Hi you Ice Cream Boy fans, I have had one of these for years. It's vintage is more like late 70's, early 80's. Finding your posts reminded me that I have one that's been in storage for a long time. One memorable ice cream was maple-walnut which would be really good with small bits of black walnuts as an alternative to English walnuts. Walnuts worked very well, not big pieces though. Another was a vanilla with small bits of chocolate, little bigger that shavings, but lots of them, yum! I'm going to have to retrieve mine (got to find a place for it; my house is very small) and get creative again. I am thinking of goat milk ice creams as my system doesn't like cow's milk, though cream is okay. I once had goat milk ice cream that tasted like the ice cream that I grew up with made by my grandparents when I was young with milk, extra saved cream and eggs from their farm and turned by almost everyone in the family for many, many get-togethers in their big two gallon ice cream. Great memories.

I've made this. No eggs or milk. Divine. I served it with the three ingredient ice recipe made with frozen raspberries. "Chocolate Sorbet Adapted from The Perfect Scoop This is not a sorbet for chocolate moderates. It's for people who like chocolate to be all they can taste when they bite into something. (At least until he sees the chocolate smudges on your face.) 2 1/4 cups (555 ml) water 1 cup (200 g) sugar 3/4 cup (75 g) unsweetened Dutch-process cocoa powder Pinch of salt 6 ounces (170 g) bittersweet or semisweet chocolate, finely chopped 1/2 teaspoon vanilla extract In a large saucepan (yes, you must use a large one or it will bubble over. Trust me.), whisk together 1 1/2 cups (375 ml) of the water with the sugar, cocoa powder, and salt. Bring to a boil, whisking frequently. Let it boil, continuing to whisk, for 45 seconds. Remove from the heat and stir in the chocolate until it's melted, then stir in the vanilla extract and the remaining 3/4 cup (180 ml) water. Transfer the mixture to a blender and blend for 15 seconds. Chill the mixture thoroughly, then freeze it in your ice cream maker according to the manufacturer's instructions. If the mixture has become too thick to pour into your machine, whisk it vigorously to thin it out." I have a Cuisinart dual bowl ice cream maker. Many folks think it's noisy but it doesn't bother me. What a great gift Rachellen. I'm pretty boring when it comes to ice cream. I almost always order "plain" chocolate. But I have made Both the Espresso-Brownie Chunk and the Brown Sugar Pecan and both were a big hit. Here is what you do to get swirls of caramel or chocolate in your ice cream. When the ice cream is ready, place some of it in a container, drizzle in the chocolate sauce, and swirl it just a bit. Use the tip of a knife. Don't mix. Add more ice cream and swirl again. Home Cookin Chapter: Recipes From Thibeault's Table Espresso-Brownie Chunk Ice Cream ================================ Fatlester - Gardenweb 1/2 pound brownies cut in 1/4 inch chunks 1 cup whole Espresso, French or vienna roast coffee beans 2 1/4 cups half and half cream 3/4 cup sugar 3 egg yolks 1 cup whipping cream . Wrap and firmly freeze the brownie chunks Put the coffee beans on a jell-roll pan and over them with a dish towel. Using a veal pounder or the bottom of a heavy sauce pan, press to crush the beans thoroughly. (Do not substitute ground coffee) Transfer the crushed coffee beans to a medium saucepan. Add the half and half cream and heat it to simmering. Cover and simmer 10 minutes , then set the pan aside, off heat, for 15 minutes longer. Strain the liquid through a fine sieve into another saucepan, pressing to remove all liquid from the coffee beans; discard the solids. Stir the sugar into the strained coffee liquid and heat it to simmering. Put the egg yolks in a heatproof bowl and slowly whisk in the coffee liquid (or put the egg yolks in a food processor fitted with the metal blade and process, pouring in the coffee liquid). Cool the mixture slightly by stirring in the whipping cream. Set the bowl over ice or refrigerate until the custard is thoroughly chilled. (Can cover and refrigerate overnight). Transfer the custard to the canister of an ice-cream machine. Follow manufacturer's directions and churn until the ice cream is half frozen. Add frozen brownie pieces and continue churning until frozen. Serve immediately, or transfer ice cream to an airtight freezer container, seal and keep frozen until serving time. (Can freeze for several hours). Still whisking, slowly pour in about 1 cup of the hot liquid. When the mixture is blended, slowly pour it into the liquid in the saucepan, whisking constantly. Cook over heat, stirring constantly until the mixture thickens slightly and coats the back of a spoon, about 8 minutes. Be sure not let the mixture boil at any time or will curdle. strain into a clean bowl and cool thoroughly. Stir in the nuts. Pour the mixture into the bowl of the machine and freeze. Makes 5 cups.

I'm mostly vegetarian. I don't much care for meat, don't like to digest it, and don't like the taste. When I do eat meat it is poultry or fish. I use bacon occasionally as a flavoring, more often pancetta or proscuitto. My "problem food" is evil cheese. I just love the stuff and can't get enough of it. Cheese has some kind of addictive chemical in it I read. I have to work really hard to limit my consumption of cheese. The kinds I like are full of saturated fat. I do mix the fatty kind with lower fat kinds to try and mitigate some of the damage. I have no heart or cholesterol problems, and have been in generally good health my whole life. I have fairly decent genes. But I think the main issue with eating for health is to eat a balanced diet. It does no good to eschew red meat and then eat tons of sugar and fatty junk foods, which is what I see some young "vegetarians" doing. And these sugary drinks also are terrible for your health. I would be much more concerned about someone eating lots of sugar and junk foods than occasional red meat or eggs. I think that is what does people in, a diet of very little fruit or vegetables, and high in the saturated fat, including bacon, sausage, etc. I don't see a problem with maybe two strips of bacon if you're eating it with whole grain waffles topped with fresh fruit and yogurt. But that's now how most people eat. They eat processed foods. Also, a huge culprit in our national heart disease epidemic is lack of exercise. We lead such sedentary lives that it's almost impossible to control one's weight just with diet. I would say it's not beef per se that is killing us, it's how we raise the beef, how we cook it, and how much of it we eat, and what else we eat (or don't eat) along with it. For most of time, red meat was an occasional treat, and sausage was used as a flavoring for potatoes or beans, and it was a struggle to get ENOUGH calories for folks, not what we're facing today. Most people ate some kind of grainy gruel every day, not the rich dishes that have survived in the cookbooks and literature. My dad's four main food groups are meat, fat, sugar and white carbs. He always goes shopping and lays in a supply of junk food when he comes to visit me. Also suggests that we go out to eat all the time. Once Christmas I cooked and ate like he likes just to keep the peace. I felt really bad after a week of it. Poor sleep, and generally sluggish with mild digestive upset all the time. Of course I guess one's body does kind of "adjust" over time. Anyway, dad had been plagued by digestive problems all his life, and has clogged arteries, yet for whatever reason, cannot change his eating pattern, even though it makes him suffer. He's kind of like an alcoholic. He thought he could get away with it when he was younger because he was an athlete and not overweight. He's still only a little bit overweight, but has terrible acid reflux along with colon and artery problems. Shy of genetic conditions, I would say my dad is fairly typical of what's out there. BF's co-workers are dropping like flies now that they are in their late 50's and sixties. They all smoke, drink and eat like my dad, and are overweight. I would say eating a lot of red meat is in most cases part of a general pattern of poor health habits. Folks here are probably not typical American eaters.
