Eaglesgarden: I guess because I am a cook and a person with taste. I am not defending ginger anymore that I would "defend" any other important ingredient in a recipe. Boy, I could really run with this ball into ridiculousness. If you replace a particularly significant taste (as fresh ginger is) with something that tastes completely different (powdered ginger), you will not get the same flavor results. Try making your next BBQ steak out of beef jerky! If you have never eaten a steak, the dried jerky might taste OK. If you are concerned about buying a knob of ginger (about 25 cents here), and having the balance go to waste, you may freeze it and grate it frozen into dishes you might make. It combines well with chicken dishes and chicken stock, a variety of pork dishes, and any number of Asian dishes. After tasting a small amount, you will have an idea of what it might go with (pairs wonderfully with pineapple). Jim in So Calif

I also grew up eating venison. I didn't even know deer season wasn't year round until I got into high school and my classmates were taking the first day of deer season off. (grin) Yeah, I know, my family called it "government beef" and there was one hanging in a garage somewhere nearly all the time. As Michael pointed out, it needs to be well cleaned, I take off all the hair and bits of fat and sinew. The backstrap is the prime piece, we used to "butterfly" those tenderloin steaks and serve with just salt and pepper. Most of the venison was cooked like beef, my beef is nearly as lean as venison anyway so I don't change my techniques much. Venison does have a more assertive flavor so I use more seasonings than I would with beef. Our venison is mostly from the corn fields and apple orchards and that makes a big difference in flavor. As for the sex, if I'm eating it I'd much prefer a big doe than a buck. Unlike paririe-love, I encourage the shooting of does, it's the only way to cull the herd which has grown so big in our area that special kill permits are being given inside city limits because the deer are eating the landscaping in front of city hall, the library and the schools. A friend in Wisconsin says the deer herd there has grown so large that they are required to take a doe before they can take a buck. Anyway, favorite recipes. I like the typical stew/taco/chili recipes, all have enough seasonings to overcome that venison flavor. I haven't learned to like wine, so that's not a usual ingredient in my cooking, but I keep trying. I do like chunks of venison from steaks or roasts, marinated in Nancy's teriyaki marinade and then grilled with onions and peppers. Asian Marinade for Chicken Breasts 1C veg oil 1/4 C sesame oil 3/4 C soy sauce (Kikkomen) 1/3 C minced garlic 4 Tabsp minced ginger 2/3 C minced cilantro 5-6 green onions 1 tsp grd blk pepper I put the onions, ginger and cilantro in the food rocessor and pulse till chopped fine. Combine all and marinate chicken breasts (or whatever meat you are using) up to 24 hrs. but at least 1 hr if you can I have also put marinade in a freezer bag with chicken and frozen (good to do with the left over) Nancy My family liked this recipe, although the tomato sauce was a bit much for me. My Dad likes olives in the stuffing, but I don't care for olives either, LOL. I think you could add anything you like to the stuffing, like capers or pickled jalapenos or mushrooms. Hmmmm, maybe spinach and cheese, a kind of florentine....well, you get the idea. Stuffed Venison Steak Ingredients: Venison (or beef) Steaks Fresh Parsley (chopped) Scallions (chopped) Ham Salami Sliced Provolone Cheese Grated Cheese chopped olives Olive Oil Salt Pepper Prepared Marinara or Meat Tomato Sauce Directions: Pound venison steak to tenderize. Any cut of steak can be used. Layer the meats, cheeses, parsley, olives and scallions on the pounded steak. Once the steak is layered with your choice of stuffing, salt and pepper to taste. Roll each steak trying to keep as much stuffing in the middle. Tie both ends with thread or cooking string. Some steaks may need to be tied a third time. Heat olive oil in a frying pan and brown venison on all sides. Gently place browned meat into your pot of marinara