I have an order for rugelach for a sweet table but they have to be nut-free.

How DO you make nut-free rugelach?

Can you use seeds instead? Sunflower seeds or pine nuts? Or even little bits of hard dried fruit. You should be able to make your regular recipe and just leave out the nuts. The trick is to make sure there's some texture and flavor to replace them. Orange rind? Chocolate with hard sprinkles (that don't melt)? I read something online about using nut free granola as a substitute because it's hard and has flavor that isn't so far afield.

Yes, there's all kinds of rugelach that's made without nuts - just use a marmalade or chocolate filling. I would guess that you could use anything you wanted. The dough is one of it's main characteristics. Although to me it's not rugelach without nuts.

Rice Krispie Treats can be made gluten-free -- just make sure each ingredient identifies itself as 'gluten free'. See here: http://www.ricekrispies.com/en_US/recipes/the-original-treats.html?utm_source=google&utm_medium=cpc&utm_term=how%20to%20make%20rice%20krispies%20treats&utm_content=How+to+Make+Rice+Krispies&utm_campaign=Intention+-+Brand#/en_US/recipes/gluten-free-treats Otherwise, have a look at the King Arthur Flour site for gluten free cookie/sweets recipes. Most of their GF recipes I've tried have been pretty good. Here's the link: http://www.kingarthurflour.com/recipes/gluten-free/cookies-bars-and-candy I've also found some good GF recipes at Allrecipes.com so you might want to search there to see what inspires you.

- Check your local library for allergy-free cookbooks. But just going through all cookbooks you'll find recipes that will work - this will become your new hobby. Vegan cookbooks will also be egg-free - check vegan recipes and web sites on-line. - Use Ener-G Egg Substitutes when an egg is called for in baked goods. There are lots of easy-to-make egg substitutes. Just Google - egg substitutes. If a recipe calls for one egg, it's usually a binder and nearly any egg substitute will generally work. - Google - Egg-free Recipes - WACKY CAKE (snack cake) - you'll find lots of versions of this cake. 1-1/2 c. flour (I use whole wheat or spelt but all-purpose will work fine.) 1 t. soda 1/2 t. salt 3 T. cocoa powder (can omit and add 1/2 t. of pumpkin pie spice for a Spice Cake) 1 T. vinegar 2 t. vanilla 5 T. butter, melted 2/3 c. honey (I use low-glycemic agave nectar.) 1/3 c. cold water Mix ingredients in an 8-inch square pan in THIS order: 1. Combine all dry ingredients and mix well. 2. Make 3 holes evenly spaced apart in dry ingredients. 3. In first hole put vinegar, in second-vanilla, and in the third-melted butter. 4. Mix honey and water and pour over the ingredients in the cake pan. 5. Mix with a dinner fork or a spatula. Make sure no dry ingredients remain in the corners. 6. Bake in a preheated 325°F oven for 30-35 minutes. - CHERRY CRUNCH CAKE 1 c. quick cooking rolled oats 1 c. flour 3/4 c. brown sugar 1/2 t. cinnamon 1/2 c. butter 1 can cherry pie filling Combine oats, flour, sugar and cinnamon in mixing bowl. Cut in butter with a fork or pastry blender until particles are fine. Spread half the oat mixture in an 8-inch square pan. cover with filling and sprinkle with remaining oat mixture. Bake in preheated 375°F oven for 40-minutes. - Marshmallow Treats - Eggless-Milkless-Butterless Cake (you'll find lots of versions of this WWII favorite) -Grainlady

Gluten & nut free Italian treats?
Q
Comments (20)
Hi folks, this event is coming up in a week and a half. I've been mulling over all the suggestions. Question: do you think I could unmold panna cotta from a muffin tin? I may have up to a dozen women attending. I liked the tea cup idea, but don't think I could keep a dozen tea cups in my fridg with everything else for a day or so, plus with the other things I plan on making, I thought what would fit in a muffin tin would be a nice size - any suggestions appreciated as I have never made it. Was planning on trying tishtoshnm's recipe suggestion. Thinking of including a "nod" to Valentine's Day with the offerings. At least one person is allergic to nuts, a couple have celiac, and one has diverticulitis and can't have seeds. This is what I have come up with to make and serve so everyone can have "most" things: heart shaped Linzer cookies with seedless raspberry jam (I have a cookie recipe to make them without nuts), walnut fudge, panna cotta (was thinking of drizzling a glaze of melted seedless raspberry jam on it?) and berries on the side with a plate of cheese, regular and gluten free crackers, figs and dates (how about mascarpone cheese since it's Italian?). Spumante was mentioned in the book, so I was thinking of getting that. I remember a tv commercial growing up for "Martini and Rossi Asti Spumante" - of course no more alcohol commercials these days lol!

I've seen a number of nut free versions. Raspberry jam and raisins, just jam, chocolate using either just chips or a choc filling, and cinnamon sugar with or without raisins.

One of my favorite treats!
I make these when I am feeling particularly indulgent. I hate nuts, so mine never have it.

DH says I should put a bit of Brandy in with the preserves - what do you guys think. It is for an adult event however there may be kids there. Also I'm thinking just 1 or 2 tbsp at most

I think it's too many strong flavors. Brandy and apricot, or brandy and chocolate, or apricot and chocolate sounds better to me.

I love nuts, but my family makes butterhorns (my family's version of rugelach) with raspberry jam as the filling, always -- no nuts.

Katzinger's deli here has the most wonderful rugelach. Many of the fillings are not nuts. Cinnamon is great; so is chocolate and all the fruit fillings.
