Can I sub venison for lamb in this recipe?

I was given only a pound of frozen venison stew meat, and thought I might try to make a scaled down verison of the 7 Hour Lamb using venison and red instead of white wine. Anyone think this might work?

Or, do you have a T&T venison stew recipe where the venison comes out really tender?