sauce. Turn on low and allow to simmer for one and a half to two hours. I've not tried it but I think Ann T's salisbury steak recipe would be good with venison too. Salisbury Steak In Mushroom And Green Peppercorn Sauce ====================================================== 2 Pounds of ground Sirloin 1 onion finely chopped 2 cloves of garlic minced 2 Tablespoon chopped fresh parsley 2 Teaspoon chopped fresh thyme 1 Tablespoon of worcestershire Sauce 1 Tablespoon dijon mustard Salt and Pepper to taste Sauce 1/2 small onion chopped 1 garlic clove minced 1 Tablespoon green peppercorns Fresh Mushrooms sliced 2 Tablespoons Flour Broth 2 to 3 cups (Beef or chicken) Pan drippings plus 1 to 2 tablespoons of butter/margarine or oil. Saute onions in 2 Tablespoons of olive oil until tender but not browned. Add minced garlic and cook for 1 minute. In a bowl combined ground sirloin, parsley, thyme, dijon mustard, worcestershire sauce and salt and pepper. Add onions and garlic and mix well. (I use my hands). Form into oval shaped patties. (I made 5 nice size ones from the 2 pounds, but you could make smaller if you prefer) If you have a grill pan use it. Heat pan until hot and grill steaks until grilled on both sides. Add a bit of broth to the pan to pick up the drippings to add to sauce. Saute onion in 1 Tablespoon of oil until tender. Add mushroom and cook for 3 or 4 minutes and add flour. Cook for 2 or 3 minutes and add broth and green peppercorns. Place Salisbury Steaks in with sauce and continue to cook on low for at least one hour. This makes the meat really fork tender. NOTES: I used Chicken Broth but added some beef/veal demi glaze that I made a week or two ago. It added flavor and color to the sauce. I had actually gone for a walk while this was cooking so it was probably more like an 1-1/2 hours, although 1 hour would probably be enough. Serves 4 (Ann T) Good luck, and have fun cooking. Annie

Well, my "recipe" depends on how you want to use the mix. If you want to actually make a yellow cake, I like this one. I got the recipe in a link from a site called "Community Chickens", LOL. Yup, it's about chickens, go figure. Anyway, it linked to a blog called "chickensintheroad", who had this recipe. How to make Homemade Yellow Cake Mix: (This is the standard size mix for recipes calling for an 18.25 ounce mix.) 2 cups all-purpose flour 1 1/2 cups sugar 1 tablespoon baking powder 1/2 cup non-fat dry milk Combine flour, sugar, baking powder, and non-fat dry milk. Store in an airtight container or baggie. Keeps well in the pantry for months! To replace in recipes calling for a standard-size 18.25 ounce store-bought yellow cake mix: Use in any recipe calling for a yellow cake mix as a base (add 1 teaspoon vanilla to the recipe along with the cake mix as the recipe will assume vanilla was included in the store-bought mix). Or to make a basic yellow cake, use the following instructions. Cake mix directions:. 1 recipe Homemade Yellow Cake Mix 3/4 cup water 1 teaspoons vanilla 1/2 cup butter, softened 3 eggs Place Homemade Yellow Cake Mix in a bowl. Add water, vanilla, butter, and eggs. Combine with an electric mixer then beat two more minutes. Pour into a greased and floured cake pan. Bake at 350-degrees, using these baking times (watch carefully as your oven may vary��"test for doneness using a toothpick): 8″ or 9″ cake rounds ��" 20-25 minutes 13 x 9 pan ��" 35-40 minutes cupcakes ��" 12-15 minutes tube/bundt pan ��" 45-50 minutes Don’t overbake! You’ll dry out your cake. NOTE: If you don’t like using dry milk in your cakes, you can always leave the dry milk out of the mix. When making the cake, replace the water in the recipe with milk. If you're using it for topping, etc., one with added fat would probably work better, like this one: Yellow Cake "Master Mix" 2 1/2 cups cake flour 1 1/2 cups granulated sugar 1/4 scant teaspoon salt 1 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/4 cup butter Thoroughly combine dry ingredients together. Cut the butter into small pieces throughout the flour. Using a pastry cutter or food processor, cut the butter into the flour mixture until the butter is thoroughly incorporated (very small pieces, like