Baking the walnuts at 250º for 35 minutes did the trick, they broke open pretty easily after that. I dug around a bit on the rounded end, breaking up the connecting membrane and going deep into the nut, which really seemed to help a lot. Then I laid the edge of one of good, small knives (Woody can resharpen it for me, he lives to sharpen knives!) on the seam and gave it a few whacks with the palm of my hand and about 80% of the time, the nut broke cleanly. A few shattered, probably weakened from being baked, and a few broke off in weird directions, but all in all, I'm super-pleased.

Thanks for all the help and suggestions and info. And if you ever need to do this, it's not hard, once you find out what works. Woody also likes to dig the nut meat out, so he's going to be busy for a few evening, I think. I'm going to bake all my other walnuts, too, because they taste better than raw and then I'll have even more halves to pick from when it's time to make my little ship ornaments.
