Ice Cream freezer for Sorbets

What type of ice cream freezer do you have or would you recommend for making sorbets? If you know the approx. price, please include that in your post.

There's no reason you can't make sorbet (or frozen yogurt or sherbet) in any ice cream maker. I've made sorbet in my Cuisinart and in a hand crank freezer. I have this one (but I paid less than that for it.)

I have the same one Renee does. Several of us got a great deal on them last year when Kohl's had a bargain on them for something like $10 or $15 apiece. I bought 3 as gifts besides getting one for myself! It makes great ice cream as well as sorbet. In fact, I just made a mango sorbet in it Friday night:

Terri, here are a couple of my favorites from GB. This one was posted by Jain. > Lavender-Blueberry Ice Cream 1 cup blueberries, rinsed 3/4 cup sugar 2 tablespoons dried culinary lavender blossoms 1/2 teaspoon ground cinnamon 1/2 teaspoon vanilla 3 cups half-and-half Preparation 1. In a 1- to 1 1/2-quart pan over medium-high heat, stir blueberries, sugar, and 1/2 cup water until berries begin to pop, 4 to 5 minutes. Pour mixture through a fine strainer set over a bowl. Pour blueberries into a blender. Return berry syrup to pan. 2. Add lavender to syrup and stir over medium heat until syrup is infused with flavor, about 5 minutes. Strain into blender, pressing to extract liquid. Discard lavender. 3. Add cinnamon and vanilla to blender; whirl until mixture is smooth. Pour into a bowl, nest in ice water, and stir often until cold, about 15 minutes. Stir in half-and-half. 4. Pour chilled mixture into an ice cream maker (1 1/2-qt. or larger capacity). Freeze according to manufacturer's directions until firm enough to scoop. Serve, or transfer to a container and freeze, airtight, up to 1 week. My personal favorite from Maryel. I always double the recipe! Ben and Jerry`s Orange Cream Dream Ice Cream Ingredients: 1/3 cup Orange juice concentrate; thawed 2 teaspoons Vanilla 2 cups Heavy or whipping cream 3/4 cup Sugar 2/3 cup Half and half Directions: Pour the cream into a mixing bowl. Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour the half and half and whisk to blend. Add the juice concentrate and vanilla and blend. Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions. Makes about 1 qt

Since light cream can be up to 30% fat, I would use 2/3 cream and 1/3 milk. Actually, if I were making it myself, I would decrease the milk even more, since milk upsets me more than cream. I made strawberry ice cream Tuesday using a recipe that called for light cream, and I substituted all heavy cream. I took some to work because I can't eat all of it, and I thought DB didn't want it, but then after he had some yesterday, he decided it was very good. For myself, the most milk I would put it would be about 1/8 portion. I haven't noticed a problem with using all heavy cream, except that it did get very fluffy and I was afraid it would going to climb out of my ice cream machine, and so I ate little bits of it as it was going along. The worst thing that will happen is you will have excess volume, and you might want to make sure your ice cream maker will handle it. Everyone at work loved it. Lars

Have you ever had or used this type of ice cream freezer? The ones I've used make the ice cream about as thick as soft-serve, and if you want it harder, you have to freeze awhile longer, in another container, after it reaches the soft-serve stage. It sounds like you had more liquid than what a recipe for this machine can use, and that's why it didn't get frozen. I make my ice cream mixture ahead of time and leave it in a stainless steel bowl/container in the freezer until ice crystals begin to form on the edge of the mixture to make sure it's as cold as possible. I also freeze the dasher. This will help it freeze a little faster. To rescue the peaches, I would make this filling recipe and use it as a dessert served with granola on the top or as a topping for ice cream. The peach gelatin powder (JELL-O and Great Value brand at Wal-Mart will also work) in the recipe is a flavor enhancer (especially good if the peaches don't have a lot of flavor) and the recipe won't work well without it. 1 c. water 3/4-1 c. sugar (use lesser amount if peaches are really sweet) 3 T. cornstarch 3 T. peach gelatin powder (use the regular JELL-O, not sugar-free) 4-6 peaches (depends on how large they are, but almost any number of peaches will work - if you have fewer peaches, just make a half-recipe) Cook water, sugar, and cornstarch in a pan until thickened. Add peach gelatin, stir in well. Add sliced peaches to this hot mixture. Cool until lukewarm, or refrigerate, before serving. (NOTE: If the peach slices are really large, you can cut them into smaller bite-size segments. I also like to use coconut palm sugar for a darker, almost caramel-like flavor, while using white granulated sugar makes a pretty lite pink/peach colored filling. Interesting, Sooz, about the frozen berries and color. I can imagine how that would do it. Writersblock, you've inspired me! I would want it to taste like dark brown sugar to be worth giving up pretty pink for, and I've worked enough with organic raw sugar to know it will go beige and not have enough of a punch. ... But! White sugar and just enough black molasses to give it that brown sugar taste might work. That's as a ribbon. If it stays as a ribbon, the ice cream would still be pretty pink. It might need to be reduced first. This is sounding interesting. :) Thanks, again, Sooz!

I remember seeing about the sale Kohl's had last year, but by the time I found out about it, they were sold out. I'm hoping that if they have another this year someone will post it and I'll see the post in time to get one.

Before I had an ice cream/sorbet maker, I just made the sorbet mix, froze it until firm, broke it into chunks and processed in my food processor. Freeze again until semi-solid and serve.

Sorbets are super easy and very forgiving.

As Linda mentioned, you can make sorbet just by freezing the sorbet, scooping it into a food processing and whizzing it a couple of times, we did the Limoncello sorbet in Chicago that way.

I have the same Cuisinart posted above, and I've made mango sorbet, prickly pear catus sorbet and a lime/kiwi sorbet. It's all good and works fine.

Yes - I made the Limoncello sorbet by freezing it and scooping it into another container. It may be hard to believe but I don't own a food processor. Maybe I'll borrow my friend's ice cream freezer to see if it's something I really want. Thanks for your help.

I just made Lori's sorbet, but I used mango, strawberries and kiwi because I had them. My mangoes were the Champagne mangos and they are smaller than the regular ones. The strawberries sort of dominate the taste, but it is wonderful! Thanks Lori!

I'm going to make grape sorbet in my Cuisinart tomorrow, I think.

I need to get Vodka to keep it from freezing too hard. I'm just going to use grape juice.