sand). To make this into two 8 inch layers, use the entire recipe of Master Mix and add: 2 tsp. vanilla 1/2 cup oil 3 eggs 1 cup milk Preheat oven to 350 degrees. Spray two 8" round cake pans OR one 13" x 9" cake pan with nonstick baking spray containing flour and set aside. Pour cake mix into a large bowl. Make a well in center of mix and add vanilla, oil, eggs, and milk. Beat mixture 1 minute with electric mixer at low speed until blended. Scrape sides and bottom of bowl and beat 2 minutes longer at medium speed until batter is smooth. Pour into prepared pans and bake the layer cakes at 350 degrees for 20-30 minutes, or until cake springs back when pressed lightly in center and begins to pull away from edges of pan. Bake the 9" x 13" cake for 25-35 minutes until the cake tests done. The "Master Mix" can be made in larger quantities, but must be refrigerated, whereas the first recipe can just be kept in the pantry without spoiling or becoming rancid. Have fun! Annie

Here are a few to get you started: Poor Man's Salami 2-21/2 lb ground venison 1 cup water 1/2 tsp each garlic powder, onion powder, mustard seed 2 tbls liquid smoke 3 tbls Morton's Tender Quick salt Combine all the ingredients and form the mixture into two 8-inch long rolls. Wrap in foil with the shiny side next to the meat. Refrigerate for 24 hours. Pierce the foil in several places on the bottom side of the roll with a toothpick. Place the rolls on the oven rack over a pan containing 1/2 cup water. Bake at 225 derees for about 2 hours. Venison Breakfast Sausage 4 lbs ground venison 2 lbs ground pork 1/2 Burgundy 1tsp garlic powder 2 onions, liquified in blender 4 tsp basic smoke salt* 4 tsp marjoram 3 tbls mustard with horseradish 1 tbls pepper 2 tsp sage 1 tsp cayenne pepper 1 tsp thyme 1 tsp ground nutmeg 3/4 tsp rosemary Combine all ingredients well. Form into patties and fry. Or stuff casings to make breakfast links. *Basic Smoke Salt This is a seasoned salt mixture I devised years ago for smoking meats. It's a great general seasoning salt as well: 1 package table salt (1 lb 10 oz) 1 tbls onion salt 2 tbls celery salt 1 tbls garlic salt 2 tbls paprika 4 tbls white pepper 2 tbls dill salt 4 tbls white sugar Combine all ingredients and store in an airtight container (canning jars work great) Spicy Game Sausages 1 3/4 lb venison or other game meat, ground 1 3/4 lb pork, ground 1 tbls smoke salt 2 tsp chili powder 2 tsp black pepper 5 garlic cloves, crushed 2 tsp rubbed sage 1/4 tsp ground allspeice variations: 1 tbls curry powder 2 tsp cumin seed Combine all ingredients. Stuff into casings or make into chubs. For people with dietary restrictions forbidding pork, this next is particularly suitible. Scott Darrohn's venison sausage 4 lb venison,ground 1 lb beef fat 2 tsp salt 1 tsp black pepper 1/8 tsp cayenne 2 tsp ground sage 1/2 tsp ground allspice Combine venison, beef fat, and seasonings and pass through meat grinder. With hands, shape; meat into 4-ounce patties. The sausage can be prepared any way you like it, or frozen for later use. This next is reminescent of Boudin sausages, but actually has a totally different flavor: Venison & Potato Sausage 10 lbs ground lean venison 10 tsp salt 2 tsp pepper 10 lbs ground raw potato 3 lb ground raw onion Sausage casings Grind meat, potatoes and onions separately first, then mix all together with salt & pepper and put through meat grinder a second time. Fill sausage casings by hand or with a sausage stuffer attachment on your meat grinder. Tie off or twist sausage into individual links or leave whole. Do not pack casings too tightly or they will burst when cooked. Wrap in meal sized packages and freeze. To serve, punch a few holes in the casing to release pressure as the sausage expands while cooking. Put frozen sausage in boiling water and let simmer for 45 minutes. If preferred you can add up to 3 lbs ground pork to the mixture before stuffing the casings. BTW, if all you have is ground meat, that's fine. But if you're starting with whole cuts, it's best to spread the herbs and spices on the meat before grinding. Then double grind the meat. This assures that the herbs and spices are evenly distributed throughout.
