I'm just following directions....

Our church has a find raiser coming up. It's an ice cream social, featuring homemade ice cream, sloppy joe sandwich and turkey, sliced and mixed with "gravy" (don't ask!!) heated and also served on a bun potato salad, baked beans, home made ice cream and cakes and pies.

The woman who did the turkey for 6 years has retired to Florida, so I volunteered to do the turkey.

Last year they served 365 people and ran out of turkey. I called her and she said she cooked 2 25 pound birds and 4 12 pounders. I hear 96 pounds of turkeys, which should equal 57 pounds of meat.....figuring 60% yield from the turkeys.

So I bought 6 15 pound turkeys and 2 8 pound bone in breasts....figures out to b 106 pounds....times 60% is about 63 pounds of cooked turkey meat. That seems that when mixed with "gravy" (I'll be working on that!) that ought to make about 250 sandwiches......which considering there is someone standing therre asking "do you want turkey or beef sandwich" ought to be loads and loads.

Is my math OK? Shouldn't an equal number of people want beef.

I sure don't mind having some leftover turkey in the freezer.....but...that seems like a LOT of meat!

The breasts have a much higher meat-to-bone ratio than the whole turkeys.

I would guess that more people would want turkey than beef.

Well, maybe it will eventually get some leaves on it. Now that it's out of my face, it doesn't really bother me. And like yours, Ines, mine had only the little air roots all over it and the (formerly inactive) peduncles. I do cut the long leafless stems off my pubicalyx, after they are mature enough that it's obvious they didn't produce any peduncles. It's already so huge and in-the-way, I can't afford to let it take any more unnecessary space! Jo, I was disgusted with my reverse kerrii this spring because you could hardly see any variegation at ALL in the new leaves, so I whacked it back and took two short cuttings and put them in a "public" pot outside by my GH, figuring if they burnt to a crisp or died, at least I was making an effort to make it go in another direction. The two cuttings rooted quickly and I did lose one leaf on each, but then both are now putting out new growth with obvious variegation. AND the main plant put on a new growth point back towards the soil line that had more obvious variegation. I'll be very excited to bring in the two new cuttings and put them in with the old plant and see how they all look after a winter in the GH. Denise in Omaha

"Not only do they not follow directions they will not ask for them!" We have an old joke that we pass around every year at our Passover Seder table because we try and inject a little humor into everything ;o) Traditionally, the youngest child recites "The Four Questions"...somehow this joke has always seemed to find its way at the end of "The Four Questions", being dubbed as "The Fifth Question". We even say it in Yiddish. We still can't remember who started it LOL. Question: Why did Moses travel in the desert for 40 days and 40 nights? Most Phalaenopsis begin to grow new flowering spikes in late Autumn/early winter and the flowers start to open about 110 days later so there is a peak flowering in spring. The flowers should last 2 to 3 months in good conditions. Once the flowers start to die cut the flowering stem off at the base and with good growing conditions the annual cycle should repeat. The trigger for new flowering spikes is a slight temperature drop. Look at the leaves. They tell the story. Large leaves to gather available light...says somewhat dim light where they are growing in nature. Large thick leaves that store water....says the plant is not growing in a tropical mist forest. Phalaenopsis Temperature range about 60 to 90F What sort of Fertilizer are you using? I'm just about to water my small collection by taking them to the sink. They spend the year in this room because outside in zone 10b is a death zone. Too hot in summer. Too cold in winter. Extreme UV most of the year. Read the other Phalaenopsis threads and if still puzzled, ask more questions. Added via edit. Should have added under to "Look at the leaves." Flaccid leaves are a sign of root problems, perhaps overwatering or not good drainage.

Consult a professional painter that has experience applying deck coatings. Moisture levels of the wood are critical during application and are commonly overlooked.

I'd want turkey over beef if it was sloppy Joe beef!

I think you should err on the side of abundance whatever you do. You can always sell plates to go or cartons of turkey and beef without sandwich buns to go after everyone's eaten.

Think about it this way... 300 sandwiches using 4oz of turkey on each sandwich would be 75lbs of cooked weight turkey. I'd want to find out how generous they are with the meat.Then find someone who can accurately judge 4oz to put the meat on the sandwiches....

Thanks nancy....we have a 1/4 cup scoop....but it sounds like I need more turkey.
BUT...this morning, the grandson of a longtime church member was found dead in his bed. he was mid 20's on leave from Iraq...having trouble dealing with the problems.....I heard it was an accidental overdose.
But the funeral will be in our church, monday, with lunch to follow....by....guess who.
So maybe I need a lot more turkeys!

Sorry about the Iraq vet; very sad. Just one question... what's so bad about turkey and gravy sandwiches? I love them. Is that gauch?

The word "gravy" had quotes, so I suspect we're not talking nice, home made turkey gravy here?

So sad about the grandson. So young! :(

The problem with the "gravy" is it's not been gravy.....but just a can of cream of chicken soup mixed in with the cooked meat.....and canned broth added until it's juicy enough.
And they throw away all that brown stuff in the pan. I suspect that most of the people who worked on this project, never made gravy in their life. But people love this sandwich, so I guess I won't shake them up too much by making real gravy!
And what's even sadder about the soldier's family is his grandparents had 2 children, one died of aids about 7 or 8 years ago and this child got married had this son and got a divorce.....and he was the only grandchild....and there will never be another.

Lot's of leftover turkey isn't a bad thing! Just cut it up and freeze it for another event.

I make a Poppy Seed Chicken Casserole with leftover cooked chicken meat, but have been known to use turkey too! This is really easy and everyone I've served this too loves it.

Chicken/Turkey Poppy Seed Casserole

8-12 oz cooked chicken/turkey meat (cut into bite sized pieces)
1 onion diced
1 tablspoon EVOO
1 cup sour cream
2 cans cream of chicken soup
2 tablespoons poppy seeds
Salt & pepper to taste
1 stick butter melted
2 sleeves Ritz crackers, crushed (or bread crumbs)
3/4 package cooked egg noodles

Sautee onion in olive oil until soft, about 5-7 minutes. Mix cooked chicken/turkey, sour cream, soup, poppy seeds, and salt & pepper in a bowl. Add cooked onion to chicken/turkey mixture.

Preheat oven at 350Â°. Grease a 9x13 casserole dish (I use Pam) and place cooked egg noodles on the bottom. Spread chicken mixture on top of noodles. Mix melted butter and cracker crumbs together and spread on top of chicken mixture. Bake uncovered until cracker crumbs are browned, about 35-40 minutes.

Oh Linda that is just so trajic and so very sad.

I think you're right to leave the turkey sloppy joe alone. If they love it, they love it and that's all that matters.

I like Nancy's way of looking at it, 4 oz of meat per bun, and I'd figure more than half would want the turkey based on the fact they ran out the year before. I would go with 70 pounds of cooked turkey but.......I would hold off on the "gravy" for the last 10 or so punds until it became clear it was needed. If you have leftovers to freeze beter it's plain turkey!!!

I agree Sharon/chase.
I spent some time today on "The recipe" for the turkey for the chicken sandwiches ( I know....they advertise chicken sandwiches but serve turkey!)
The "recipe" is one can of chream of chicken soup for every 2 cans of chicken....
The answer to the question was...
"We used to use canned chicken but that got too expensive, so we now use turkey"
What size can of chicken?"you know the big tall ones....not the big around ones like food service but the tall ones".
What size can of soup?...."just regular size...."
That doesn't sound like much soup per chicken?
"Oh....then they just add the juice from the pan..."
I will figure out something!!
