you want to do cheesecakes, kids like these because of the chocolate crust but they would probably like brownies better. TINY CHERRY CHEESECAKES 1 cup flour 1/3 cup sugar 1/4 cup baking cocoa 1/2 cup cold butter 2 Tbsp. cold water Filling: 2 packages (3 oz. each) cream cheese, softened 1/4 cup sugar 2 Tbsp. Milk 1 tsp. vanilla extract 1 egg 1 can (21 oz.) cherry pie filling In a small bowl, combine flour, sugar and cocoa: cut in butter until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide and shape into 24 balls. Place a ball in greased miniature muffin cups; press dough evenly onto the bottom and up the sides of each cup. In a mixing bowl, beat cram cheese and sugar until smooth. Beat in milk and vanilla. Add egg; beat on low just until combined. Spoon about 1 tablespoonful into each cup. Bake at 325 degrees for 15-18 minutes or until set. Cool on a wire rack for 30 minutes. Carefully remove from pans to cool completely. Top with pie filling. Store in the refrigerator. Makes 2 dozen.

Oh yeah, I vote for the chocolate/raspberry combo, I love it. Dark chocolate is especially yummy.

Mix or not, that flavor combination would get me!

Thanks, I was hoping you'd get me off the "stop at the store" hook. Thing is I *have* to play pantry roulette, we have baseball every night for the past 5 and next 5 days and concession crew chief duty [set up and open, clean-up and close] all this week, no time to even make dinner let alone cupcakes. These are gonna be midnight specials - but hopefully good ones :) I'd feel guilty if I just bought cupcakes [why I do not know!? but I would *sigh*]

gotta go strap on my condiment six-shooter and get bak to making lunches...

(mentally notes buttermilk trick for future reference ;-)

I love anything with raspberry and chocolate, so I would vote for that.

Last weekend, I tried the chocolate graham marshmallow cupcakes that were featured on Martha Stewart a few weeks ago. These were awesome! They are my new cupcake that I will make when I want to impress.

Sands OT..tell me how to get "a crew" for the concession stand..I have not had any success even getting more than 2 people help besides myself and Stella (League Presidents Wife)~they have NO children or grandchildren in the program!

OK, just finished the CC's I shaved the jam to avoid sinkage - feh might as well have been rock jam, nailed to the bottom. But on the positive side I poked holes in the cakes with stirrers and used another stirrer straw to drizzle razz syrup in the cupcake. I tested on broke it apart and it looked purdy!

I piped the icing on [after I infused it with Ghiradelli baking cocoa] and dropped cels of razz syrup and curls of chocolate on top.

I think I did good but now I gotta hit the hay...
